- Grate the cucumber and onion.
- Salt to taste and set aside for half an hour.
- Squeeze out the juices and flavour with white wine vinegar, sugar and a lot of white pepper.
- Chill for an hour or two.

- Combine cucumber and sambal oelek; let marinate in the refrigerator up to 4 hours. Mix 1 to 2 tablespoons into a glass of your favorite classic margarita.

- Place cucumbers and onions in large bowl. In a smaller bowl, mix remaining ingredients and pour over the cucumbers and onions. Chill in refrigerator for at least one hour. Serve. Salt, sugar, and pepper can be adjusted to your own taste, this is just the way I like it.

- Peel the cucumbers, cut in half and remove the seeds.
- Half them again and slice them up in approx 1/2 inch pieces.
- Mix with all the other ingredients, cover and put in the fridge for at least an hour.
- Take it out of the fridge and taste, if you want to, add more limejuice, sugar or sambal oelek.

- Cut the ends of the cucumbers off then cut the cucumber in half, lengthwise then in half again, lengthwise, and then into quarters.
- In a bowl, toss cucumbers with salt and let sit for 30-40 minutes to let liquid drain off. Rinse the cucumbers to get excess salt off.
- In a measuring cup, whisk together garlic, soy sauce, vinegar, sugar, sesame oil, sambal oelek, and dried red chiles. Add more sugar, vinegar, spice, to taste.
- In an airtight container with a lid, add the cucumbers to the container then pour the soy sauce mixture over top.

- Use a peeler to carefully slice the cucumber lengthwise all the way down into long thin ribbons. You may also use the peeler to slice them thinly from the ends for shorter thin ribbons.
- Next, chop or slice both the onion and the chillies. Combine them with the cucumber. Add the black pepper and salt too. You may also add the chilli flakes for extra flavours. Squeeze a few drops of lime and give it a good mix.
- Viola, it is ready to be served. This side can be served with rice and curries, ghee rice, and also great for biriyani.
