- Preheat the oven to 400 degrees F. Pierce the sweet potatoes 2 or 3 times with a fork. Bake in a roasting pan for 45 to 60 minutes, until tender. Cut the potatoes in half, lengthwise. Hold the sweet potatoes with a potholder or towel and scoop out the potato flesh into a food mill or ricer.
- In a medium saucepan, heat the butter, syrup, zest, and vinegar over medium heat. Remove from the heat and mash the sweet potatoes in the pan. Stir to combine evenly. Season to taste with salt and pepper. Serve immediately.

- Bring a large pot of salted water to a boil. Add potatoes and cook until tender, 20 to 30 minutes.
- With an electric mixer on low, blend potatoes, slowly adding milk, about 1/2 a cup at a time. Use more or less to achieve desired texture. Add butter and maple syrup to taste. Blend until smooth. Serve warm.

- Place the cubed sweet potatoes in a large saucepan or Dutch oven and add enough water to cover by about 1″. Add 1 teaspoon of the salt and bring the mixture to a simmer over medium-high heat. Reduce the heat and simmer, uncovered, until the potatoes are tender (in other words, it’s easy to slide a fork in and out), about 9 to 12 minutes.
- Drain well, then return the potatoes to the pot. Mash the sweet potatoes to your desired consistency.
- Promptly add almost all of the green onion and parsley, reserving a small amount of each for garnish. Add the garlic, and stir to combine. Then stir in most of the sour cream (reserve roughly 1 tablespoon for garnish), all of the butter, and the remaining 1 teaspoon salt. Season to taste with additional salt (I usually add another 1/4 to 1/2 teaspoon) and freshly ground black pepper.
- Transfer the mashed potatoes to a serving bowl and swirl the reserved sour cream onto the top with a spoon. Sprinkle with the reserved green onion and parsley, drizzle the top lightly with olive oil, and finish with a sprinkle of pepper.

- Preheat oven to 400 degrees. Prick sweet potatoes once on both sides with a fork. Wrap each sweet potato with a sheet of aluminum foil.
- Place sweet potatoes on baking sheet and bake in preheated oven 40 minutes*. Turn to opposite side and continue to bake until a knife easily glides through potatoes, about 30 - 50 minutes longer.
- Near the end of potatoes baking, place butter in a light colored medium skillet or saucepan. Heat over medium heat, and let cook, stirring occasionally until butter has browned (brown flecks should just start to bubble up into foam if using a saucepan it's harder to tell). Pour into a dish so it doesn't continue to cook and burn.
- Once potatoes are cool enough to handle or using oven mitts, peel potatoes or scoop flesh from peels into a large bowl.

Put a layer of foil on the floor of the oven to avoid messy cleanup. Roast until the potatoes are completely yielding in the center when pierced with the tip of a knife, 1 hour to 1 hour 30 minutes, depending on their size. Remove from the oven and lower the oven temperature to 300 degrees F.
- Use a sharp knife to cut lengthwise down the middle of each sweet potato. Scoop out the flesh with a tablespoon, leaving the skin behind. Transfer the flesh to a food processor and pulse to blend until smooth. Do not overblend or it will make the potatoes gummy. Put the potato in a medium ovenproof dish. Spread it out in an even layer.
- Once the oven registers 300 degrees F, bake the sweet potatoes for 10 minutes and then give the flesh a stir again. Bake for an additional 10 minutes. Remove from the oven. Transfer the sweet potato flesh to a medium bowl and season with salt. Stir in some of the orange juice, the sherry vinegar, and butter, if using. Taste for seasoning. Add more orange juice if needed.
