GERMAN MINI APPLE PANCAKES

These are made in large (texas) size muffin tins. Can also be made as one large one in a baking tin.

German Mini Apple Pancakes image

Steps:

  • Heat oven to 450'F.
  • Grease the insides of 6 large muffin tins with a little butter & sprinkle in a little sugar and tip to coat.
  • Toss the apple pieces with the cinnamon, brown sugar and lemon juice.
  • Over a medium heat melt a little butter and add the apple pieces.
  • Cook gently for 10-12 minutes until lightly caramelised.
  • Leave to cool for about 5 minutes.
  • Divide evenly into the 6 muffin pans.
  • Melt the 2Tbsp of butter and add with the flour, sugar, milk, eggs & pinch salt to a food processor and mix together for 3 minutes.
  • Pour batter evenly over the apples and bake for 15 minutes. (if making as one large, cook for 20minutes).
  • Tip out from tins so that apples are on top.
  • Dust with a little icing sugar.
  • Serve with whipped cream.

2 apples (peeled & cut into pieces)
1/4 cup brown sugar
1/2 teaspoon cinnamon
1 tablespoon lemon juice
2/3 cup flour
5 tablespoons sugar
3/4 cup milk
3 eggs
1 pinch salt
2 tablespoons butter
icing sugar, for dusting
whipped cream, for serving

  • Preheat oven to 400° F. Cut butter into 5-6 pieces and scatter on the bottom of a 9x13 pan. Place in the oven as it preheats until the butter is melted (about 5 minutes). Keep an eye on it so the butter doesn’t burn.
  • Meanwhile, peel and cut up the apples. In a small bowl, toss them with the brown sugar and spices.
  • Once the butter in the oven is melted, remove pan from the oven and spread the apples in a layer on the bottom of the pan. Place the pan back in the oven while you make the batter.

  • Preheat the oven to 400°. Whisk together flour, salt, and cinnamon. Add the milk and whisk smooth. Add the eggs and whisk again. Slice the butter into tiny pieces (a little less than a teaspoon each)
  • Place a small piece of butter (see Cook's Note) in each muffin time and then melt the butter in the hot oven, about 2 minutes. When the butter has melted, remove from the oven and pour about 3 tablespoons of the egg mixture (I used a scant 1/4 cup size scoop) into each muffin tin.
  • Bake for 12 minutes, until hugely puffy and slightly browned around the edges. Remove from the oven. The pancakes will fall immediately after removing them from the oven. Use a spoon to scoop out each pancake. Sprinkle with powdered sugar, drizzle with syrup, or top with fruit. Enjoy!

  • German Pancake Bowls: Preheat oven to 400 degrees and grease muffin tin with nonstick cooking spray with flour in it (or grease and flour pan OR use nonstick cooking spray AND melted butter).
  • In a large bowl, or your blender, combine all of the German Pancake ingredients except the butter and blend (or whisk) until smooth. Add butter and blend until well combined.
  • Add batter to the tins using a 1/4 cup measuring cup. Bake for 20 minutes or until golden brown around the edges. They will be VERY puffy but will deflate as they cool.
  • Apple Pie Filling: While the pancakes are baking and resting, melt 2 tablespoons butter in a large skillet over medium heat. Add apples, cinnamon, lemon juice and brown sugar and cook, stirring occasionally, until apples are tender and the liquid is absorbed, approximately 8-10 minutes.
