EASY EGGPLANT (AUBERGINE) PARMIGIANA

Use your favourite marinara sauce! This is so easy and good you'll wonder why you avoided trying it. From "The Sopranos" The one hour of prep time includes 30 minutes of draining.

Easy Eggplant (Aubergine) Parmigiana image

Steps:

  • Trim the eggplants and cut them into 1/4 inch thick slices.
  • Layer the slices in a colander, sprinkling each layer with salt.
  • Let drain for 30 minutes.
  • Rinse the eggplant and pat dry.
  • Pour about 1/2 inch oil a large deep skillet and heat over medium heat.
  • Fry the slices, in a single layer, turning once, until browned on both sides.
  • Drain on paper towels.
  • Preheat the oven to 350.
  • Spread a thin layer of tomato sauce in a shallow baking dish.
  • Make a layer of eggplant slices, overlapping them slightly.
  • Top with a layer of mozzarella, another layer of sauce, and a sprinkle of grated cheese.
  • Repeat the layering, ending with eggplant, sauce, and grated cheese.
  • Bake for 45 to 60 minutes, or until the sauce is bubbling and the mozzarella is melted.
  • Let stand for 10 minutes before serving.

2 medium eggplants (about 1 pound)
salt
olive oil or vegetable oil, for pan frying
2 1/2 cups marinara sauce
8 ounces mozzarella cheese, thinly sliced
1/2 cup grated parmesan cheese or 1/2 cup romano cheese

This is my Mom's recipe; the only way my Dad would eat that "purple thing". So easy and tasty! I have no idea where she got it; she had shelves and shelves of cookbooks, clippings, etc.

My Mom's Southern Eggplant (Aubergine) Casserole image

Steps:

  • Peel eggplant, cut into 1" cubes and lightly salt to sweat the bitter taste out--about 15-20 minutes.
  • Cook in saucepan with water until tender--about 18 minutes; drain and cool slightly.
  • Cook sausage, onion until sausage is browned and onion is soft.Combine eggplant and sausage; add egg and bread crumbs.
  • Spoon into prepared casserole.
  • Combine butter and cracker crumbs. Spread over top of casserole.
  • Bake at 350 degrees for 25-30 minutes until cracker crumbs are golden brown.
  • Variations:.
  • Sprinkle with 1/2 cup Mozzarella cheese, shredded before adding the cracker crumbles.
  • Mix in 1/2 cup Rotel Tomatoes, well drained.

Mom's Eggplant (Aubergine) Sabzi image

Steps:

  • In a heavy- bottomed skillet, cook the eggplant in oil.
  • Stir every once a while so that the eggplant does not stick to the bottom of the skillet.
  • Once it is cooked, add the salt, amchur powder, sugar and sambar powder and switch off the heat.
  • Eggplant sabzi is ready!
  • Note: Stir after adding sugar, salt etc so that they don't stick to each other and clump together.
  • This goes very well with yoghurt rice or just mixed with rice and eaten as such.
  • Since this can be oily and spicy, I usually combine it with dal (which I make a bit bland to compensate) and eat with hot rotis.

2 1/2 cups chopped eggplants (do not chop too small since they might become too mushy when cooked)
1 teaspoon mango powder (amchur)
1 teaspoon salt, to taste
1 teaspoon sambhar powder
1 teaspoon sugar (optional)
2 -3 tablespoons coconut oil (or any other oil of choice)

SOUTH INDIAN EGGPLANT (AUBERGINE) CURRY

This is an adopted recipe that I haven't yet tried. The original chef comments: "My good friend's Indian mother-in-law taught me how to cook this. Auntie (I call her Auntie) is from Hyderabad, is one of the best cooks I know and is very patient! There are a few steps to this recipe and you need some special ingredients, but it is really good, authentic South Indian cuisine. I'm posting some photographs with this recipe so you can see what these ingredients look like. They can all be found at an Indian grocery. Everything is listed in the order in which you will use it. Be brave; if you are patient, willing to take your time and have everything ready before hand, you will be rewarded with a delicious result. (Prep time is approximate and could be a little longer)."

South Indian Eggplant (Aubergine) Curry image

Steps:

  • In a cast iron or other heavy skillet, roast coconut powder, poppy seeds, sesame seeds and cumin seeds over low heat until light brown.
  • Remove from pan to stop the cooking and cool.
  • Put this coconut mixture in a food processor and process until it's grainy, reserve in a dish.
  • Grind the roasted channa dal in a spice grinder until it is a fine powder and add to the coconut mixture.
  • In a food processor, process the peanuts until they are coarsely ground.
  • Wash and stem the eggplants.
  • Cut each eggplant 2/3 into the wide end up to the stem - making an "X" - leave the stem end intact.
  • Heat 1/4 cup oil in a skillet and cook the eggplants on low until soft.
  • In a separate pan, heat the 2 tablespoons of oil to medium hot.
  • Add the 1 teaspoon of cumin seeds and 1 teaspoon of mustard seeds to the hot oil.
  • In a matter of seconds they will begin to pop - add the onions and stir.
  • When the onions are beginning to brown, add the ginger garlic paste and the turmeric, cumin, coriander powder, chili powder and salt.
  • Stir the spices into the onion then add the tomatoes.
  • Stir in the tomatoes then add the coconut mixture along with the peanuts.
  • Add the eggplants and 1 cup of the water.
  • Stir and cook over low heat, covered for about 20 minutes.
  • Add water a little at a time to maintain a nice smooth consistency.
  • Add garam masala and 2 1/2 tablespoons of the chopped fresh coriander - stir.
  • Check to see that it is salted to your taste.
  • Put in a serving dish and garnish with the remaining chopped coriander.

Steps:

  • Preheat oven to 180°C.
  • Heat oil in saucepan.
  • Sauté eggplant and onion until soft.
  • Remove saucepan from heat and stir through margarine until melted.

Steps:

  • Cook spinach and drain well.
  • In a large bowl, combine spinach, cilantro, parsley, dill, and onion.
  • In a small bowl, crack three eggs and whisk with a fork. Pour eggs into large bowls with herbs. Mix to combine.
  • You do not want an eggy consistency. The egg is used to combine the herbs together. The herbs should look very glossy from the egg, not swimming in it! From here gauge if you need to crack another egg and add it to your mix.
  • Season with salt, pepper, and turmeric,.
  • Fold in cranberries and walnuts.
  • Heat a large pan over medium-heat and spray with cooking spray.
  • Pour egg mixture into pan and let cook on one side, about three minutes.
  • As the bottom is cooking, use your spatula to divide "omelet" into six or eight "pie slices".
  • Flip each slice so the other side cooks, another three minutes.
  • Lower heat to medium as needed so it doesn't burn.
