LENTIL LOAF
Steps:
- Preheat the oven to 350 degrees F. Oil a large loaf pan and line with parchment paper, then set aside.
- Soak the lentils in hot water while you prep the vegetables. Pour the vegetable oil into a large saucepot on medium heat. Add the onion, carrot, celery and potatoes. Add the granulated garlic, salt, pepper and chile flakes. Saute until the vegetables begin to soften, stirring frequently. Drain the lentils, and add to the pot along with the vegetable stock. Bring to a boil, then reduce the heat, cover and simmer until the lentils are very soft and most of the liquid is absorbed, about 1 hour. Remove from the heat and let rest, covered, for 30 minutes.
- Add the tamari, poultry seasoning, hot sauce and crackers to the lentil mix. Combine with the eggs and Cheddar. Spoon into the prepared loaf pan. Bake until the top begins to crack and the loaf is firm to the touch, about 1 hour 30 minutes. Add the Tangy Tomato Sauce to the top in the last 15 minutes.
- Combine the ketchup, brown sugar, mustard and hot sauce in a small saucepot. Heat on medium heat until hot and bubbly.
EASY SUNDAY MEATLOAF RECIPE

Steps:
- Preheat oven to 350 degrees.
- Mix milk with stuffing until moist.
- Add egg, ground beef, 1/4 cup brown sugar and 1/4 cup ketchup.
- Mix together and press into a loaf pan that has been sprayed with non stick cooking spray.
- Mix together the remaining brown sugar and ketchup and spread on top of the meatloaf.
- Bake for 40 minutes.

- 1. Preheat the oven to 350 degrees F. In a small bowl, whisk together all the glaze ingredients and set aside. In a large bowl, combine all the meatloaf ingredients and mix well. Press the mixture into a 9 by 5-inch loaf pan. Bake for 30 minutes. Remove from the oven and brush some of the glaze over the top of the meatloaf. Bake for 30 minutes more. Remove from oven and let stand for 5 minutes. Turn the meatloaf out onto a serving platter and spoon the remaining glaze over the top before serving.

- Heat oven to 350 degrees. In a large bowl, whisk eggs, garlic, scallions, jalapeño, sage, salt and black pepper.
- In a separate bowl, stir together bread crumbs and stock, cream or milk. Let stand five minutes.

Milk-soaked bread ensures a tender meatloaf, and baking it freeform - on a baking sheet instead of a loaf pan - provides more surface area for the tangy-sweet tomato glaze to caramelize as it bakes. Leftover slices can be crisped in a skillet and served with a salad or tucked into a sandwich. Alternatively, freeze one uncooked loaf for the next time you need to put dinner on the table with ease; simply thaw the night before and bake as directed.

- Make the meatloaf: Heat oven to 350 degrees and grease a rimmed baking sheet with oil. Heat 2 tablespoons oil in a medium skillet over medium. Add onion and cook, stirring occasionally, until softened, about 5 minutes. Add garlic and cook, stirring, until fragrant, about 2 minutes. Stir in tomato paste until well combined; let cool.
- In a large bowl, combine bread and milk, and mash with a spoon until a paste forms. Add eggs, parsley, salt, pepper, thyme and cooled onion mixture and mix until well blended. Add the beef, pork and veal, and mix gently to combine, being careful not to overwork the meat. Divide mixture into 2 equal portions and shape each into a 4-by-8-inch meatloaf on the prepared baking sheet.
- Make the glaze: In a small bowl, whisk together ketchup and Worcestershire sauce until smooth. Use a spoon to spread mixture over the top and sides of each meatloaf. Bake until nicely browned and an instant-read thermometer inserted in the center of meatloaf registers 160 degrees, 45 to 55 minutes. Let rest for 15 minutes before slicing.

- Heat oven to 350 degrees. Place a skillet over medium heat, and melt butter. Add onion and salt to taste, and sauté until golden brown. Remove from heat, and set aside.
- In a mixing bowl, combine beef, pork, Worcestershire sauce, soy sauce, mustard, cracker crumbs and 1/4 cup applesauce. Add onion, and mix well. Gently press into a loaf pan 9 inches by 5 inches by 3 inches, and smooth top. Spread top with remaining 3 tablespoons applesauce, and lay bacon slices lengthwise over top. Sprinkle generously with black pepper.
- Bake until well browned on top and no longer pink in center, about 1 hour. Remove from oven, and carefully pour out juices that have accumulated in pan. Allow to sit for 5 to 10 minutes before removing from pan and slicing.

My family LOVES this meatloaf. I was wanted a meatloaf that was easy and made with things on hand, I wanted great flavor, moist but not greasy. And I came up with this.

- 1. Pre-heat oven 350 Chop up garlic and onion. Mix stuffing and both meats together with eggs, garlic and onion.
- 2. When mixed well add about 1/2 can of spaghetti sauce in to the meat mixture.
- 3. Put in your 9x9 pan or loaf pan. Cover the meatloaf with the rest of the sauce. Cook for 1/2 hr. covered then another 1/2 hr. uncovered.
- 4. Then the meatloaf rest 5 mins. ENJOY!
