Pear Bran Muffins image

Steps:

  • Combine bran cereal, pears, and skim milk. Let stand for 5 minutes.
  • Mix together flour, sugar, and baking powder.
  • Add oil or applesauce and egg or egg substitue to the pear mixture.
  • Stir in dry ingredients just until moistened.
  • Fill greased muffin tins 3/4 full. May sprinkle with mixture of cinnamon and sugar before baking.
  • Bake at 400 degrees 18 to 20 minutes.

1 1/4 cups 100% all-bran cereal
1 (16 ounce) can bartlett pears in light syrup, drained and diced
1/2 cup skim milk
1 cup all-purpose flour
1/2 cup sugar
2 1/2 teaspoons baking powder
1/4 cup canola oil or 1/4 cup applesauce
1 slightly beaten eggs or 1/4 cup egg substitute

I got this outstanding recipe from the custodian at our church, who fixes these moist, fruity muffins and shares them with friends. He gave me one to try a couple years ago, and I was hooked. The tasty combination of pears and spices is irresistible. -Linda Jachimstal, Manitowoc, Wisconsin

Spiced Pear Muffins image

Steps:

  • In a large bowl, combine the first eight ingredients. In another bowl, beat the egg, yogurt, oil and molasses until smooth. Stir into dry ingredients just until moistened. Fold in pears, raisins and walnuts. , Fill greased or paper-lined miniature muffin cups two-thirds full. Bake at 400° for 10-12 minutes or until muffins test done. Cool for 5 minutes before removing from pans to wire racks. Serve warm.

Pear and Walnut Muffins image

Steps:

  • Preheat oven to 400*F.
  • Place walnuts in a food processor, process until finely ground.
  • Gently spoon flours into dry measuring cups, level with knife. Mix flours, baking powder, baking soda and salt in a medium bowl, stir well with a whisk. Stir in ground walnuts. Make a well in center of mixture.
  • Combine brown sugar, oil, vanilla, yogurt and egg in a small bowl, add to the flour mixture, stirring just until moist. Fold in diced pear.
  • Spoon the batter into 15 muffin cups coated with cooking spray. Mix together sugar, cinnamon and ginger powder in a small bowl. Sprinkle batter with cinnamon/ginger sugar. Bake at 400*F. for 20 minutes or until muffins spring back when touched lightly in center. Remove from pans right away. Place on wire rack. Serve either warm or at room temperature. Enjoy1.

Serve these warm or cold, but do serve them freshly baked. (If you do want to eat them later zap in the microwave for about 10-15 seconds to refresh.) I like them just the way they are but you could spread with some low fat spread and honey or jam.

Pear, Sultana & Bran Muffins image

Steps:

  • Preheat oven to 200 deg C/400 deg F/Gas 6. Line a 12 muffin tin with muffin cases or lightly coat with spray oil.
  • Sift together the flours, baking powder and salt. Mix in the bran.
  • Put the spread in a micro-safe jug then gently melt. Now mix in the sugar, egg and milk then pour over the dry ingredients.
  • Gently fold in the liquid but only enough to combine. Do not over mix, the mix should look quite lumpy.
  • Fold in pears and golden raisins (sultanas). Spoon mixture into prepared tins.
  • Bake for 15-20 minutes or until well risen and golden. Cool on a wire rack.
