This recipe was an accident. I was experimenting with flavors and wasn't expecting much out of it, but the apple cider addition yielded some of the best pork I've ever tasted (and the boyfriend agreed).

Steps:
- Preheat the oven to 300 degrees F (150 degrees C).
- Combine brown sugar, garlic powder, 1 teaspoon sage, rosemary, salt, and pepper in a bowl. Dredge pork chops in seasoning mixture until coated thoroughly.
- Heat olive oil and butter in an oven-safe skillet over medium heat until butter is frothy, 1 to 2 minutes. Brown pork chops in the hot skillet on each side, 7 to 10 minutes total. Add apple cider, remaining sage, and drizzle in honey. Reduce heat to low and simmer for 5 minutes.
- Transfer the skillet to the oven and bake until pork chops are no longer pink in the centers, 10 to 15 minutes. An instant-read thermometer inserted into the center should read 145 degrees F (63 degrees C).
- Remove the skillet from the oven and plate pork chops with sauce.

- In a shallow bowl, mix 1/4 cup flour, mustard, garlic pepper and seasoned salt. Add pork chops, 1 at a time, and toss to coat; shake off excess. , Select saute or browning setting on a 6-qt. electric pressure cooker. Adjust for medium heat; add oil. When oil is hot, brown pork in batches. Add 1-1/2 cups broth to pressure cooker. Cook 30 seconds, stirring to loosen browned bits. Press cancel. Return all pork to pressure cooker., Lock lid; close pressure-release valve. Adjust to pressure-cook on high for 3 minutes. Quick-release pressure. A thermometer inserted in pork should read at least 145°. Remove pork to a serving plate and keep warm., In a small bowl, mix remaining 1/4 cup flour and 1/4 cup broth until smooth; stir into pressure cooker. Select saute setting and adjust for low heat. Simmer, stirring constantly, until thickened, 1-2 minutes. Serve with pork.

- In a large skillet, heat olive oil over medium heat. Brown pork chops on both sides., Meanwhile, in a small bowl, combine next seven ingredients; stir in apple cider. Pour over pork chops. Reduce heat to medium-low; cook, covered, until a thermometer inserted into chops reads 145°, 4-5 minutes. Remove chops from skillet; let stand for 5 minutes., In a small bowl, mix cornstarch and water until smooth; stir into cider mixture in skillet. Return to a boil, stirring constantly; cook and stir until thickened, 1-2 minutes. Pour over chops; sprinkle with fresh parsley.

Steps:
- Sprinkle chops with seasoned salt on both sides and let rest for 3 or 4 minutes.
- Heat the oil in the bottom of the pressure cooker over medium heat. Brown chops on both sides and then remove a plate.
- Place basket in pressure cooker. Press one or two dried apple slices on each chop and sprinkle each with a bit of the Aspen spice mix.
- Fit the chops into the basket, standing on edge, sandwiching the apple slice between the chops.
- Pour the cider over the chops and secure the pressure cooker lid onto the pot.
- Bring to high pressure (15 lbs) over medium heat, adjusting the heat to maintain the pressure (according to the cooker's manufacturer's instructions) and cook at that pressure for 17 minutes.
- Remove cooker from heat and let pressure drop naturally, which should take about 10 minutes.
- Remove chops carefully to serving platter and cover with foil to keep warm.
- Meanwhile, melt better in a 1-cup glass measure in the microwave (30 seconds on high) Stir in flour with a whisk and microwave 40 more seconds, whisking at the end of the time.
- Add a bit of the pot liquid to the roux in the glass measure and whisk smooth. Then add the roux to the pot and heat to boil, whisking until slightly thickened.
- Pour sauce over chops and serve.

Steps:
- Brown chops on both sides in a large skillet, remove and set aside.
- Melt butter in same large skillet.
- Thinly slice onion and cook in butter for 15 minutes or until caramelized.
- Add apple cider to onion and then nestle chops down in the onion and cider.
- Cook over medium heat for 10 minutes until chops are cooked through and cider reduces by a little more then half.

- Place apples in a multi-functional pressure cooker (such as Instant Pot®). Spread brown sugar, cinnamon sticks, nutmeg, and cloves on top. Fill the rest of the pot up with water, up to the maximum line.
- Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 60 minutes. Allow 10 to 15 minutes for pressure to build.
- Release pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes. Unlock and remove the lid. Remove cinnamon sticks. Mash apples with a potato masher or spoon. Return cinnamon sticks to the pot.
- Continue cooking on high pressure for another 60 minutes, allowing 10 to 15 minutes for pressure to build.
- Repeat quick-release, about 5 minutes. Strain out cider using a strainer or cheesecloth; discard solids. Serve hot or cold.

- Heat pressure cooker on saute until “hot.” Salt and pepper both sides of the pork chops very well. Add oil to pressure cooker. Add pork chops and cook until seared, about 3 to 5 minutes on each side. (If you attempt to move the pork chops and they stick, cook a little longer. The pork chops will release when the searing is complete.) Remove and keep warm.
- Add the chicken stock to the pressure cooker and whisk to remove the brown bits on the bottom of the pot. Add pork chops back to pressure cooker. Sprinkle with ½ teaspoon dried thyme. Add apples and onions. Sprinkle with brown sugar and remaining thyme. Dot with butter.
- Cover and set the valve to sealing. Cook on manual or pressure cook setting for 10 minutes. Carefully use quick release to depressurize the cooker. Serve pork chops covered with apples and onions.
