SPINACH WITH CHICKPEAS AND FRESH DILL
This is a Sephardic Passover recipe that is great as a side dish. It is flavorful and very refreshing.

Steps:
- In a large skillet, heat olive oil over medium heat. Add onion, and saute until soft. Add chickpeas, and toss to coat in oil.
- Clean spinach well and cut away thick stems; add undrained spinach and dill to skillet, and cook until spinach is tender.
- Stir in lemon juice, and season with salt and pepper to taste. Serve warm.

REFRESHING SPINACH & CHICKPEA VEGGIE SALAD
This salad is very refreshing and versatile. It is perfect for those warm summer days. It is very light, but it may be moistened with some extra virgin olive oil or topped with cheese (feta would go nicely). I served it with toasted italian bread in a bruschetta like-way. Enjoy!

Steps:
- Cook the spinach according to the directions on the package. Chop the cooked spinach if not packaged as chopped. Drain well.
- Mix the spinach, chickpeas, red bell-pepper, squash, cucumber, & chives in a bowl.
- Add the juice of 1/2 lemon (you may add more lemon juice or olive oil if desired).
- Season with salt & pepper to taste.
- Serve chilled or room temperature with toasted white bread splashed with olive oil and rubbed w/ garlic.
- Makes about 12 half cup servings.

- Cook the chickpeas in boiling water for 5 minutes on medium high heat. Rinse with cold water to cool. Drain and set aside.
- Lightly chop the spinach, dice the onion, minced the garlic and slice the tomatoes. If you don't have pre shredded carrots, you can shred one large carrot.
- Add in all the ingredients except for the spinach into a large bowl and pour over the dressing. Mix to coat the ingredients and then add in the spinach. Toss lightly with the spinach to coat well.
