OUT OF THIS WORLD GARLIC - ONION BREAD MACHINE BUNS

These buns are great for sandwiches. They are just the right size...not as large as burger buns, but just right for lunches. They have a terrific texture and you can vary the garlic/onion to taste, or leave it out completely. Cheese would also be good. But best of all...no kneading and it couldn't be simplier.

ONION ROLLS, BREAD MACHINE

These are easy with the help of your bread machine and taste way better than the store bought rolls. Directions are given for a 1 1/2 lb. machine. Note: in my photo the rolls are pictured with "Recipe #287863", which is delicious! 6/20/10 note: Many reviewers have noted the dough seems sticky. I always watch my machine as it starts to knead the dough and if it is looking sticky at the time, add more flour then. However, I am changing the recipe from 3 Cups flour to 3 1/4 cups flour today so definitely don't add additional flour unless the dough looks too moist.

Steps:

  • In a small skillet over medium heat, melt the butter; add onion. Saute onion about 10 minutes until tender, but not browned. Remove pan from heat and allow onion to cool slightly.
  • Reserve 1/4 cup of the onion mixture; set aside. Place remaining onion mixture and dough ingredients in bread pan, select the Dough setting, and press start.
  • When dough cycle is complete, turn dough onto a floured countertop or cutting board. Gently roll and stretch dough into a 12-inch rope. With a sharp knife, divide dough into 10 pieces.
  • Grease a large baking sheet. Roll each piece of dough into a ball and then flatten slightly. Place rolls on prepared sheet. In a small bowl, beat together remaining egg and 1/2 teaspoon salt; brush egg mixture over each roll. Spread approximately 1 teaspoon of reserved onion mixture on each roll. Let rise in warm oven 30 to 45 minutes until doubled. (Hint: To warm oven slightly turn oven on Warm setting for 2 minutes, then turn it off and place covered dough in oven to rise. Remove sheet from oven to preheat.).
  • Preheat oven to 375°F Bake rolls 20 minutes until they are golden and onion is brown, but not burnt. Remove from oven and cool on racks.

ONION BUNS

I was looking to put a spin on my Recipe #317538 and I came across this fabulous recipe. It was easy and the aroma filled the house while making the dough and while baking the buns. From KA: Why bake your own sandwich buns? Because homemade is SO much better than store-bought. These soft, golden buns feature a subtle spiral of dried onion, giving them incredible aroma and marvelous flavor. They're perfect for all kinds of sandwiches-and hamburgers, of course.

Steps:

  • **Water: Use the lesser amount in summer (or in a humid environment), the greater amount in winter (or in a dry climate), and somewhere in between the rest of the year, or if your house is climate controlled.
  • To make the dough: Combine all of the dough ingredients, and mix and knead them-by hand, mixer, or bread machine-to make a soft, somewhat tacky dough.
  • Place the dough in a lightly greased bowl or other container large enough to allow it to at least double in bulk, cover, and let it rise for about 60 to 70 minutes, till it's just about doubled.
  • Transfer the dough to a lightly greased work surface, and pat/roll it into a 12" x 17" rectangle.
  • Sprinkle the dough with the minced onion, and press/roll it into the surface gently.
  • Starting with a short (12") end, roll the dough into a log, sealing the ends and side seam.
  • Cut the log into eight slices. A pair of scissors works very well here.
  • Place the buns on a lightly greased or parchment-lined baking sheet, flattening them to about 3" wide. Cover them, and allow them to rise till they're very puffy, about 1 hour. Towards the end of the rising time, preheat the oven to 375°F.
  • Uncover the buns, brush them with the beaten egg white/water, and sprinkle with seeds, if desired.
  • Bake the buns for 20 to 25 minutes, until they're golden brown and feel set when you poke them.
  • Remove them from the oven, and cool on a rack. When completely cool, wrap in plastic, and store at room temperature.

3/4 cup water, lukewarm (up to 1 cup)
2 tablespoons butter
1 large egg
3 1/2 cups unbleached all-purpose flour, King Arthur
1/4 cup sugar
1 1/4 teaspoons salt
1 teaspoon onion powder
1 tablespoon instant yeast
3 tablespoons instant minced onion
1 egg white, beaten with
1 tablespoon water
1 tablespoon sesame seeds (optional) or 1 tablespoon poppy seed, etc. (optional)

BEST BREAD MACHINE BUNS

This recipe is easy and foolproof. It makes a soft and tasty bun with a slightly flaky crust. This is a combination of several recipes I've tried, but I've changed it to suit our tastes.

  • Place the ingredients in bread machine pan in the following order: milk, oil, sugar, salt, beaten egg, and flour.
  • Make a little well in the flour and add the yeast to flour.
  • For rolls, select Dough Setting and press start.
  • Shape dough into rolls when cycle is completed (my dough cycle is 2 hrs) and place dough rounds unto a lightly floured cookie sheet about 1 inch apart.
  • Cover and let rise for about 45 minutes in warm draft free area (I let mine rise in a slightly warmed oven with the light bulb on).
  • When Dough has doubled in size, uncover and bake@ 350 degrees for 15 to 17 minutes or until golden brown.
  • Cool on cooling rack for 20 minutes, and once cooled it can be stored in plastic bag.
  • for up to 1 week.
  • ********IF USING A KITCHEN AID STAND MIXER USE THE FOLLOWING STEPS:.
  • Dissolve 1 tblsp. sugar and the yeast in 1/4 cup warm water.
  • Scald 1 cup milk.
  • In large mixing bowl combine sugar, oil, salt and milk. Cool to luke warm.
  • Stir in eggs and yeast.
  • Gradually add enough flour to form a semi-stiff dough, beating well after each addition.
  • Once dough comes together in ball, take out dough and knead on a flat surface for about 5 to 10 minutes. The dough is ready when it feels soft like your earlobe.
  • Let rest for 5 minutes, and cover and let rise in a covered bowl (saran wrap) for 1 hours or until doubled in size.
  • After first rise, punch down dough and knead for an additional 2-5 minutes.
  • Form into desired shape and let rise again for 45 minutes to 1 hours.
  • When Dough has doubled in size, uncover and bake@ 350 degrees for 15 to 17 minutes or until golden brown.

1/4 cup white sugar
1 tablespoon fast rising yeast or 1 tablespoon bread machine yeast
1/4-1/3 cup olive oil
3 3/4 cups bread flour
1 teaspoon salt
1 egg, lightly beaten
