NUTTY PIE-CRUST COOKIES
I like Italian cream cake, so I used it as inspiration for this cookie recipe. The splash of orange liqueur in the filling is my special touch. -Sonji McCarty-Onezine, Beaumont, Texas

- In a large bowl, beat butter, flour, confectioners' sugar and salt until crumbly. Beat in cream. Divide dough in half. Shape each into a disk; wrap in plastic. Refrigerate 30 minutes or until firm enough to roll., Preheat oven to 350°. On a lightly floured surface, roll each portion of dough to 1/4-in. thickness. Cut with a floured 1-1/2-in. round cookie cutter. Place 1 in. apart on ungreased baking sheets., Bake 10-12 minutes or until edges begin to brown. Cool on pans 2 minutes. Remove to wire racks to cool completely., Place pecans and coconut in a small bowl; toss to combine. Reserve 1/2 cup coconut mixture. In another bowl, beat butter, cream cheese, salt and, if desired, liqueur until creamy. Gradually beat in confectioners' sugar until smooth. Fold in remaining coconut mixture. Spread over bottoms of half of the cookies; cover with remaining cookies. Place reserved coconut mixture in a shallow bowl. Roll sides of cookies in coconut mixture., Freeze option: Transfer wrapped disks to a resealable plastic freezer bag; freeze. To use, thaw dough in refrigerator until soft enough to roll. Prepare, bake and fill cookies as directed.

NUT CRUST
If you have a recipe that calls for a graham-cracker crust, and you don't have the ingredients to make one or just want to try something that's not only simpler but much tastier--try this. Straight from Joy of Cooking, I found this recipe when I made Million Dollar Pie because I didn't feel like crushing graham crackers. It's simple and to die for and requires zero baking. My personal preference is pecans, but you may use walnuts or what the heck--try any nut out for size.

- Chop walnuts or pecans (I did mine in the blender).
- Melt butter and mix with the nuts in a pie plate.
- Add sugar and salt and pat into bottom of pie pan.
- Oila! Cooking is done, and you're ready to fill your crust.
PECAN NUT CRUST
This crust is especially good as a base for Eggnog Pie with Rum, but can be used with almost any custard pie.

- Stir together ground nuts, cinnamon, and sugar. Mix in melted butter.
- Press the mixture into the bottom and up the sides of a 9 inch, deep-dish style, pie pan. Chill the unbaked crust in the refrigerator for about 30 to 45 minutes.
- Place pie crust on a cookie sheet, and position on the middle rack of a preheated 350 degree F (175 degree C) oven. Bake for 12 to 15 minutes, or until lightly browned. WATCH it carefully, as nut crusts burn easily; they DON'T have to turn black to taste burnt! Cool completely before filling.

Steps:
- In the bowl of a food processor, pulse the flour, salt, and sugar. Add butter and pulse until coarse, pea-size crumbs appear, about 10 seconds. With the machine running, add vinegar and ¼ cup ice-cold water and process until the dough just holds together, about 30 seconds. Squeeze a small amount of dough between your fingers and if it is very crumbly, add more ice water, 1 Tbsp. at a time (2 Tbsp. maximum). Do not over process.
- Turn dough out onto a lightly floured surface and push together into a rough ball. Knead a few times to combine, then divide into two equal balls. Flatten each ball into a disk with smooth edges (no cracks), cover with plastic wrap, and refrigerate at least 1 hour or up to overnight. - Preheat the oven to 325. Butter one 8-inch pie pan or a springform pan.
- Place the 4 tablespoons of butter in a microwaveable bowl and melt it in the microwave.
- Combine the almond meal, splenda, and salt in a small bowl and mix well. Add the melted butter and stir. Press the crust firmly into the pan of your choice. You can create a smooth crust by pressing a second pie pan firmly inside the pan holding the crust mixture. Prebake for about 15-20 minutes or until light golden. Adjust the gram counts per serving if you cut other then 8 slices.

MIXED NUT PIE
This is like pecan pie but lots better. Have never taken it anywhere that I have not been asked for the recipe. In place of the mixed nuts you can use any combination of pecans, walnuts or cashews also.

- In a saucepan boil the sugar and corn syrup together for 3 minutes to dissolve the sugar. Cool slightly.
- In a large bowl beat eggs lightly and slowly pour the sugar/corn syrup mixture into the eggs, stirring constantly.
- Stir in the butter, vanilla and nuts and pour into crust.
- Bake at 350 degrees for about 60 minutes or until set in the middle.
- If getting too brown cover with aluminum foil.during last 15 minutes of cooking.
