CILANTRO PORK TENDERLOIN

I found this recipe in a magazine, then added extra cumin and mustard to satisfy my family's taste for spicy foods. I like to serve pork frequently.

Cilantro Pork Tenderloin image

Steps:

  • In a large resealable plastic bag, combine the first seven ingredients; add pork. Seal bag and turn to coat; refrigerate overnight. , Drain and discard marinade. Prepare grill for indirect heat. Grill, covered, over indirect medium-hot heat, for 20-27 minutes or until a thermometer reads 145°. Let stand for 5 minutes before slicing.

Glazed Pork Loin with Cilantro and Garlic image

Steps:

  • 1. Place the pepper flakes in a small bowl and pour the boiling water over them. Let sit for 1 to 2 minutes to rehydrate the flakes. Combine all the brine ingredients in a blender, or in a large bowl using an immersion/stick blender. Stir in the pepper flakes and the soaking water.
  • Place the loin in an extra-large resealable plastic bag, pour the brine over the top, squeeze out any excess air from the bag, and close. Roll the bag to evenly coat the meat. Refrigerate for at least 6 hours, or up to 12.
  • 2. Preheat an indirect barbecue with a drip pan and fruitwood (preferably apple), a ceramic cooker with deflector plate and fruitwood (preferably apple), or a charcoal or gas grill with a box or packet of fruitwood (preferably apple) to 250°F.
  • 3. Combine all of the seasoning blend ingredients.
  • Place all of the glaze ingredients in a jar with a tight-fitting lid and shake to combine. Set aside.
  • 4. Remove the loin from the brine and lightly pat dry with paper towels.
  • Sprinkle the rub evenly on all sides.
  • Using your hands or a brush, evenly, but lightly, coat the loin with canola oil.
  • Insert a remove thermometer into the center of the meat.
  • 5. Place the loin in the cooker and cook until the internal temperature reaches 135°F, about 1 hour and 15 minutes.
  • 6. Give the glaze a quick shake to reincorporate any ingredients that may have settled. Brush the loin with the glaze and return to the cooker until the internal temperature reaches 145°F, about 15 minutes. At this point the meat will be slightly pink in the center; cook for an additional 5 to 10 minutes for more well-done.
  • 7. Pour about half of the remaining glaze on a cutting board and top with the loin. Let rest for 10 minutes.
  • 8. Slice the meat into 1/4-inch slices. Dredge the slices in the glaze, adding additional as needed to coat the exposed sides. Sprinkle with fleur de sel and pepper.

1 teaspoon crushed hot red pepper flakes
1 tablespoon boiling water
2 cups apricot nectar
2 cups water
1/2 cup kosher salt
1/2 cup granulated sugar
10 garlic cloves, peeled, halved, germ removed, and grated on a Microplane grater
One 6 1/2- to 7-pound pork loin
Seasoning Blend
2 tablespoons mild chile powder, preferably Chimayo, Ancho, or Hatch
1 tablespoon sweet paprika
1 tablespoon firmly packed dark brown sugar
3/4 teaspoon dry mustard
1/2 teaspoon garlic salt
1/2 teaspoon lemon pepper
1/2 teaspoon coarsely ground fresh black pepper
1/2 teaspoon kosher salt
1/4 teaspoon Old Bay Seasoning
1/4 teaspoon ground cumin
Glaze
1/2 cup apricot preserves
1 1/2 tablespoons freshly squeezed lemon juice
3 tablespoons finely chopped cilantro or flat-leaf parsley
1 garlic clove, peeled, halved, germ removed, and grated on a Microplane grater
About 2 tablespoons canola or vegetable oil
Fleur de sel
Finely ground fresh black pepper

PORK SHOULDER "PERNIL" WITH CILANTRO-CITRUS ADOBO

Pork Shoulder

Steps:

  • Place the pork, fat side up, in a roasting pan fitted with a rack insert, and using a sharp knife, score the surface of the meat with small slits. Prepare the adobo: In a food processor, add the garlic, oregano, cilantro, cumin, salt, and pepper. Add lime juice and orange juice. Drizzle in olive oil and pulse until you have a nice puree. Rub the marinade all over the pork, being sure to get into the incisions so the salt can penetrate the meat and pull out the moisture - this will help form a crust on the outside when cooked.
  • Preheat the oven to 300 degrees F.
  • Roast the pork for 3 hours, uncovered, until the skin is crispy-brown. Let the meat rest on a cutting board for 10 minutes before slicing, covered lightly with aluminum foil. Drizzle with lime juice and garnish with cilantro.

Roast Pork with Sweet-and-Sour Chile Cilantro Sauce image

Steps:

  • Prepare pork loin:
  • Preheat oven to 400°F.
  • Coarsely crush coriander seeds with a mortar and pestle or an electric coffee/spice grinder, then stir together with bread crumbs, oil, pepper, and salt in a small bowl.
  • Turn pork so a long side is closest to you and season with salt and pepper. Pat one third of seasoned crumbs onto pork, leaving a 2-inch border along top edge. Starting with side nearest you, roll meat into a cylinder and tie securely with kitchen string. Coat pork with remaining crumbs.
  • Roast pork on a rack in a roasting pan in middle of oven 15 minutes. Reduce temperature to 325°F and roast until an instant-read thermometer diagonally inserted at least 2 inches into meat registers 155°F, 1 to 1 1/4 hours more. Let pork stand, loosely covered, 10 minutes.
  • Make sauce while pork roasts:
  • Simmer bell pepper, caribe, honey, lime juice, and salt in a 1-quart heavy saucepan over moderate heat, stirring occasionally, until sauce is slightly thickened, about 30 minutes. Cool sauce to warm or room temperature, then stir in cilantro just before serving.
  • Slice pork and serve with sauce.

1/4 cup chopped fresh cilantro

  • Preheat oven to 425°. Heat 1 Tbsp. oil in a large ovenproof skillet over medium-high heat. Season pork with salt and pepper and cook, turning, until browned on all sides, 6–8 minutes. Transfer skillet to oven and cook pork until an instant-read thermometer inserted in thickest part registers 140°, 10–15 minutes. Transfer pork to a cutting board and let rest at least 5 minutes before slicing; set aside pan drippings.
  • Toss dates, orange juice, reserved pan drippings, 3 Tbsp. chopped cilantro, and remaining 2 Tbsp. oil in a small bowl; season with salt and pepper. Spoon relish over pork and top with cilantro leaves.
  • DO AHEAD: Relish (without pan drippings) can be made 4 hours ahead. Cover and chill. Add pan drippings just before serving.

  • Preheat a Dutch oven or large pot over medium heat. Add the polenta, salt and water and simmer, stirring frequently until it begins to thicken. After about 10 minutes, scrape along the bottom of the pan to prevent burning and turn the heat to low. Cover and simmer until no longer gritty, about 20 minutes.
  • Arrange all of the sliced vegetables and thyme leaves so that they fit snugly inside of a baking dish. Drizzle with olive oil and season with salt and pepper. Roast uncovered at 425°F until you begin to see the vegetables brown around the edges, about 40 minutes.
  • Preheat a large cast iron skillet over medium heat. Meanwhile, season the pork on all sides with salt and pepper. Pour the olive oil in the skillet and when you see a wisp of smoke form, add the pork tenderloins. Sear on all sides until very brown, about 5 minutes per side or 20 minutes total. Use an internal thermometer and remove the pork when it reads 155°F. Rest on a cutting board for 5 minutes before slicing.
  • Add the cilantro, garlic, apple cider vinegar, olive oil, caper berries and brine, and red pepper flakes (if using) to a bowl. Use an immersion blender to blend on high until smooth, about 1 minute.
