SKILLET PORK CHOPS WITH ZUCCHINI
My husband and I live on a small farm with our two young sons. We're always blessed with plenty of zucchini from our garden in summer, so I try lots of different zucchini recipes. This is one of my family's favorites. -Diane Banaszak, West Bend, Wisconsin

- In a shallow dish, combine the flour, 2 tablespoons cheese, salt, dill and pepper. Dip pork chops in flour mixture to coat both sides; shake off excess., In a large skillet, brown chops on both sides in oil. Top with onions; add water. Bring to a boil. Reduce heat; cover and simmer for 15 minutes., Place zucchini over the onions. Sprinkle remaining cheese over zucchini. Sprinkle with paprika. Cover and simmer for 10-15 minutes or until vegetables are tender and a thermometer inserted in pork reads 145°. Let stand 5 minutes.

- In a skillet, saute celery and onion in butter until tender. In a bowl, combine the zucchini, bread cubes, egg white, parsley and poultry seasoning. Stir in celery mixture. Cover and refrigerate., Arrange pork chops in a greased 13-in. x 9-in. baking dish. Dissolve bouillon in hot water; drizzle over chops. Bake, uncovered, at 325° for 30 minutes. Top with zucchini dressing. Cover and bake 20 minutes longer or until meat juices run clear.

- Heat the oil in a 12-inch nonstick skillet over medium-high heat, add the pork chops and sprinkle both sides with the rosemary (or oregano) and salt, cook the chops, turning occasionally, until well browned on both sides, about 6-7 minutes.
- Add the onion, garlic, and zucchini slices, and continue cooking until the onions are soft about 5-6 minutes longer.
- Add the pasta sauce, stirring until it is well combined with the chops and vegetables, adjust the heat so that the sauce simmers gently and cook 6-8 minutes longer, or until the zucchini slices are crisp tender and the chops are just cooked through, tested in the thickest part with the point of a paring knife.
- Serve the chops and zucchini sauce mixture over the pasta.

PORK CHOPS AND ZUCCHINI A LA PEG BRACKEN
Family Circle published this Peg Bracken recipe years after she wrote her "I Hate to Cook" books. I've altered the cooking times slightly, but nothing else. My vegetable-averse son avoided the zucchini, but loved the chops; my daughter used to call before she came home from college for a weekend, to ask if I would make this for dinner. Heck, it even wrung a compliment out of my father-in-law. We like it served with rice (a nice "sponge" for the vegetables and cooking liquid.)

- Combine the pork chop breading ingredients - flour, Parmesan cheese, salt, dill weed and pepper -in a plastic or small paper bag. Shake the pork chops in the mixture and SAVE WHAT'S LEFT IN THE BAG. (Can you tell I didn't do that one time?) Brown the chops on both sides in a little bit of oil in a skillet large enough for the chops to nestle together in a single layer. If you choose a pan you can also serve in, life is even easier. Once they're browned and "nestled", slice the two onions and spread them over the chops; add 1/3 cup of water, cover the pan and simmer over low heat for 25 minutes. Remove the cover and add the zucchini, sliced (I slice it 1/2" to 3/4" thick). Now go back to that bag of ingredients that you've saved; add the additional 3 Tb Parmesan cheese, the 1/2 tsp paprika and the 1/2 tsp dill weed. Shake it up to mix it all together and sprinkle the concoction over everything in the pan. DON'T STIR. Just let it sit there on top of the zucchini. Replace the cover and simmer for another 15 minutes. All done. Serve "as is.".

SMOKY GRILLED PORK CHOPS AND ZUCCHINI NOODLES

- To a large skillet, add the cracked coriander seeds, chipotle powder, cumin powder, smoked paprika and mustard powder. Toast over low heat, stirring frequently, until fragrant and just toasted, about 3 minutes. Allow to cool to room temperature, then mix with the salt.
- Heat up your grill with lump charcoal, making a hot and a slow zone. Dry the pork chops with paper towels. Evenly sprinkle the pork chops on both sides with the spice mixture.
- Drizzle the seasoned pork chops with olive oil, and then place them on the hot side of the grill. Cook for about 8 minutes per side to develop a nice crust, then move to the slow zone of the grill and put the lid down. Continue to cook until the pork chops reach 140 degrees F. Remove to a platter or cutting board. Let the chops rest for 5 to 10 minutes.
- Meanwhile, cut the zucchini into noodles with a spiral vegetable slicer on the medium setting. Alternatively, use a Japanese mandoline or a sharp chef's knife to cut the zucchini into thin planks, then into strips lengthwise.
- Toss the zucchini noodles, corn and cherry tomatoes in a large bowl with the lime juice, garlic and a drizzle of olive oil. Season with salt and pepper. Toss gently to combine, then stir in the dill and feta. Pour into a large serving bowl and serve alongside the pork chops.
GRILLED PORK CHOPS WITH SPICY ZUCCHINI-PINEAPPLE SALSA

- Place the pork chops into a glass baking dish or bowl and pour the chilled Base Brine over top. Cover with plastic wrap and refrigerate for 8 hours or overnight.
- About an hour before serving, make the salsa. Combine the pineapple, zucchini, mint, olive oil, chardonnay, shallots, jalapenos, ginger and some salt and pepper in a mixing bowl. Let marinate 1 hour. (This is best if allowed to marinate for 1 hour, but you can also serve it straight away if necessary.)
- When ready to cook the pork, prepare a grill for medium-high heat. Remove the pork chops from the brine, pat dry and allow to sit out while the grill is preheating.
- Season the pork chops on all sides with salt and pepper. Place onto the hot grill and cook until the internal temperature registers 145 degrees F on a meat thermometer, 7 to 8 minutes per side for medium. Allow the pork chops to rest for 5 minutes before serving topped with the salsa.
- Combine the brown sugar, salt, peppercorns, garlic, thyme, rosemary, bay leaf and 8 cups (2 quarts) water in a large stockpot and heat just to dissolve the salt and sugar. Chill thoroughly before using.

- In a large zip-top bag, combine coriander, brown sugar, cumin, and 1 teaspoon each salt and pepper. Add pork and 1 tablespoon oil and toss to coat. Refrigerate at least 8 hours (or up to 1 day).
