MACAROON APPLE COBBLER

- Place the apples in an ungreased 9-in. pie plate. Combine sugar and cinnamon; sprinkle over apples. Top with coconut and pecans; set aside., To make topping, cream butter and sugar until light and fluffy. Beat in egg and vanilla. Combine flour and baking powder; gradually add to the creamed mixture until blended. , Drop small spoonfuls over apples. Bake at 350° until top is golden brown and fruit is tender, 25-35 minutes. Serve warm.

MACAROON APPLE PIE
I found this recipe in a rural newspaper years ago. It's become one of my favorite recipes. I like to serve it warm with vanilla ice cream.

Steps:
- In a large bowl, combine flour and salt; cut in shortening until crumbly. Gradually add cold water, tossing with a fork until a ball forms. , Roll out pastry to fit a 9-in. pie plate; flute edges. Toss apples with sugar and cinnamon; pour into crust. Bake at 375° for 20 minutes. , Meanwhile, in a small bowl, combine the first four topping ingredients. Stir in the egg, butter and vanilla until smooth. Add coconut. Spoon over hot apples, carefully spreading to cover. Bake 30 minutes longer or until apples are tender.

MY GRANDMOTHER'S APPLE MACAROON
A apple cinnamon & pecan filling covered by a crispy crust. This is a farovite of mine that I found in my grandmothers recipe book. When I say recipe book I don't mean a store bought one. This was written in her own hand. I do hope you enjoy as much as I do.

Steps:
- FILLING:.
- Peel, core & thinly slice the apples. Place in a pie pan or baking pan. (I spray my pan with oil spray before filling however it may not be necessary.)
- Mix together the sugar and cinnamon then sprinkle over the sliced apples.
- Next sprinkle on the chopped pecans.
- BATTER:.
- Mix together the eggs, 1 1/2 cup sugar, 1 1/2 cup flour, 3/4 cup shortening and the 3/4 cup butter. Batter will be thick.
- Spread on top of filling.
- Bake at 300 until crust crisps approximately 45 minutes to 1 hour.

GRANDMA'S CORN FLAKE COCONUT MACAROONS
A fast and easy recipe that is great for mailing to friends and family, festively snowy white, and very tasty with a pleasantly crunchy and chewy texture. This recipe originally comes from my great-grandmother and has been handed down through four generations. My Grandma Sally makes these almost every year for Christmas and it is one of my favorite Christmas cookie recipes. The cookies will be chewy-crunchy when finished cooling, not gooey.

- Preheat oven to 300 degrees F (150 degrees C).
- Grease a baking sheet.
- Beat egg white in a bowl with an electric hand-mixer until stiff peaks form.
- Gradually beat sugar, 1 tablespoon at a time, into egg whites until fully incorporated. Stir salt and vanilla extract into egg whites until thoroughly mixed.
- Fold coconut and corn flakes into the mixture.
- Drop coconut mixture by the teaspoon onto the prepared baking sheet.
- Bake cookies in the preheated oven until lightly crisp, 20 minutes.
- Transfer cookies to wire rack to cool, at least 15 minutes.
