CURRY CHICKEN CHILI WITH SRIRACHA
This spicy chili is a great change from your everyday chili. Ground chicken and smashed chickpeas are loaded with jalapeno, spices and a hefty kick of sriracha. The cool cream yogurt and zesty lime are the perfect complement to its hearty heat.

Steps:
- Gather your ingredients.
- Peel and grate or mince ginger. Peel and chop or grate the garlic. Halve and seed jalapeno peppers then chop. Peel and chop the onion.
- Heat a Dutch oven over medium-high heat with oil, 2 turns of the pan. Add chicken and brown and crumble. Season with salt and pepper. Add ginger, garlic, peppers, onions and sweat a few minutes. Add chili powder, cumin, coriander and garam masala and stir a minute more. Add stock, tomatoes, tomato sauce and sriracha. Reduce heat a bit to simmer and thicken.
- Add chickpeas to a food processor and coarsely chop, 5 to 7 pulses. Add chickpeas to chili.
- If serving naan, preheat griddle to medium-high, sprinkle with water and cook bread until blistered. Brush with melted butter if desired.
- Adjust seasonings for the chili and stir in mango chutney if using. Serve with yogurt or sour cream, scallions or chives, pickled jalapeno peppers and any optional toppings.
CRISP-SKIN HIGH-ROAST BUTTERFLIED CHICKEN WITH POTATOES

- Dissolve salt and sugar in 2 quarts cold water in large container. Immerse chicken and refrigerate until fully seasoned, about 1 hour. Meanwhile, adjust oven rack to lower-middle position and heat oven to 500°.
- Line bottom of broiler pan with foil and spray with nonstick vegetable cooking spray. Remove chicken from brine and rinse thoroughly under cold running water. Following illustrations 1 through 6, butterfly chicken, flatten breastbone, apply flavored butter (if using), and position chicken on broiler pan rack; thoroughly pat dry with paper towels.
- Toss potatoes with 1 tablespoon oil, salt and pepper to taste in medium bowl. Spread potatoes in even layer in foil-lined broiler pan bottom. Place broiler pan rack with chicken on top. Rub chicken with remaining 1 1/2 teaspoons oil and sprinkle with pepper.
- Roast chicken until spotty brown, about 20 minutes. Rotate pan and continue to roast until skin has crisped and turned a deep brown and an instant-read internal thermometer registers 160° in thickest part of breast, 20 to 25 minutes longer. Transfer chicken to cutting board. With potholders, remove broiler pan rack; soak up excess grease from potatoes with several sheets paper towels. Remove foil liner with potatoes from broiler pan bottom and invert foil and potatoes onto cookie sheet or second cutting board. Carefully peel back foil, using a metal spatula to help scrape potatoes off foil as needed. With additional paper towels, pat off remaining grease.
RACHAEL RAY'S TWO CHILE-LIME CHICKEN (WHOLE BUTTERFLIED CHICKEN)
Rachael says: "Grilling the entire bird is the ultimate flavor bomb-cooking meat on the bone keeps things juicy while the skin crisps up, and turns out an outer layer brimming with flavor. Plus, a whole grilled chicken makes for a stunning presentation. The chicken will need to be butterflied (see instructions below) so that it lies flat and grills evenly over direct heat. Bonus: This cuts down the cooking time by half. And small, hibachi-size grills need not apply, as you'll need extra grate space to move the chicken around when inevitable flare-ups occur" I say... - Butterfly Chicken: place the chicken, breast side down, on a work surface. Find the backbone-it runs from neck to tail. Using kitchen shears, cut along one side of the backbone; repeat along the other side to remove it. Flip over the chicken, so it's breast side up. With the palm of your hand, press down to crack the breastbone, so the chicken lies flat.
- Preparation/Grilling: 1.Using the flat side of a chef's knife, mash the garlic and 1 1/2 teaspoons salt into a paste. Transfer to a bowl, then stir in the ancho chile powder, chipotle chile and adobo sauce, paprika and lime juice.
- Using your fingers, loosen the chicken skin all over, being careful not to tear the skin and avoiding the area closest to the removed backbone. Rub the paste all over the chicken, smearing it first under the skin, then on the underside of the chicken, then over the skin. Transfer to a gallon-size resealable plastic bag and refrigerate for at least 4 hours or overnight.
- Preheat a grill to medium. Position the chicken, skin side down, on an oiled cooking grate, using tongs and a spatula to lay the chicken flat and stretch it out to its full size. Grill, turning every 10 minutes, until an instant-read thermometer registers 170° or juices run clear when pierced with a knife and the skin is crisp, 35 to 40 minutes. (If any flare-ups occur, move the chicken to a different spot on the grill and cover briefly.) Let rest for 10 minutes before carving.

RACHAEL RAY'S GARLIC ROASTED CHICKEN WITH ROSEMARY AND LEMON
This is a quick and easy chicken receipe that can go as a main course with just about anything. I made a roux in a saucepan with butter and flour and garlic and added the pan drippings to it with the wine instead of leaving it in the oven it would take longer to thicken if let in oven.

- Arrange chicken in 9x13 baking dish. Add garlic, rosemary, evoo, lemon zest and grill seasoning and salt & pepper if you wish.
- Toss & coat chicken with all ingredients. Then place in oven. Roast 20 minutes.
- Add wine and lemon juice to the dish and combine with pan juices. Return to oven and turn oven off.
- Let stand 5 minutes longer and removen chicken from the oven.

RACHAEL RAY'S TUSCAN CHICKEN
This is a favourite from 30 Minute Meals although I alter it a bit. For example, it works out quite well with all bone-in dark meat. Some sherry or cider vinegar can be substitued for some of the wine and wine vinegar. I have been liberal with cooking time since leaving the bone in increases the cooking time. Preparation is VERY easy, though -- despite the number of steps which are truly easy.

- Heat a large, heavy, deep skillet over medium high heat.
- Season chicken with salt and pepper.
- Add 2 tablespoons extra-virgin olive oil, half the chicken pieces and a couple of crushed cloves of garlic.
- Brown chicken 2 minutes on each side and remove from pan.
- Add remaining oil and swirl around pan. Add remaining chicken pieces and garlic. Brown chicken 2 minutes on each side and remove.
- Add vinegar to the pan and let it sizzle till most evaporates.
- Add butter, shallots, and rosemary to the pan and cook 2 minutes.
- Add flour and cook 1 minute.
- Whisk in wine and allow to reduce and thicken for 1 minute.
- Whisk in broth and bring liquids up to a low boil.
- Return chicken to the pan and simmer over moderate heat 7 to 8 minutes for boneless (or nearly double that for bone-in) to cook chicken thoroughly.

RACHAEL RAY'S CHICKEN PROVENCAL " STOUP"
From the Food Network, Rachael says "a stoup is thicker than a soup and thinner than a stew". I must make all my soups as stoups, since it isn't any thicker than other soups I have made. That aside, this is a very tasty soup -- one that I will make often. I cut up all my veggies ahead of time and made the recipe as posted except I didn't use the black olive tapenade because my store doesn't carry it and I stirred the parsley into the stoup while it was simmering. I also let it simmer on the stove for 20-30 minutes because I wasn't ready to serve dinner yet and it was fine. It is excellent and definitely a keeper!

- Preheat medium soup pot over medium-high heat.
- While soup pot heats, chop carrots into 1/4-inch dice.
- Put carrots and garlic into pan and stir to coat with olive oil.
- Chop and drop in the zucchini, pepper, and onion.
- Season all the veggies with salt and pepper and herbes de Provence.
- Cook the vegetables together 5 minutes.
- While they cook, cut the potatoes into thin wedges.
- Add wine to vegetables and reduce for a minute or so.
- Add the tomatoes, potatoes, and stock to the pot, cover the pot and raise heat to high.
- Bring the stoup to a boil, then add the chicken and lower heat and simmer 8 to 10 minutes until potatoes are tender and chicken is cooked through.
- Serve stoup in bowls and stir in a rounded spoonful of black olive tapenade at the table.
- Top soup with chopped parsley and serve with a crusty bread.

- Position the oven rack 8 inches from the flame/coil and turn broiler to high.
- Crack peppercorns with a mortar and pestle until coarsely ground.
- Add garlic and salt and work well.
- Add lemon zest and just enough oil to form a paste.
- Cut vegetables into pieces and place in a deep roasting pan.
- Place chicken on a plastic cutting board breast-side down.
- Using kitchen shears, cut ribs down one side of back bone and then the other and remove.
- Open chicken like a book and remove the keel bone separating the breast halves by slicing through the thin membrane covering it, then by placing two fingers underneath the bone and levering it out.
- Turn chicken breast-side up and spread out like a butterfly by pressing down on the breast and pulling the legs towards you.
- Loosen the skin at the neck and the edges of the thighs.
- Evenly distribute the garlic mixture under the skin, saving 2 teaspoons for the jus.
- Drizzle the skin with oil and rub in, being sure to cover the bird evenly.
- Drizzle oil on bone side of chicken as well.
- Arrange bird in roasting pan, breast up, atop vegetables.
- Place pan in oven being sure to leave the oven door ajar.
- Check bird in 10 minutes.
- If the skin is a dark mahogany, hold the drumstick ends with paper towels and flip bone-side up.
- Cook 12-15 minutes or until the internal temperature reaches 165 degrees.
- Juices must run clear.
- Remove and place chicken into a deep bowl and cover loosely with foil.
- Tilt pan so that any fat will pool at corner.
- Siphon this off with a bulb baster.
- (This fat is great in vinaigrettes).
- Set pan over 2 burners set on high.
- Deglaze pan with a few shots of red wine and scrape brown bits from bottom using a carrot chunk held with tongs.
- Add chicken stock, thyme, the remaining garlic paste and reduce briefly to make a jus.
- Strain out vegetables and discard.
- Slice chicken onto plates or serve in quarters.
- Sauce lightly with jus and serve.
