"I LIKE to serve beet relish with corned beef and cabbage. The relish provides an interesting combination of flavors, and it is best made several days ahead. It's a very colorful addition to the table."

Steps:

  • Place butter or margarine in glass 2 quart casserole. Place in micro and cook on high until melted, about 45 seconds.
  • Add remaining ingredients to butter and mix well. Cover and microwave on high 7 to 9 minutes, stirring after 4 minutes. Serve hot over veggie dogs. Refrigerate leftovers and use hot or cold.

4 teaspoons butter or 4 teaspoons margarine
2 cups finely shredded cabbage
1 medium green pepper, chopped
1 small onion, chopped
2 medium tomatoes, chopped
2 tablespoons wine vinegar
2 teaspoons prepared mustard
1 teaspoon Worcestershire sauce

1/8 teaspoon pepper

Steps:

  • In a nonreactive container, combine cabbage, peppers, and onions. Sprinkle with salt, and toss to combine. Cover, and refrigerate overnight.
  • Remove cabbage mixture from refrigerator, and drain, discarding liquid. Rinse cabbage mixture with cold water, and drain again. Transfer cabbage to a large saucepan. Place spices (allspice, bay leaf, cinnamon stick, cardamom pods, and star anise) in a square of cheesecloth, and tie with kitchen twine. Add sachet to cabbage mixture. Combine vinegar and sugar in a liquid-measuring cup. Pour over cabbage mixture, and stir to combine. Bring to a boil. Reduce heat to simmer, and cook, stirring occasionally, for 20 minutes. Remove and discard sachet.
  • Ladle relish into jars. Cool on a wire rack to room temperature. Cover, and refrigerate for up to 2 weeks.

1 small white cabbage (about 1 1/2 pounds), cored and finely shredded (about 7 cups)
2 medium red peppers, seeded and cut into 1/4-inch dice
2 medium yellow onions, peeled and cut into 1/4-inch dice
2 tablespoons coarse salt
1 1/2 teaspoons whole black peppercorns
1 teaspoon whole allspice
1 bay leaf
1 one-inch cinnamon stick
1/2 teaspoon whole cardamom pods
1/4 star anise
1 1/4 cups apple-cider vinegar
1 cup light-brown sugar, firmly packed

MOTHER'S CABBAGE RELISH

This is one of my mother's favorite recipes. It could be served with any type of meal, but we like to have it with pork and barbecue. The use of a food processor will make preparation easy in shredding the cabbage.

Mom's Homemade Relish image

Steps:

  • Grind cabbage, onions and pepper (any kind of grinder). Put in large pan. Pour boiling water over cabbage, peppers and onions (just enough to cover everything). Let stand 5-8 minutes and then drain.
  • Add vinegar, sugar and salt. Mix well. Add tomatoes. Bring to boil. Remove from heat.
  • Pour in clean pint jars.

AUNT BETTYE SUE'S DIXIE RELISH

Lining up my summer canning recipes to take stock of jars, lids, rings, vinegars & other supplies. This one certainly seem to have the right stuff from our garden - peppers, cabbage, onions anyway. Found this recipe in The Times-Picayune & was charmed with M.M.B.'s note accompanying this recipe she/he submitted. "I hope you aren't finished with relish recipes," writes M.M.B. from Luling. "I'm sending you the recipe I got from my Aunt Bettye Sue. She called it Dixie Relish. "Adding some of this relish to tuna salad or pasta salad gives it a little kick, and just adding it to a sandwich is great." She also adds it to potato salad, and says it's especially good on a turkey sandwich." The relish is "really not that hot," M.M.B. continues. "Removing seeds from the jalapenos helps keep it from being too hot." She makes this at least once a year and gives some to friends and family. "I have people begging for it!"

Aunt Bettye Sue's Dixie Relish image

Steps:

  • Remove the seeds from the jalapenos and chop really fine (wear gloves and open a window or door for ventilation, if needed). Chop all other vegetables. Dissolve canning salt in 1 gallon of water. Soak all chopped vegetables in the salt water mixture overnight.
  • The next day, drain vegetables well. While the veggies are draining, bring 1/2 gallon vinegar (minus 1 cup kept in reserve) to a boil with the sugar. Add drained vegetables and cook 10 minutes.
  • While vegetables cook, stir together the 1 cup reserved vinegar, mustard, pepper, mustard seed, flour, turmeric and celery seed. Add to the vegetable mixture and cook 5 more minutes.
  • Pour the hot mixture into hot sterilized jars. Process in a boiling water bath for 10 minutes.

1 -2 lb jalapeno pepper, fresh
3 lbs cabbage
3 lbs onions
3 green bell peppers
3 red bell peppers
1 head cauliflower (a big 'un)
1 cup canning salt
1/2 gallon cider vinegar

  • Sprinkle cabbage with red wine vinegar, caraway seeds.
  • Cover with plastic and marinate overnight in refridgerator.
  • Next day, in a covered saucepan, heat olive oil and saute onions.

Steps:

  • Cut cabbage in half and core. Shredded cabbage, carrots and bell pepper to size of grain of rice. Best thing to do this with is food processor.
  • Mix Cabbage, carrots, bell pepper & horseradish with mayonnaise.
  • Add vinegar and continue to stir until blended.
  • Add salt, black pepper, & sugar. stir until blended. Seal in lidded containers...quart jars with lid is ideal for this. Refrigerate till well chilled. Stir before serving. This is good on grilled hamburgers and hot dogs.

Steps:

  • With a large, sharp knife, cut out the core from the cabbage.
  • Place the cabbage in a deep pot and pour boiling water into the core until the cabbage is completely covered.
  • Let stand until the outer leaves can be separated, then parboil or steam the leaves just until soft and pliable.
  • Continue with the remainder of the cabbage.
  • In a saucepan, bring 2 cups of water to a boil; add the rice.
  • Reduce the heat to low and cook, covered, for 15 minutes; drain.
  • Meanwhile, in a separate saucepan, cook the bacon over medium heat until all the fat is drawn out.
  • Add the onions; cook until lightly browned.
  • Add to the cooked rice; season with salt to taste.
  • Line a roasting pan with the outer cabbage leaves.
  • Place a spoonful of the rice mixture onto each inner cabbage leaf; roll up, tucking in the ends, and place in the pan.
  • If necessary, trim out the centre rib of the leaf to make rolling easier.
  • Pour tomato juice over the cabbage rolls.
  • Cover with more cabbage leaves.
  • Cover and bake in a 350 degree F oven for 1-1/2 to 2 hours or until tender.
