MINT TEA COUSCOUS

Whip up this quick and easy Moroccan inspired side dish in just 15 minutes - perfect with lamb, chicken or halloumi

Mint tea couscous image

Steps:

  • Put the mint and lemon zest in a saucepan (reserve some small leaves for later) and cover with 600ml water. Bring to the boil, then add the couscous, cover and take off the heat.
  • Leave to stand for 5-10 mins until the couscous has absorbed all the liquid. Remove and discard the lemon zest and cooked mint. Top the couscous with the spring onions and reserved mint leaves, and serve.

Steps:

  • In a medium saucepan over high heat, bring 2 1/2 cups of water to a boil. Add the frozen peas, and boil for 1 minute. Stir in the couscous and butter; turn off the heat. Cover the pan and let rest for 5 minutes.
  • Add the mint and lemon juice to the couscous and fluff with a fork. Taste and season with salt and pepper, if necessary.

1 cup frozen peas
2 cups couscous
3 tablespoons butter
3 sprigs fresh mint, finely chopped
1/2 lemon, juiced
Kosher salt and freshly ground black pepper

Steps:

  • Boil water and broth
  • When water is boiling add peppermint tea bag to water and lower heat.
  • After 3 minutes, remove the tea bag.
  • Add cumin and couscous and stir.
  • Stir in raisins and pepper and salt.
  • If using bouillon do not add salt.
  • Remove pan from heat and cover tightly.
  • After ten minutes, fluff couscous and serve.
  • Garnish with slivered almonds.

Couscous Salad with Tomatoes and Mint image

Steps:

  • Toss the tomatoes, cucumbers, and lemon juice in a bowl with 2 teaspoons of the salt. Set aside.
  • Put the couscous into a large bowl. Bring the water, lemon zest, 3 tablespoons of the oil, the remaining salt, cayenne, and herb stems to a boil over high heat. Pour the liquid over the couscous, stir to separate any clumps. Cover with a lid, plate, or plastic wrap, set aside for 5 minutes. Remove the zest and herb stems and fluff with a fork.
  • Add the tomato mixture, scallions, mint, parsley, and pine nuts. Drizzle the remaining oil over the salad, toss and serve.

Steps:

  • Toast the nuts in a saucepot suitable for rice. Remove to a food processor and finely chop. Reserve.
  • Add the EVOO and garlic to the pot and stir 1 to 2 minutes. Add the stock and bring to a boil. Stir in the couscous, cover the pot, turn off the heat and let stand 5 minutes. Meanwhile, pulse-chop the mint in food processor very fine. Stir the mint and reserved ground nuts into the couscous as you fluff with a fork.

  • In a bowl, stir together the couscous, garlic, lemon zest, scallions, a pinch of salt and a grind or 2 of pepper. In a pot on high heat, bring the chicken stock and butter to a boil. Immediately pour over the couscous mixture, then quickly cover tightly with a lid or plastic wrap. Let sit for 5 minutes. Add the mint, fluff with a fork and stir in the olive oil. Serve warm.

  • Put the couscous and peas in a large bowl and add 1 1/2 cups boiling water. Stir to combine and then cover with plastic wrap. Set aside to steam for 5 minutes.
