Steps:
- Make sure that your German fries have been made from Blah potatoes, and keep them warm.
- Grind the Spam, cheese, onion and pepper together.
- (Grinding makes the dish easier to eat for those guest trolls who left their dentures at home).
- Combine with the Pumpernickel crumbs, eggs, and milk.
- Grease a large casserole dish with a generous amount of the Bratwurst fat.
- Place the Spam mixture in the casserole, and then arrange the sliced dill pickles on top.
- Bake, covered, at 350°F for 1¼ hours.
- Uncover and bake 15 minutes more to brown.
- Serve with German fries in individual emesis basins.
- Dont forget the Oreos for dessert!

- Mix all BATTER ingredients together, set aside. Mix all filling ingredients together, set aside. To assemble casserole, preheat oven to 300 degrees. Butter bottom of a 2-quart casserole dish. Pour half the BATTER in the baking dish. Pour all of the FILLING on top of the BATTER, then cover the Filling with the remaining BATTER. The top BATTER will not evenly cover the top, but that's OK.
- Bake 1.5 hours at 300 degrees. Serve with Cherry or Blueberry Pie Filling on the side.
- NOTE: The batter and filling can be made ahead of time and refrigerated separately up to 24 hours before assembly and baking.

- Beat eggs until frothy. Add all other ingredients to eggs, stir well. Turn into well greased 9x13x2 baking dish. Do not line with foil, it will stick. Bake at 350 for 35 minutes or until set in center. Can be served hot or at room temperature.

CURRIED CHICKEN (EASY)
"I Hate To Cook Book" is a delightful, funny and curious cookbook, copyrighted 1960 and was a girl's best friend. For the women who did it all, and was not predisposed to "liking" cooking to boot. This "Sunday Chicken" adaption is absolutely a lifesaver, for all of us, even now, in todays world. Just takes *chicken* and a couple other ingredients. Please give this your seal of approval--and most of all, *enjoy*.

Steps:
- Preheat oven to 350 degrees.
- Spray baking dish with cooking spray.
- Heat oil, (and butter if using) in a small skillet.
- *Optional step*~I brown the chicken in this skillet first, on each side.
- Remove chicken if browning and put in baking dish.
- Or if you didn't brown chicken, just place salt and peppered chicken pieces in baking dish.
- Add onion and apple, cook until soft over med/high heat.
- Add garlic, cooking for 30 seconds.
- Add curry powder, salt, and pepper.
- Add soup and half and half, and cook until heated.
- Ladle sauce over chicken, covering chicken.
- Place in oven, bake, uncovered~for 1 hour, or until completely done. Chicken temp should be 160 degrees internally.
GRANDMA MCDOWELLS SPAM CASSEROLE
My husbands grandmother use to make this casserole it was so easy and tasted great, also inexpensive to make.

- 1. Cook macaroni as directed on package.
- 2. Combine soup, milk, green pepper, onion and pepper.
- 3. Place over low heat.
- 4. Add cheese and stir occasionally until cheese is melted, then mix cooked macaroni and the cubed Spam with cheese sauce.
- 5. Pour mixture into a 1 1/2 quart casserole dish.
- 6. Place in oven at 350* degrees for about 30 minutes or until sauce is bubbly.
SHAKER TURNIP SOUFFLE (CASSEROLE)
This came from the daily evening fare at the Trustee House at Pleasant Hill. Shakers raised vast gardens and harvested not only the vegetables and fruits, but created different varieties and sold their seeds. The were truly talented at preserving everything and using it to the fullest. I have never tried this recipe, but I know there are a lot of veggie lovers here at Zaar. Maybe one of these days, I'll get brave and try it.

- Peel and cut turnips into pieces and boil with onion and sugar until tender. Drain well.
- Mash the turnip mixture and mix with the remaining ingredients, except the cracker crumbs; sprinkle on top of mix.

- Start cooking those noodles, first dropping a bullion cube into the noodle water.
- Brown the garlic, onion, and crumbled beef in the oil.
- Add the flour, salt, paprika, and mushrooms, stir, and let it cook five minutes while you light a cigarette and stare sullenly at the sink.
- Then add the soup and simmer it--in other words, cook on low flame under boiling point--ten minutes.
- Now stir in the sour cream--keeping the heat low, so it won't curdle--and let it all heat through.
- To serve it, pile the noodles on a platter, pile the Stroganoff mix on top of the noodles, and sprinkle chopped parsley around with a lavish hand.

JOSEFINA'S PUMPKIN EMPANADITAS
This recipe is Pumpkin Empanaditas from "Josefina's Cook Book". This was a cookbook that is (no longer) published in conjunction with Pleasant Company's Josefina doll.

- Pastry: Measure flour, baking powder, salt, spices, and sugar into medium mixing bowl. Stir. Cut lard into 12 pieces and drop into flour mixture. Cut lard in with a pastry blender until crumbly. Pour in water and mix with a fork until dough begins to form a ball. Mold dough into a smooth ball with hands, adding a sprinkle of water if needed. Wrap in waxed paper and chill 1 hour.
- Filling: Melt butter in saucepan over low heat. Add sugar, spices, and pumpkin and stir until smooth. Stir over low heat 10 to 15 minutes, until mixture thickens. Pour into a bowl and let cool to room temperature. Then chill, uncovered, in refrigerator until completely cold.
- Egg Wash: Crack egg into a small bowl. Beat with whisk and stir in water. Set aside.
- Preheat oven to 375°F Divide dough in half and pat into 2 balls. Rewrap and refrigerate 1 ball. Flatten other ball with hand, then roll disk to 1/4 inch thick on lightly floured surface. Cut 4 inch circles with cookie cutter; reroll and cut scraps.
- Use pastry brush to paint egg wash around the edge of each circle. Put about 1 tablespoon filling in center of each circle, and fold in half over filling. Press edges with fingers, then crimp with floured tines of a fork. Place empanaditas 1 inch apart on ungreased cookie sheet. Repeat with other half of dough and filling.
- Brush tops of empanaditas with egg wash and prick center of each with fork to form steam vents. Bake 15 to 20 mintues, or until lightly browned. Remove from oven and sprinkle with a bit of sugar while still hot. Allow to cool for several minutes before serving; filling will remain very hot.
