Steps:

  • In a small bowl, beat cream cheese and jam until smooth. Fold in 1/4 cup whipped topping., Place 2 tablespoons raspberries in each of two small parfait glasses or dessert dishes; layer with cream cheese mixture and remaining berries. Top with remaining whipped topping. Refrigerate until serving.

Raspberry Vanilla Pudding Parfaits image

Steps:

  • In a large bowl, whisk milk and pudding mix for 2 minutes. Let stand for 2 minutes or until soft-set. Fold in 1 cup whipped topping. Spoon a third of the pudding into six parfait glasses. , Set aside six raspberries for garnish; divide half of the remaining berries over pudding. Repeat layers. Top with remaining pudding and garnish with the reserved berries.

Perfect for a hot day, and so yummy. Great way to get rid of canned or frozen fruit! You can mix and match the flavors of yogurt and types of fruit, too: cherries and chocolate is my favorite. You can buy popsicle molds at kitchen supply stores.

Blueberry and Vanilla Parfait Pops image

Steps:

  • Pour 1/3 cup of blueberries into each mold. Cover the molds with tinfoil, insert the popsicle sticks so that the tips are inside the blueberry mixture, and freeze overnight.
  • Take the molds out and remove the tinfoil (not the sticks!) Spoon in 1/3 cup of vanilla frozen yogurt into each mold, making sure not to pull out any sticks while doing so. The softer the yogurt is, the easier this will be. Put in the freezer for two hours or so to allow the yogurt to settle and refreeze slightly.
  • Take the popsicles out and enjoy!

Steps:

  • In blender, puree the 1 1/2 cups raspberries the sugar and 1/2 cup yogurt until smooth and thick. Divide about half of the raspberry mixture equally among ice pop molds. Divide the remaining 1 cup yogurt among the molds. Slide in halved raspberries if using. Follow with remaining raspberry mixture and insert sticks. Freeze until firm, at least 6 hours or up to 1 week. To unmold pops, run hot water over outsides of the molds for a few seconds, then gently pull the sticks out. Makes 8 pops
