Steps:

  • Whisk the flour, sugar, baking powder, zest, nutmeg and salt in a medium bowl. Rub in the butter with your fingertips until the mixture looks sandy. Stir in the currants. Beat the eggs and 2 tablespoons of the buttermilk together. Stir into the dry ingredients to make a shaggy dough, add more buttermilk if the dough is dry. Gather dough into a disk, wrap in plastic wrap and refrigerate for 1 hour.
  • Roll the dough on a floured workspace into a piece about 1/4-inch thick. Cut into 2 to 3- inch rounds.
  • Heat a griddle or frying pan over medium-low heat. Brush the pan surface with butter. Cook the cookies until slightly brown and cooked through, about 4 to 5 minutes on each side. Transfer to a rack, sprinkle with sugar and cool. Store in a cookie tin.

2 cups all-purpose flour
3/4 cup sugar, plus more for sprinkling
2 1/2 teaspoons baking powder

Nana's Welsh Currant Cookies (Frying Pan Cookies) image

Steps:

  • Heat frying pan to 350°F.
  • Beat together 2 eggs and 6 Tbsps Milk.
  • Add dry ingredients & shortening in a mixing bowl, blend well.
  • Add Egg and Milk mixture to dry ingredients, stir until well mixed.
  • Place plastic on bowl to cover dough & chill dough in refrigerator about 2 hours.
  • On floured board, roll dough in 4 parts to 1/4" thickness.
  • Cut shapes with floured glass or cookie cutter.
  • Fry in electric fry pan until golden.

  • Preheat oven to 375°.
  • Cream shortening with butter. Gradually add sugars and cream thoroughly.
  • Beat eggs in a small bowl and add to cream sugar mixture.

  • Add vanilla, oatmeal, wheaties & coconut and combine well.

So Easy Pan Cookies image

Steps:

  • Preheat oven to 350 degrees F. Spray 8 X 8 square pan with cooking spray. ( I use a Gladware ovenware pan).
  • Thoroughly stir together flour, baking powder and salt. Set aside.
  • In a microwave-safe bowl, melt butter on high for 1 minute. Add brown sugar and stir well. Stir in the egg and vanilla and beat 15 strokes with a mixing spoon.
  • Add flour mixture to sugar mixture and stir just until mixed. Mixture will still be very warm so let it cool for 5 minutes. Stir in chips.
  • Sometimes I stir in a teaspoon of cinnamon just for kicks.
  • Bake for 22 minutes or until a toothpick inserted comes out clean and bars appear set (edges will be brown).
  • Let cool for about 20 minutes. Slice into 16 bars.
  • Makes 16.

Kittencal's Buttery Flaky Shortbread Pan Cookies image

Steps:

  • Set oven to 325°F (set oven rack to second-lowest position).
  • Prepare two (8-inch) round cake pans (can use 8 x8 -inch square pan also).
  • In a food processor blend the first 4 dry ingredients.
  • Add in the cold butter pieces, and blend for about 30 seconds or more to combine.
  • Mix in the chopped maraschino cherries or cranberries.
  • Divide the mixture evenly between the two pans, then press the dough in firmly.
  • Bake for about 30-35 minutes (longer for more crispy) or until baked through and pale golden (don't over bake!).
  • Cool the baked dough in pans for 10 minutes.
  • While the baked dough is still warm cut into small squares (or wedges if using a round pan) then cool completely.
  • Using a spatula transfer to a plate.
  • Sprinkle lightly with powdered sugar if desired.
  • Delicious!

  • Preheat oven to 400 degrees fahrenheit.
  • Beat egg and milk together set aside.
  • Sift flour, baking powder, salt, nutmeg and sugar together.

Steps:

  • Preheat oven to 350 f.
  • Grease a baking sheet.
  • Sift flour onto a pastry board and make a well in the centre.
  • Add sugar, vanilla sugar and egg yolks to well.
  • Mix a small amount of flour into the ingredients in the well to make a thick paste.
  • Cut cold butter into small pieces over the flour mixture.
  • Working quickly and starting from the centre, work all the ingredients together to make a smooth dough.
  • Chill dough for 1/2 hour.
  • Roll out dough on a lightly floured surface to a 3mm (1/8 ") thickness.
  • Cut into 5 cm (2 ") rounds.
  • Cut 3 small holes using a floured thimble, in half of the cut out rounds, or use a smaller cookie cutter to cut a hole in the centre (you can use linzer cookie cutters if you have them).
  • Place on prepared baking and bake on middle rack of oven for 10 to 12 minutes or until light golden brown.
  • Cool cookies.
  • Spread jam on the solid rounds and cover with the cut out rounds.
  • Dust with the icing sugar while the cookies are still warm (easiest way is to dip cut out cookie into icing sugar before placing on top of jam layer.

Steps:

  • Cream together the shortening and sugar. Add egg and vanilla.
  • In separate bowl sift together 1 cup flour, baking powder, and salt. Add to creamed mixture. It will be probably be fairly sticky.
  • Using food processor or blender (or chopper) chop up the currants. You will know it's ready when it appears to be just a large sticky ball. Chop walnuts into very fine pieces. and then add both to mixture and mix well.
  • Add remaining flour as needed to the batter to make a stiffer consistency for rolling the cookies. (might be easier to put flour on surface and knead into batter).
  • Pat down with hands into disc, and then roll out for use with cookie cutters until about 1/4" thick, flouring surfaces and roller. Decorate as desired.
  • bake at 375 degrees for 7 minutes.
