SLOW COOKER CRANBERRY SAUCE WITH PORT AND ORANGE
This classic, sweet and tangy cranberry sauce tastes complex but is quite easy to make. The slow cooker method saves in-demand stovetop space for other Thanksgiving dishes, and the sauce keeps well in the refrigerator for at least one week.

- Put the cranberries into a 5- to 8-quart slow cooker. Scoop out about 3/4 cup of the berries and finely chop. Set aside. Stir the sugar, port and half the orange zest into the slow cooker. Season with a generous pinch of salt. Cover and cook on high for 1 hour and 30 minutes.
- Stir the cranberry sauce well and set the lid back on the slow cooker so there is a 1- to 2-inch gap, to allow for evaporation. Cook on high for another 1 1/2 to 2 hours, stirring at least twice, taking care around the edges, until many of the berries have popped and the sauce has thickened and is syrupy. Stir in the reserved chopped cranberries and the remaining orange zest. Spoon the cranberry sauce into a serving bowl, cover, and chill in the refrigerator until ready to serve.

Bring the mixture to a simmer over medium heat and cook, stirring often, until many of the berries have popped and the sauce has thickened and is jammy and syrupy, 10 to 15 minutes. Stir in the reserved chopped cranberries and the remaining orange zest. Spoon into a serving bowl, cover, and chill in the refrigerator until ready to serve.
CRANBERRY POT ROAST

- Sprinkle onion soup mix on bottom of crock pot. Sprinkle salt and pepper on each side of pot roast. Preheat a large skillet over stove to medium high heat. Once skillet is hot, add 2 Tablespoons butter or olive oil. Once melted, add roast and sear on each side for approximately 2 minutes (depending on how hot your pan is). Add remaining 2 Tablespoons of butter before flipping roast. Place seared roast into crock pot over onion soup mix. Open can of cranberry sauce and gently blend it up in can. Then pour it over the pot roast. Add 1/2 cup of water and vegetables if doing vegetables. Cook on low for 9 hours or on high for 6 hours. F after sitting for 15 minutes or for a medium done pot roast it should reach 160Once cooked, remove from crock pot and allow to sit for 15 minutes. While allowing meat to rest, pour juices into a sauce pan. In a small bowl combine corn starch with 4 Tablespoons of water. Add this to meat juices. Cook over medium heat stirring until thickened. Pour over meat and serve.
POTLUCK CRANBERRY SAUSAGES (CROCK POT OR NOT)
A nice variation on the typical grape jelly links. Easily multiplied for larger groups. Adapted from a BHG recipe. Cook times listed are for the stove top method.

- STOVE TOP METHOD:.
- Stir together all ingredients except sausages in a medium saucepan. Cook over medium heat until bubbly and smooth, stirring often.
- Add sausages. Cover and cook over medium-low heat for approximately 10 minutes, or until sausages are heated through, stirring occasionally.
- CROCK POT METHOD:.
- Combine all ingredients except sausages in a 1-quart crock pot. Stir to combine, then add sausages. Cover and cook on high for about 2 hours, or until sausages are heated through.

SWEET AND SOUR MUSTARD SAUSAGES AND MEATBALLS
A few months ago in one of the forums Zewbiedoo mentioned a basic recipe alternative to Grape Jelly Meatballs, so today I decided to give 'em a try. :) Her recipe was for 32 ounces apple jelly and 6 to 8 ounces yellow mustard. I, of course, had to fiddle with it and add other stuff. :) I made them for our gaming session and they went over very well, especially with those folks who really enjoy tangy, "mustardy" flavors.

- In your crockpot, combine the jelly, mustard, onion, garlic, and curry powder, and stir well to mix.
- Add the sausages and meatballs.

- You can also use just all sausage or all meatballs.

- Place onion soup mix in the bottom of a slow cooker. Place roast in the slow cooker, and top with cranberry sauce.
- Cover, and cook 8 hours on Low.
- Remove roast, and set aside. Set slow cooker to High. Whisk together butter and flour, and slowly mix into the liquid remaining in the slow cooker to create a thick gravy. Serve with the roast.
