BALSAMIC GLAZE

This glaze is a must-have accompaniment to drizzle over fish, poultry, vegetables, pastas, salads, and even fruit. It can turn any dish from ordinary to extraordinary with its perfectly balanced, intense flavor of sweet and tangy. It adds a beautiful, deep pop of color to any dish to create a perfect, professional presentation. I make a large batch and have it on hand in the fridge at all times. Once you start adding this glaze to dishes you will become addicted and crave its intense flavor.

Balsamic Glaze image

Steps:

  • Mix balsamic vinegar with brown sugar in a saucepan over medium heat, stirring constantly until sugar has dissolved. Bring to a boil, reduce heat to low, and simmer until glaze is reduced by half, about 20 minutes. Glaze should coat the back of a spoon. Let cool and pour into a jar with a lid; store in refrigerator.

Filet Mignon with Rich Balsamic Glaze image

Steps:

  • Sprinkle freshly ground pepper over both sides of each steak, and sprinkle with salt to taste.
  • Heat a nonstick skillet over medium-high heat. Place steaks in hot pan, and cook for 1 minute on each side, or until browned. Reduce heat to medium-low, and add balsamic vinegar and red wine. Cover, and cook for 4 minutes on each side, basting with sauce when you turn the meat over.
  • Remove steaks to two warmed plates, spoon one tablespoon of glaze over each, and serve immediately.

Found this recipe in America's Most Wanted Recipes by Ron Douglas...there is already one posted but it is a little different and uses msg and this doesn't. It has a few more spices and is very delicious! Preparation time is also including the marinating and cooking time is to your doneness for grilling.

Outback Steakhouse Marinated Steak image

Steps:

  • Place the steaks in a shallow pan, pour the beer over and marinate for 1 hour in the refrigerator.
  • Remove the steaks from the beer.
  • Combine the dry ingredients and rub over the steaks.
  • Let rest for 30 minutes in the refrigerator -- better if you let sit overnight or for several hours!
  • Preheat the grill to medium-high heat.
  • Grill the steaks to the desired degree of doneness. I usually use my George Foreman Grill. Eat and enjoy!

  • Mix together seasoning ingredients and rub into each side of steak.
  • Grill steaks on a large frying pan over medium-high heat; press down on steak with spatula or tongs to sear the edges.

Blue Cheese Wedge Salad (like the one at Outback Steakhouse) Recipe - (4.3/5) image

Steps:

  • Make the balsamic glaze by putting the balsamic vinegar in a saucepan and heating it over medium until it is reduced by half. Make the dressing. Combine mayonnaise, and buttermilk, mixing well. Add remaining ingredients mixing thoroughly. Must refrigerate for 24 hours before serving for best flavor. For the salad assembly, divide iceberg lettuce head into four equal sections, cutting down towards the stem. Place on plates, topping liberally with the blue cheese dressing, crumbled bacon, onion, pecans, chopped tomato and crumbled blue cheese. Top with a drizzle of balsamic glaze. Just a little bit. Serve nice and cold, adding salt and pepper to taste. . **If you don't have buttermilk, and really, who does? You can take a cup of regular milk and add 1 3/4 tsp of cream of tartar - whisk it together and viola! Buttermilk. Lemon juice also works in lieu of cream of tartar.

3/4 to 1 cup buttermilk **
