DILL PICKLES

Make your own dill pickles at home with Alton Brown's easy recipe from Good Eats on Food Network.

Dill Pickles image

Steps:

  • Combine the salt and water in a pitcher and stir until the salt has dissolved.
  • Rinse the cucumbers thoroughly and snip off the blossom end stem. Set aside.
  • Place the peppercorns, pepper flakes, garlic, dill seed and fresh dill into a 1-gallon crock. Add the cucumbers to the crock on top of the aromatics. Pour the brine mixture over the cucumbers in order to completely cover. Pour the remaining water into a 1-gallon ziptop plastic bag and seal. Place the bag on top of the pickles making sure that all of them are completely submerged in the brine. Set in a cool, dry place.
  • Check the crock after 3 days. Fermentation has begun if you see bubbles rising to the top of the crock. After this, check the crock daily and skim off any scum that forms. If scum forms on the plastic bag, rinse it off and return to the top of the crock.
  • The fermentation is complete when the pickles taste sour and the bubbles have stopped rising; this should take approximately 6 to 7 days. Once this happens, cover the crock loosely and place in the refrigerator for 3 days, skimming daily or as needed. Store for up to 2 months in the refrigerator, skimming as needed. If the pickles should become soft or begin to take on an off odor, this is a sign of spoilage and they should be discarded.

Steps:

  • Pour the jar of pickles and the liquid into a large bowl. Stir in the sugar, hot pepper sauce, garlic and red pepper. Return to the pickle jar and refrigerate for at least 1 day before serving to soak up the flavors.

Ukrainian Dill and Garlic Pickles image

Steps:

  • Soak cucumbers in cold water overnight.
  • Sterilize a 1 gallon glass or ceramic container. Combine the water and salt in a large pot and bring to a boil. Prepare the cucumbers by trimming the ends and making a slit in the sides with a small sharp knife.
  • In the bottom of the sterile container, place several stalks of dill, half of the garlic cloves, about 10 peppercorns and a slice or two of red chile pepper. Arrange half of the cucumbers over the seasonings and then repeat the layers. When the brine comes to a boil, pour over the cucumbers to cover. Place a small plate on top of the pickles to keep them submerged. Store in a cool place.
  • Pickles will be ready in 4 to 10 days, depending on how warm it is. Once they have fermented to your liking, refrigerate until using.

Steps:

  • In a stockpot, bring water, vinegar and salt to a boil; boil 10 minutes. Pack cucumbers into nine hot quart jars within 1/2 in. of top. Place one dill head, two garlic cloves and two peppers in each jar. , Carefully ladle hot mixture into jars, leaving 1/2-in. headspace. . Remove air bubbles and adjust headspace, if necessary, by adding hot mixture. Wipe rims. Center lids on jars; screw on bands until fingertip tight. , Place jars into canner with simmering water, ensuring that they are completely covered with water. Bring to a boil; process for 15 minutes. Remove jars and cool.

Refrigerator Garlic Dill Pickles image

Steps:

  • Bring brine solution of water, vinegar & salt to a boil, then turn off burner.
  • In an ice cream bucket, layer dill head(s), garlic chunks, onion slices and cucumbers. Small cucumbers can be thrown in whole. Larger cucumbers should be quartered.
  • Pour warm (not hot) brine over the cucumbers and place a plate on top to keep the cucumbers submerged. Cover bucker & put in frig. Pickles can be eaten after 5 day. Pickles will last in frig for 9 - 12 months.
  • NOTE: Other ingredients (such as hot peppers, whole black pepper corns, mustard seeds, red pepper flakes, etc. ) can be added to the ice cream bucket for a different flavor sensation.

I made this recipe in memory of the many years I canned pickles with my dear grandmother. It is a mix of spices between two recipes from the Ball Book of Canning (Bible of Canning).

Peppered Garlic Dill Pickles image

Steps:

  • 1. Prepare canner, jars, and lids
  • 2. Tie pickling spice in a square of cheesecloth to create spice bag.
  • 3. In large stainless steel saucepan, combine vinegar, water, sugar, pickling salt, and spice bag. Bring to boil over med-high heat, stirring to dissolve sugar and salt. Reduce heat and boil gently for 15 minutes, until spices have infused liquid.
  • 4. Place 1 bay leaf, 1/4 tsp. black peppercorns, 1 clove garlic, 1/2 tsp. mustard seeds, and 2 heads of dill into each jar. Pack cucumber slices into hot jars to within a generous 1/2" of top of jar. Ladel hot pickling liquid into jar to cover cucumbers, leaving 1/2" headspace. Remove air bubbles and adjust headspace, if necessary by adding hot liquid. Wipe rims. Center lid on jar. Screw band down until resistence is met, then increase to finger-tip tight.
  • 5. Place jars in canner, ensuring they are completely covered with water. Bring to a boil and process for 15 minutes. Turn off and remove canner lid. Wait 5 minutes, then remove jars, cool and store.

1 c raw brown sugar
2/3 c pickling or canning salt (kosher salt can be used)

DILLED PICKLED PEPPERS

This is a very old recipe that doeas not meet modern USFDA standards. If you are ok with heirloom recipes stop after step 10 step. That is how I make them and you will have a lot more crunch to your peppers. I got this recipe from my Mother-In-Law and made these for years. Mom passed at the age of 93 4 years ago. Mom would make probably 40 qts or more every year before her health declined. All of her kids and grandkids would raid her pantry for the peppers. The amount of peppers is an estimate.

Dilled Pickled Peppers image

Steps:

  • Sterilize jars.
  • Mix brine ingredients and heat to a boil.
  • Wash peppers and cut in half or quarters length wise removing the seeds.
  • Heat lids.
  • Pack peppers tightly in quart jars.
  • Add 1 sprig of fresh dill or 1 tsp of dill weed to each jar.
  • Add a clove of garlic to each jar.
  • Add 1 tsp (scant) of alum to each jar.
  • Fill each jar to within 1/2" of the top with the boiling brine.
  • Wipe rim of jar, place lids and screw on bands finger-tip tight.
  • Process in boiling water bath five minutes up to 1000 feet in elevation; ten minutes up to 6000 feet; fifteen minutes over 6000 feet.
  • When the jars have been processed in boiling water for the recommended time, turn off the heat and remove the canner lid. Wait 5 minutes before removing jars.
  • Using a jar lifter, remove the jars one at a time, being careful not to tilt the jars. Carefully place them directly onto a towel or cake cooling rack, leaving at least one inch of space between the jars during cooling. Avoid placing the jars on a cold surface or in a cold draft.
  • Let the jars sit undisturbed while they cool, from 12 to 24 hours. Do not tighten ring bands on the lids or push down on the center of the flat metal lid until the jar is completely cooled.

  • Clean and sterilize your jars, lids and rings and a ladle or heat-proof measuring cup with a handle, and a chopstick or butterknife. You can do this one of two ways. Either wash in your dishwasher and use the heat dry cycle or immerse jars and rings, ladle and butterknife in boiling water for five minutes and hold in the hot water while preparing the cucumbers.
