Steps:
- Meatballs: In a bowl, beat egg, salt, pepper, allspice, cumin seeds and parsley.
- Add chicken and mix until combined (do not overwork).
- Refrigerate for 30 minutes.
- With wet hands, form 20 meatballs, then flatten slightly into thick patties. Grill or fry in a pan until cooked through, about 4 minutes per side. Keep warm.
- Cherry-Chipotle BBQ Sauce: Soak dried cherries in hot water for 10 min, then drain well. After draining the cherries, I chopped them up into smaller pieces using a wet knife.
- Mix all ingredients together in medium-sized saucepan (use more or less chilies to taste).
- Bring to a simmer, reduce heat to LOW, cooking for 10 minutes, stirring often. Do not let the sauce dry out.
- Season sauce to taste with salt and pepper.
- To Assemble the Sandwiches: Heat flat bread on the grill.
- Place some BBQ sauce in the center, then lettuce, onion and tomatoes.
- Add grated cheese of your choice, fresh cilantro and top with 2-3 meatballs.
- Drizzle with more BBQ sauce.

- Mix together ground beef, onion, Parmesan cheese, eggs, parsley, cornflakes, garlic, oregano, pepper, and salt in a large bowl; blend well.
- Spray a large baking dish or sheet with nonstick spray (Pam).
- Shape meat mixture into 1 1/2 inch balls and place in prepared pan.
- Bake at 350°F for 20 minutes or until firm to touch.
- Heat marinara sauce in a saucepan according to package directions.
- Add meatballs and simmer 15 minutes or until sauce is slightly thickened.
- Spoon 5-6 meatballs onto bottom half of rolls.
- Add enough sauce on top to coat.
- Cover with top half of roll and serve.
- Slightly messy but worth it.

- In a small bowl, mix together the pork, breadcrumbs, egg, finely chopped onions and the chopped coriander leaves. Season, mix well and shape into small meatballs. Over a medium heat, add 1 tbsp of the oil to a large frying pan and brown the meatballs on all sides, then remove from the pan and set aside.
- Add the remaining oil, sliced onion, garlic, coriander stems and some salt. Cook for 5 mins, then add the passata and chipotle paste. Pour in 100ml water and stir well, then simmer for 10 mins before adding the meatballs and cooking for a further 5 mins. Serve with potatoes or rice and scatter with the extra coriander leaves.

- Slice the french rolls in half. On one side of each roll, scrape out a hollow trough for the meatballs to nestle inches With the bread you scrape out, save 1 cup of the breadcrumbs for the meatballs. Place the buns back in a plastic bag and set aside.
- For the meatballs:.
- Take the 1 cup of breadcrumbs from the rolls and combine it with the milk in a large bowl; let stand for 5 minutes. Add the sausage and the next 8 ingredients; mix well.
- Shape the mixture into 1 1/2 inch balls. Place the meatballs in a 13 x 9 x 2 inch baking dish. Bake at 450 degrees for 15 to 20 minutes or until browned. Set aside.
- For the Sauce:.
- Saute the green peppers, chopped onion, and 2 cloves minced garlic in oil in a large saucepan until the vegetables are tender. Add the tomatoes, tomato paste, wine, water, sugar, 1 1/2 tsp basil, and 1/4 tsp oregano; stir well.
- Bring to a boil; reduce heat, and simmer, uncovered, 45 minutes or until slightly thickened. Add the reserved meatballs; cover and simmer for 1 hour.
- To assemble the sandwiches:.
- Take the French rolls out of the bag and brush lightly with the softened butter. Place cheese on the flat side of the bread (not the one you hollowed out for the meatballs). I cut my cheese slices in half so that they fit nicely on the bread and cover all the bread.
- Broil 6 inches from the heat until lightly toasted and the cheese is melted and gooey -- watch carefully so the cheese doesn't burn.
- Spoon meatball mixture onto the hollowed out side of the buns, and top with the cheese covered side of the bun. Enjoy!

- In a medium bowl, combine pork, onion, zucchini, egg, breadcrumbs, oregano, cumin, 1 1/2 teaspoons salt, and 1/4 teaspoon pepper; mix well with a fork. Form into 16 (2-inch) balls; transfer to a plate, and place in freezer until firm, 10 to 15 minutes.
- Meanwhile, combine tomatoes and chiles in a blender; process until smooth, and set aside.
- Heat 1 tablespoon oil in a large, straight-sided skillet over medium-high heat. Add half the meatballs; cook until brown, turning often, 4 to 5 minutes; transfer to a plate. Repeat with remaining oil and meatballs.
