PRESSURE-COOKER JALAPENO POPPER CHICKEN CHILI

Pressure-Cooker Jalapeno Popper Chicken Chili image

Steps:

  • Select saute setting on a 6-qt. electric pressure cooker and adjust for medium heat; add butter. When butter is hot, add the chicken, onion, jalapenos and garlic; cook and stir until chicken is no longer pink and vegetables are tender, 6-8 minutes, breaking up chicken into crumbles. Stir in corn, beans, diced tomatoes and chiles, cream cheese, water, dressing mix and seasonings. Press cancel., Lock lid; close pressure-release valve. Adjust to pressure-cook on high for 8 minutes. Quick-release pressure. Stir before serving. Garnish with shredded cheddar cheese, sour cream, bacon and additional jalapenos., Freeze option: Before adding toppings, cool chili. Freeze chili in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally; add water if necessary. Sprinkle with toppings.

2 to 4 jalapeno peppers, seeded and finely chopped
4 garlic cloves, minced
1 can (15-1/4 ounces) whole kernel corn, undrained
1 can (15 ounces) black beans, rinsed and drained
1 can (10 ounces) diced tomatoes and green chiles, undrained
1 package (8 ounces) cream cheese, cubed
1/4 cup water or chicken broth
2 tablespoons ranch salad dressing mix
1 tablespoon chili powder
1 teaspoon onion powder
1 teaspoon ground cumin
1/4 teaspoon crushed red pepper flakes
Shredded cheddar cheese, sour cream and crumbled cooked bacon

Grandma's Pressure-Cooker Chicken Noodle Soup image

Steps:

  • Select saute setting on a 3- or 6-qt. electric pressure cooker and adjust for medium heat; add oil. Brown the chicken thighs. Press cancel. Add carrots, celery and broth to pressure cooker. Lock lid; close pressure-release valve. Adjust to pressure-cook on high for 10 minutes. Allow pressure to release naturally for 10 minutes, then quick-release any remaining pressure., Stir in salt and pepper. Evenly divide noodles among 4 serving bowls; top each bowl with 1 chicken thigh and top with broth. If desired, sprinkle with parsley.

Jalapeno Popper Soup image

Steps:

  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels.
  • While bacon is cooking, melt butter in a pot over medium-high heat. Add jalapeno peppers and garlic; cook until soft, 3 to 4 minutes. Add chicken broth, dried cilantro, Cajun seasoning, and onion powder; stir up any browned bits from the bottom of the pot. Bring to a boil. Reduce heat and add chicken. Simmer for 10 to 15 minutes.
  • Add cream cheese, most of the Cheddar cheese, and heavy cream; simmer, stirring occasionally, until cheese has dissolved, about 5 minutes. Season with salt and pepper.
  • Serve soup with remaining cheese. Crumble bacon on top.

  • Add the butter to the Instant Pot and hit Sauté and Adjust so it’s on the More or High setting. Once melted, add in the bacon and sauté for about 10 minutes until it’s somewhere in between chewy and crispy. Remove the bacon with the slotted spoon and let rest in a paper towel-lined bowl. Leave the bacon grease in the pot. (NOTE: You’ll notice the bottom of the liner pot will be very brown and caked on with firm bacon grease. Have no fear! That will all come up shortly.)
  • Add in the onion and long-sliced jalapeños. Sauté for 5 minutes. While this is happening, frequently scrape the bottom of the pot as the moisture released from the veggies help get most of the browning off. You’ll really notice it coming up around the 2-3 minute mark.
  • Add the garlic and sauté for 2 minutes longer. Then, add the chicken and sauté for 3 minutes until pinkish-white in color (it shouldn’t be fully cooked and still appear partially raw).
  • Pour in the broth. Secure the lid, move the valve to the sealing position, hit Keep Warm/Cancel and then and hit Manual or Pressure Cook at High Pressure for 6 minutes. Quick release when done.
