BLACKBERRY-SAUCED PORK CHOPS

My family loved these chops from the first time I fixed them. They're as tasty in a skillet as they are grilled, so you can eat them all year long. The sauce is also fantastic with chicken. -Priscilla Gilbert, Indian Harbour Beach, Florida

Blackberry-Sauced Pork Chops image

Steps:

  • In a small saucepan, combine spreadable fruit, lemon juice, soy sauce and cinnamon. Cook and stir over low heat until spreadable fruit is melted. Remove from heat., Sprinkle pork chops with steak seasoning. In a large nonstick skillet coated with cooking spray, heat oil over medium heat. Add pork chops; cook 5-7 minutes on each side or until a thermometer reads 145°. Let stand 5 minutes. Serve with sauce and blackberries.

Elk Chop in Blackberry Port Sauce image

Steps:

  • In a very hot pan add the oil then the chops, brown evenly on one side, turn over and place in a preheated oven (500 degrees) approximately 6 to 8 minutes or until medium rare. Remove from the oven, place on high heat, remove the chops, add the shallots and the berries, saute slightly add the port and let reduce by half, then add the sauce and the sugar season with a little salt if necessary, sauce should be a little thin, serve sauce on the side.

1 tablespoon olive oil
2 elk rib chops seasoned with fresh ground pepper
1-ounce shallots, julienned
1/2 pint fresh blackberries, not frozen
8 ounces ruby port wine
2 ounces brown sauce
1 ounce brown sugar

Pork Chops with Blackberry Sauce image

Steps:

  • 1. Preheat grill. Brush both sides of chops with olive oil, then sprinkle both sides with Montreal Steak Seasoning, to taste. When grill is hot, place chops on grill and lower lid on grill.
  • 2. Grill for about 10 minutes, turning about halfway through.
  • 3. Meanwhile, combine the remaining ingredients except the fresh blackberries in a small saucepan. Bring to a bare boil, then simmer, stirring occasionally, until the preserves melt and are fully incorporated. Remove from heat and cover to keep warm.
  • 4. When chops are grilled to your liking, remove from the grill, place chops on serving plate, and top with the sauce and some fresh blackberries.

4 pork loin chops, 3/4 inch thick
montreal steak seasoning, to taste
1/4 c blackberry preserves
1 Tbsp soy sauce
1 tsp fresh lemon juice

Steps:

  • Combine chili powder, cayenne, salt, and pepper; rub onto chops.
  • Heat oil in a large saute pan over medium-high heat; add chops and saute 4 minutes on each side.
  • Cover, reduce heat to medium-low, and cook 5-7 minutes; remove chops, cover, and keep warm.
  • Saute shallots in the pan over medium-high heat about 2 minutes.
  • Deglaze with wine, scraping up any browned bits; add 3 cups berries, broth, and sugar.
  • Bring to boil, simmer 3 minutes, then coarsely mash.
  • Simmer sauce until slightly thick; add remaining berries, and cook until heated throughly.
  • Off heat, swirl in butter; season with salt and pepper.

  • Broil chops 4-5 in. from the heat for 4-5 minutes on each side or until a thermometer reads 145°.
