Pork Chops with Herb Stuffing image

Steps:

  • 1. Cut a "pocket" into each chop with a very sharp pointed knife
  • 2. Lightly salt & pepper each chop, set aside
  • 3. Mix 1 tbsp. butter and broth in a saucepan, bring to medium heat
  • 4. Turn heat to low; add onion, celery, stuffing mix & spices, stir with a wooden spoon to make stuffing
  • 5. Insert stuffing into the pockets of the chops, secure with baker's twine and toothpicks
  • 6. Brown chops in sauté pan with the other tbsp. of butter
  • 7. Place in a greased covered casserole dish, bake at 350 degrees for 45 minutes.
  • 8. Remove toothpicks & twine and enjoy!

2 Tbsp chopped celery
2 Tbsp butter
1 c herb stuffing mix
2/3 c chicken broth, low salt
1 pinch salt and pepper
1 pinch rubbed sage

I'm gonna show you my favorite technique for stuffing pork chops, as well as one of my favorite stuffings for pork. Above and beyond producing something that's visually impressive, we are also flavoring our pork chops from the inside out with this method. So, this is basically a technique video and will work no matter what stuffing you decide to use--although this peach stuffing was absolutely delicious.

Peach-Stuffed Pork Chops image

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Cook bacon in a nonstick pan over medium heat until almost crisp, about 5 minutes. Add onion and poblano pepper and saute until onion turns translucent, 5 to 6 minutes more. Add peach and cook until tender and starting to give off some juice. Remove from heat and transfer to a bowl.
  • Stir thyme leaves, black pepper, salt, cayenne, and saltine crackers into the peach mixture. Add 2 tablespoons chicken broth if needed for added moisture. Refrigerate until needed.
  • Cut a pocket in the center of each pork chop, starting with a small incision on the fat side of the chop, exactly halfway down. Use the tip of the knife to cut as close to the edges as possible without poking through. Try to make an incision at least 2 inches wide.
  • Fill the pockets with the stuffing, packing and pressing in firmly. Season both sides of the chops with salt.
  • Heat olive oil in an oven-safe pan over high heat. Sear chops in the hot oil until browned on one side, about 3 minutes. Carefully turn the chops over and transfer the pan to the center of the oven.
  • Bake in the preheated oven until an instant-read thermometer inserted into the centers reads 145 degrees F to 150 degrees F (63 to 66 degrees C), about 15 minutes.
  • Remove chops from the pan to a plate and cover loosely with foil.
  • Return the pan to the stovetop and place a towel over the hot handle. Add 1/4 cup chicken broth and balsamic vinegar. Bring to a boil while scraping the bottom of the pan with a spoon to deglaze. Turn off heat and stir in butter. Adjust seasoning if desired and serve over pork chops.

Steps:

  • Preheat oven to 350°F (175°C).
  • In a large bowl, combine cream cheese, pepper, garlic powder, chives, provolone, and bacon, stirring until thoroughly mixed. Set aside.
  • Season all sides of the pork chops with salt and pepper.
  • Carefully cut a pocket through the side of the pork chop in order to create a cavity. Stuff the cavity with a generous spoonful of the cream cheese mixture and press around the edges of the pork to seal it in. Repeat with the remaining pork chops.
  • Dip the stuffed pork chops in the flour, shaking off excess, then the egg, then the breadcrumbs. Repeat with the remaining pork chops.
  • Heat the oil in a pan over medium heat. Fry the pork chops for about one to two minutes, then flip. Remove from the heat and bake for 15-20 minutes, until cheese is bubbling and starting to brown.

Steps:

  • In a skillet over medium-high heat, saute celery leaves and onion in 1 tablespoon of butter until soft. Remove from the heat; stir in bread crumbs, 1/3 cup broth and seasonings; mix well. Cut a pocket in each pork chop by slicing from the fat side almost to the bone. Spoon about 1/2 cup stuffing into each pocket. Steps:

  • Preheat oven to 350 degrees. Toast bread cubes on a baking sheet until golden, about 7 minutes. Heat butter and 1 tablespoon oil in a 12-inch ovenproof skillet over medium heat. Cook onion, stirring, until soft, about 3 minutes. Add celery; cook 1 minute. Transfer to a bowl. Reserve skillet. Toss bread, herbs, 1/4 teaspoon coriander, and 3 tablespoons stock with onion mixture. Season with salt and pepper.
  • Stuff chops. Using a fork, mix and mash garlic, 2 teaspoons coriander, 1/2 teaspoon salt, and 1 tablespoon oil; rub onto pork. Heat 2 tablespoons oil in skillet over medium-high heat. Cook pork until golden brown, 2 to 3 minutes; flip, and transfer skillet to oven. Cook until pork registers 155 degrees, about 15 minutes. Transfer to a plate; cover.
  • Add sherry and 1/2 cup stock to skillet. Cook over medium-high heat, stirring, until reduced by half. Serve with pork.

Steps:

  • In a large skillet, heat 1/4 cup vegetable oil over medium-high heat until oil begins to glisten.
  • In a wide, shallow bowl, whisk together egg and milk. In another wide, shallow bowl, combine bread crumbs, flour, garlic powder, basil, sage, thyme, pepper and salt.
  • Dredge each pork chop first in egg mixture, shaking off excess. Then dredge in bread crumb mixture, coating both sides heavily and evenly.
  • Carefully lower each chop into hot oil and fry for 3-5 minutes on each side or until done. Coating should be golden brown and crispy.
  • Remove chops to a plate covered with paper towel. Place another paper towel atop chops and carefully blot off extra oil.

Steps:

  • Sprinkle both sides of chops with salt and pepper.
  • In a large skillet over medium-high heat; brown pork chops in the oil.
  • Removed pork chops and set aside.
  • Cook onion and celery in the same skillet until onion is tender.
  • Add chopped apples and cook another minute.
  • Stir in chicken broth and celery soup.
