Steps:

  • Preheat oven to 425 degrees. Line 2 baking sheets with parchment.
  • On a lightly floured surface with a lightly floured rolling pin, roll puff pastry into a 12-by-16-inch rectangle. With the long side facing you, lightly brush bottom half of rectangle with some of the beaten egg. Sprinkle 1/4 cup Parmesan and the salt on top half. Fold bottom half over top half. Gently roll dough to seal.
  • Cut rectangle lengthwise into thirds. (You should have three 2-by-16-inch strips.) Sprinkle remaining 1 tablespoon Parmesan on 1 strip, poppy seeds on another, and cayenne on remaining strip. Cut each strip lengthwise into eight 1/4-by-16-inch strips.
  • Transfer strips to baking sheets, spacing 1 inch apart. Working with 1 strip at a time, hold each end with your fingers, and carefully twist strip in opposite directions, forming a spiral. Press ends of strips against parchment to prevent unraveling. Freeze or refrigerate until strips are very firm and cold, about 15 minutes.
  • Bake 1 sheet at a time, rotating halfway through, until straws are golden brown and cooked through, 12 to 14 minutes. Transfer straws to wire racks, and let cool.

All-purpose flour, for surface
1 package (14 ounces) puff pastry, preferably Dufour
1 large egg, lightly beaten
1 ounce Parmesan cheese, grated (1/3 cup)
1/4 teaspoon coarse salt
1/2 teaspoon poppy seeds
1/2 teaspoon cayenne pepper

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C). Line two large baking sheets with parchment paper and grease.
  • Toss the cheese and seeds together in a small bowl. Sit a 3 1/2in (9cm) ring or cookie cutter on one of the baking sheets and sprinkle a small handful of the cheese mixture into it, in a thin layer. Carefully lift the ring off to reveal a neat-edged disk of Parmesan and lay a lollipop stick on top, with the tip of the stick touching the middle of the disk. Repeat with the remaining cheese and sticks to make 10 in total (leaving about 1 1/4in/3cm spaces between them to allow for any spreading during cooking).
  • You should have a little Parmesan left over, so use it to cover up the part of the lollipop stick resting on the disk.
  • Bake in the oven for 5 minutes, swapping to a different shelf halfway through. The cheese should be lightly golden and bubbling.
  • Remove from the oven and slide the paper off the baking sheets and onto a rack to help speed up cooling. Let cool for 1 to 2 minutes until the lollipops have become crisp. Very carefully remove each one with a spatula. I like to serve these stuck upright into a box with holes in the top.

Butter, for greasing
1 1/4 cup/3oz/80g Parmesan cheese, finely grated
1 tsp poppy seeds
1 tsp sesame seeds

PARMESAN AND POPPY SEED STICKS

To keep the "twist" in the cheese straws, it is essential that they be very cold when they go into a very hot oven.

Steps:

  • Thaw puff pastry according to package instructions, just until it is soft enough to cut. (This should take about 20 to 30 minutes at room temperature). Puff pastry should still be very cold. Preheat oven to 425 degrees with two racks.
  • In a small bowl, mix to combine cheese and cayenne pepper. In a second small bowl, combine sesame and poppy seeds with salt, and set aside.
  • Arrange cold puff pastry on work surface. Cut puff pastry lengthwise into two equal 5-inch-wide halves. Brush each half with beaten egg. Sprinkle one half with cheese mixture and other half with seed mixture. Using a pastry cutter or knife, cut each half crosswise into twenty 1/2-inch strips.
  • Working one at a time, twist each strip into a double spiral, and transfer to parchment-lined baking sheets, 1/2 inch apart. Using your thumb, press the ends of the strips down into the parchment to prevent unraveling. Transfer to freezer, and chill until very firm, about 20 minutes. (Refrigerator may be used for chilling but will take at least twice as long.) Check dough while chilling to make sure it stays twisted.
  • Transfer the straws to the oven, and bake until golden, rotating baking sheets halfway through cooking time for even browning, 10 to 15 minutes. Cool the straws on a cooling rack.

One 10-by-10-inch sheet frozen puff pastry (one sheet from a 17.3-ounce package)
1 to 2 ounces Parmesan cheese, grated on the small holes of a box grater to yield about 1/3 cup
1 teaspoon cayenne pepper
3 tablespoons sesame seeds, lightly toasted
3 tablespoons poppy seeds
1 1/2 teaspoons coarse salt
1 large egg, lightly beaten

Steps:

  • Preheat oven to 375 degrees. Brush a standard 9-by-5-inch loaf pan with butter and dust with flour, tapping out excess.
  • Place zucchini in the center of a clean kitchen towel or a few layers of cheesecloth. Gather into a tight bundle and squeeze out as much excess liquid as possible; set aside. In a large bowl, whisk together flour, sugar, salt, pepper, baking powder, baking soda, and poppy seeds, 30 seconds. Add 1 cup cheese; toss to evenly coat in flour mixture. In another bowl, whisk together butter, eggs, sour cream, and zucchini until smooth. Make a well in flour mixture and pour zucchini mixture into it. Stir together just until combined and no dryflour remains (do not overmix). Transfer to prepared pan. Top evenly with remaining 1/2 cup cheese.
  • Bake until a tester inserted into center comes out clean, 1 hour to 1 hour, 10 minutes. Let cool in pan 10 minutes, then transfer loaf to a wire rack and let cool completely. Bread can be stored at room temperature, wrapped in parchment-lined foil, up to 3 days.

1 stick unsalted butter, melted, plus more for pan
2 1/4 cups unbleached all-purpose flour, plus more for pan
3 cups shredded zucchini (from 2 medium)
2 tablespoons sugar
1 teaspoon kosher salt
1/2 teaspoon freshly ground pepper
1 3/4 teaspoons baking powder
1/2 teaspoon baking soda
1 tablespoon poppy seeds
3 1/2 ounces Parmesan, shredded (1 1/2 cups)
3 large eggs, room temperature
1/3 cup sour cream

Steps:

  • Heat the oven to 425 degrees . Line two baking sheets with parchment paper. Dust a clean work surface with flour, and roll each piece of puff pastry into a 10-by-14-inch rectangle, less than 1/8 inch thick. Transfer the rolled-out dough to baking sheets; refrigerate for 15 minutes.
  • Remove dough from refrigerator, and generously brush one puff-pastry sheet with egg yolk. Sprinkle the salt and pepper over the sheet, then cover with poppy seeds. Brush the second pastry sheet with egg yolk, and place on top of first, yolk sides together. Gently press the two sheets together so the poppy seeds stick between them. Return the pastry to refrigerator, and chill another 15 minutes.
  • Remove the pastry from the refrigerator, and brush the top generously with the remaining egg yolk. Using a pizza wheel or a long sharp knife, cut the dough into 10-inch-long strips that are 1/4 inch wide. Hold a piece of dough in the middle, and start twisting in the direction of each end; twist until entire piece of dough is tightly coiled. Transfer twist to a baking pan; press the ends to metal. Repeat with the remaining dough.
  • Bake until the sticks are golden brown, about 8 minutes. Transfer to a wire rack to cool completely, and store in an airtight container up to 1 week.

1 seventeen-and-one-quarter-ounce package frozen puff-pastry dough, thawed
3 large egg yolks, beaten
3/4 teaspoon salt
1/4 teaspoon freshly ground pepper
1/4 cup poppy seeds

  • In a large mixing bowl, whisk together the flour, yeast and salt. Add the cheese cubes and toss to combine. Add 1 & 2/3 cup warm water to the bowl. Use a wooden spoon to mix together, creating a craggy, sticky dough. Cover tightly with plastic wrap and drape a kitchen towel over it. Let this rise overnight, anywhere from 12-18 hours.
  • Lightly flour a clean work surface, along with your hands. Pull the risen, bubbly dough out of the bowl and plop it on the work surface. Using your hands, gently pull the dough a couple of times, to wake it up. Then turn it over on itself a couple of times, forming a round dough ball. Throw a kitchen towel over this and let it rise 20-30 minutes.
  • After this first rise, take a pastry cutter and divide the dough into three equal parts. I went with an oval shape for my dough, but if you want to keep them round, that works. Cover these with your towel again and let them rise for two hours.
