Steps:

  • Bring a pot of salted water to a boil and add the kale and Swiss chard. Cook for 20 minutes. Add the potatoes to the pot and cook until softened, about 20 more minutes. Strain and reserve the vegetables.
  • Meanwhile, place the oil in a pot over medium heat. Add the bacon and cook until crisp, about 5 to 7 minutes. Remove with a slotted spoon and drain on paper towels. Keep the bacon warm. Add the garlic to the oil and remove from the heat to infuse the oil. Remove the garlic with a slotted spoon and add the strained vegetables to the pot of infused oil. Mash the vegetables until thoroughly combined, but still a bit chunky.
  • To serve, mound the vegetables on a serving platter and garnish the top with the reserved bacon. Serve warm or room temperature.

1 large bunch kale, cleaned
1 large bunch Swiss chard, greens shredded, stems reserved for another use
12 small red potatoes, peeled and cut into 1-inch cubes
3 Idaho potatoes, peeled and cut into 1-inch cubes
1/2 cup olive oil
9 bacon slices, cut into 2-inch pieces
1 head garlic, peeled and thinly sliced

PAN-SEARED ASPARAGUS WITH CRISPY GARLIC

Before asparagus got moved to its own botanical family, Asparagaceae, in the early 2000s, it was part of the lily family along with onions, chives, shallots and garlic. It makes sense then, that asparagus and garlic make such a good duo. When cooked with care, both can be mild and sweet (or pungent and bitter when cooked carelessly). To highlight the best of both ingredients, gently fry garlic into chips for a crispy topping, then use the lightly infused oil to sauté the asparagus. Both thin and chubby spears work, as would nearly any other vegetable you like with garlic: broccoli, kale, snap peas, fennel and more.

Pan-Seared Asparagus With Crispy Garlic image

Steps:

  • Place a paper towel-lined plate next to the stove. In a medium or large skillet, combine the garlic and olive oil over medium-low heat. Cook, shaking the skillet often, until the garlic is very light golden, 3 to 5 minutes. Remove the skillet from the heat, tilt it, then use a slotted spoon to transfer the garlic to the towel-lined plate, leaving the remaining oil in the skillet. Season the crispy garlic with salt.
  • Return the skillet to medium-high heat. Add the asparagus, season with salt and pepper, and cook, shaking often, until bright green, crisp-tender and browned in spots, 4 to 5 minutes. Slide onto a platter, including any oil in the skillet. Top with the garlic chips and season again with salt and pepper.

Steps:

  • 1. Season the fish on both sides with salt and pepper. Heat 3 tablespoons of the olive oil in a saute pan. Place the salmon, skin-side down, in the pan and cook (without moving the fish) until the skin is crispy, about 4 to 5 minutes. Reduce the heat, turn the salmon, and continue to cook for another 3 to 4 minutes.
  • 2. Meanwhile, heat the remaining tablespoon oil in another saute pan over medium heat. Add the garlic, shallots, and leek; saute for 3 to 5 minutes until the leak begins to soften.
  • 3. Add the cannellini beans and the wine; bring to a gentle simmer. Add the butter. Season to taste with salt and pepper.

1 large leek, white part only, washed well and diced

  • Generously cover potatoes with cold water in a 3-to 4-quart pot and add 1 tablespoon salt. Boil until almost tender, 10 to 15 minutes. Drain potatoes. Transfer to a baking sheet and lightly crush to about 3/4 inch thick with a potato masher, keeping potatoes intact as much as possible.

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • In a large baking dish, toss the red potatoes with 1/2 the olive oil, garlic, rosemary, thyme, and 1/2 the kosher salt. Cover with aluminum foil.

Baked Scrod With Lemon Herb Panko Crumbs image

Steps:

  • Preheat oven to 400 degrees F.
  • In a skillet, saute the onion in 1 teaspoon of oil and 1 teaspoon of butter until soft but not browned.
  • In a medium sized bowl, combine the panko crumbs with the parsley and 1 teaspoon of melted butter, 1 teaspoon of olive oil, and the juice of half the lemon.
  • Once the onions are soft, add a pinch of red pepper flakes, salt and pepper.
  • Add to the onions, the juice of 1/2 the lemon (or more!) and the white wine and continue to cook for 1 minute.
  • Spread the onion and lemon mixture into individual baking dishes or one baking dish large enough to snuggly hold all the fish.
  • Place the fish on top of the onions and season the fish with salt and pepper and a little spray of olive oil.
  • Divide the crumb topping evenly over the fish and sprinkle with parsley and give a light spray of olive oil.
  • Bake for about 20 minutes until fish is cooked through and the crumbs are nicely browned.
  • Cover with tinfoil half way through baking if the top is browning to fast.
