POOR MAN'S MOCK LOBSTER
Try this recipe for chicken that is marinated and grilled, dipped in butter and tastes amazingly like lobster. My Dad actually got this recipe from a friend of his, and it's too wonderful to keep it a secret! Serve with clarified butter for dipping.

Steps:
- In a saucepan, combine the soy sauce, oil, garlic salt, pepper, brown sugar, mustard powder, ginger and pineapple juice. Bring to a boil, stirring to dissolve the sugar. Boil for about 5 minutes, then remove from the heat and allow to cool completely. When cooled, place the chicken into a large resealable bag and pour the marinade over it. Press out as much air as you can, seal and refrigerate for at least 2 hours to marinate.
- Preheat a grill for medium-low heat. When hot, lightly oil the grate.
- Place the chicken on the grill and discard the marinade. Cook until chicken juices run clear, 20 to 25 minutes. Turn as needed to keep the chicken from burning.

MOCK LOBSTER
This is a recipe that I have been making for years and came out of my sister's employee cook book. It really is quite good.

- 1. Place fish in a buttered baking dish.
- 2. Sprinkle with onions, cover with soup.
- 3. Bake at 375 for 20 minutes.
- 4. Crush crackers, and mix with melted butter, add worchestershire sauce abd garlic powder.
- 5. Sprinkle over fish and cover.
- 6. Bake 10 minutes more
POOR MAN'S LOBSTER (HADDOCK) W/ MELTED BUTTER
I grew up Catholic, so haddock on Fridays during lent was a tradition. This was one of my favorite ways of having it, and it is so easy. Lobster tail is my favorite food, and although this is not as fantabulous as lobster tail, it will give you that fix when you need it for a lot less $$$! It is so good!

- 1. So easy. Mix beer with Old Bay, vinegar, & some salt & pepper in Dutch Oven or other large saucepan. Place haddock over top. Pour about a beer can full of water over top of haddock -- just enough to cover.
- 2. Turn heat to boil & boil covered for 20 minutes over med heat.
- 3. Remove haddock with large spatula & place on serving plate. Squeeze lemon juice over top. Serve with melted cups of butter. (Don't be alarmed if the haddock doesn't look beautiful when you take it out. Inside it's all nice & white & flaky).
- 4. Just as I do w/ lobster tail, I like to flake the haddock pieces & then let them sit in my melted butter for a minute as I eat. Enjoy!

I absolutely love Red Lobster biscuits and have searched many years for something that comes close. While we'll probably never get our hands on the true recipe, here is one that will fool your taste-buds.

- Preheat the oven to 350 degrees. In a bowl, combine everything but the bacon. Mix, using your hands, until well blended. In a roasting pan or iron skillet, shape the mixture into a lobster. With the ketchup, either rub a thin coating all over the lobster or make lines for visual appeal. Wrap the bacon slices across the tail or at joints, so everyone gets a little. Bake for 50 to 60 minutes, covering the "claws" with foil after 40 minutes so that they don't dry out.

MONKFISH "LOBSTER" ROLLS

- Season the monkfish with 1/2 teaspoon celery salt, 1/4 teaspoon kosher salt and a few grinds of pepper. Melt the butter in a large nonstick skillet over medium-high heat. Add the monkfish and cook until golden brown and cooked through, 4 to 6 minutes per side. Transfer the monkfish to a cutting board and cut into 1-inch pieces. Let cool.
- Meanwhile, whisk the mayonnaise, the remaining 1 teaspoon celery salt, the lemon zest and juice, celery leaves and a few grinds of pepper in a medium bowl. Refrigerate until ready to serve.
- Toast the rolls and line the insides with lettuce. Add the monkfish, chopped celery and chives to the bowl with the mayonnaise mixture; gently toss. Divide the monkfish salad among the rolls. Serve with pickles and the potato chips.
- Most monkfish fillets are sold skinless with the membrane removed. If your fillets have a membrane, remove before seasoning.

- Cut the cod into 2x2-inch pieces; place in non-stick skillet.
- Barely cover with water; sprinkle salt and paprika over fish and bring to a quick boil.

- Cut up and steam broccoli over medium-high heat.
- Melt 4 tablespoons butter or margarine in a medium skillet over medium heat. Add onion, cook until translucent (about 3 minutes).
- Stir in flour, curry powder, salt, and then slowly stir in the milk, stirring continuously until thickened.
- stir lemon juice and crabmeat into skillet, let simmer.
- Spray a medium sized glass baking dish with non-stick spray before spreading the cooked broccoli over the entire bottom of the dish. Sprinkle with cheddar.
- Pour sauce over broccoli.
