MEATLOAF - DELICIOUSLY MOIST
This recipe came from a friend of mine. I added my own touch to it...just one of the many meatloaf recipes my family enjoys..This is one of my all time favorites though.. It's been family approved for years. So moist and flavorful, and won't fall apart like some meatloaf does. Hope you try it, you won't be disappointed....

Steps:
- 1. Preheat oven to 325 degree F. I don't use a loaf pan. I line a sheet pan with foil and shape my loaf. Spray foil with cooking spray.
- 2. Mix all but the last 3 ingredients well. Shape into loaf. Place in loaf pan or on sheet pan. Bake for 1 hour and 15 minutes.
- 3. Remove from oven. Mix the last 3 ingredients and spread over meatloaf. Return to oven for another 15 minutes. Let rest for 5 to 10 minutes before cutting. Enjoy!

Steps:
- put meat, bread (broken up in large pieces), both eggs beaten with the milk, onion, garlic powder, salt, and pepper.
- in a large bowl.
- then mix about 1/2 the can of soup into meat mixture (if you are using 2 small cans mix 1 can into meat mixture).
- mix thoroughly with VERY clean hands.
- shape into a loaf (it will be soft, very mushy to be exact, a friend told me to say it is the consistancy of"tuna salad" or canned cat food") don't worry, it is a sort of flatter than most meat loafs.
- Mix about 1 cup of water with remaining soup (if you are using the large can) and pour over loaf (or mix 1 cup water with the other small can and pour over loaf).
- Bake at 375 degrees about 1 hour and 30 minutes (adding water periodically).
- if the gravy looks too light -- cook for another 30 minutes -- it will never be too dry -- but the gravy will have a little more flavor -- keep scrapping down the sides.
- It will be golden brown on top and you will have delicious gravy to use over rice or potatoes.
- It is the best meat loaf you will ever eat (it is VERY moist and so delicious).

THE 7 SECRETS TO A PERFECTLY MOIST MEATLOAF - THE SPRUCE …
From thespruceeats.com
- Fat Is Your Friend. No matter which meats you decide to use, the right ratio of lean meat to fat is a critical factor in determining the texture and moisture of your meatloaf.
- Vegetables Are Your Other Friends. By adding finely diced or pureed aromatic vegetables to your mixture, you are adding additional moisture into the meatloaf.
- Use Enough Filler. The function of breadcrumbs in meatloaf is to absorb and retain the juices so you have a moister loaf. Meat by itself will simply drain away the juices and end up dry.
- Do Not Over Mix or Compress the Meat. Mixing your ingredients too much is a very common mistake that can really make for meatloaf with a tough, dry texture.
- Slow and Low Is the Way to Go. Some recipes have you cook your meatloaf at temperatures as high as 425 F. Noted food authority Alton Brown says that the ideal oven temperature for a moist meatloaf is 325 F. If the oven is too hot it will reduce the cooking time, but it tends to dry out the meat.
- Use a Digital Thermometer to Determine Doneness. If you cook your meatloaf too long, it will become dry. But it needs to reach a safe temperature for food safety, so you don't want "rare" meatloaf.
- Let Your Meatloaf Rest. You may be used to letting steaks and roasts rest for 10 minutes before slicing or serving. Resting is also beneficial for meatloaf.
