CHERRY COBBLER

I've made this cherry cobbler recipe for years, adapting it to suit our taste. It's a delicious way to use lots of fruit. I hope you enjoy this tart treat! -Peggy Burdick, Burlington, Michigan

Steps:

  • Drain cherries, reserving 1-1/4 cups juice; set aside. Discard remaining juice. In a large saucepan, combine the sugars, cornstarch, cinnamon and nutmeg; stir in lemon juice and reserved cherry juice until smooth. Bring to a boil. Cook and stir for 2 minutes or until thickened and bubbly., Add cherries; pour into an ungreased 9-in. square baking pan. For topping, combine the flour, sugar, baking powder and salt; cut in butter until crumbly. Stir in enough milk to moisten. Drop by tablespoonfuls over cherries. Bake at 450° for 10-13 minutes or until golden brown.

5 cups pitted canned tart red cherries
1/3 cup sugar
1/3 cup packed brown sugar
2 tablespoons plus 1-1/2 teaspoons cornstarch
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
2 tablespoons plus 1-1/2 teaspoons lemon juice
TOPPING:
1 cup all-purpose flour
1 tablespoon sugar
1 teaspoon baking powder
1/4 teaspoon salt
2 tablespoons cold butter
1/3 to 1/2 cup milk

Grandma made this recipe every year when cherries were ripe. Its so good warm with ice cream.

Michigan Cherry Cobbler image

Steps:

  • 1. For fruit mixture: Mix together sugar, cornstarch, and water. Bring to a boil. Add cherries and boil 1 minute over medium heat. Stir in butter, lemon juice and food coloring. Remove from heat and pour into a 10 by 6 inch baking dish or casserole dish.
  • 2. For cobbler topping: Mix together together flour, sugar, baking powder, salt, and cinnamon. Stir in oil. Add milk and mix well. Drop by small teaspoonfuls onto hot cherry mixture. Bake at 400 degrees for 20 minutes. Serve warm with ice cream.
  • 3. Notes: I like to sprinkle a little cinnamon sugar on top of the cobbler topping before baking. You can use 1 (16 ounce) can of canned cherries instead of fresh. Drain them and use drained juice in place of water called for in recipe.

Steps:

  • Preheat oven to 400 degrees F. In a saucepan combine filling ingredients and cook, stirring until bubbling and thickened. Pour into an 8-inch square baking dish. Meanwhile, stir together flour, sugars, baking powder, and cinnamon. Cut in butter until it is crumbly. Mix together egg and milk. Add to flour mixture and stir with a fork just until combined. Drop topping by tablespoonfuls onto filling. Bake for 25 minutes until browned and bubbly.

6 cups tart red cherries, pitted
1 1/4 cups sugar
1/4 cup water
4 teaspoons cornstarch
1 cup flour
1/4 cup sugar

Steps:

  • On a lightly floured surface, roll pie dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim crust to 1/2 in. beyond rim of plate; flute edge. Refrigerate 30 minutes. , Meanwhile, preheat oven to 375°. In a large bowl, toss tart and dried cherries with lemon juice, lemon zest and almond extract. In a small bowl, mix sugar and cornstarch; add to cherry mixture and toss to coat. In a small bowl, mix topping ingredients until crumbly. Transfer cherry filling to crust; sprinkle topping over filling. , Bake on a lower oven rack 45-55 minutes or until crust is golden brown and filling is bubbly. Cool on a wire rack. If desired, serve with ice cream.
