Steps:

  • 1. Wash roast and pat dry with paper towel. Place in flat pan and let stand to room temperature.
  • 2. Use a mortar and pestle to coarsely crush alspice seeds. Set aside. (diy mortar and pestle: coffee cup and thin glass bottle such as a hot sauce bottle.)
  • 3. USE DISPOSABLE PLASTIC GLOVES WHEN HANDLING PEPPER! Cut pepper in half. Cut out fibers and seeds inside. Cut pepper into thin strips, stack and cut into tiny pieces. Set aside. CAUTION: THE OIL THAT COMES FROM THE PEPPER DURING DICING IS VERY HOT. WASH KNIFE AND CUTTING SURFACE IMMEDIATELY AND TOSS GLOVES IN GARBAGE.
  • 4. Combine crushed alspice pods, scotch bonnet, onions, garlic and mushroom soy in small bowl. You will use this to season the roast.
  • 5. Make small 1 1/2 - inch (wide and deep) slits in the roast. Fill the slits with the herb seasoning mixture. Reserve extra seasoning mixture.
  • 6. Heat 2 T. oil in a heavy Dutch oven over medium-high heat. Place roast in oil and brown in pot, all over, several minutes on each side. Tip: Don't move the roast while a side is browning, or it won't brown well.
  • 7. When roast is browned, pour the remainder of the sauce over the roast plus 1 1/2 cup water and bring to a simmer. Cover.
  • 8. Place in 300 degrees F oven for 15 minutes, then drop to 225 degrees F. Cook for 3 to 3 1/2 hours, or longer, until meat is tender.

3 1/2 lb beef shoulder or boneless chuck roast (well-marbled is best!)
12 pimento seeds (also known as alspice)
1/2 scotch bonnet (or less), seeded and diced
3-4 sprig(s) fresh thyme, cut in small pieces, including stalks
1 small yellow onion, chopped
1 stalk(s) green onion, cut in thin slices
2 Tbsp fresh garlic, diced
1/4 c mushroom soy (found in asian cooking section)
1 1/2 c water

Roast Top Round Beef Roast with Yorkshire Pudding image

Steps:

  • Preheat the oven to 400 degrees F.
  • To make the Yorkshire Pudding batter, in a bowl, combine the flour and salt. In another bowl, beat the eggs. Add the milk and gradually add to the flour, mixing to make a thin, smooth batter, being careful not to over mix. Let rest for at least 1 hour at room temperature, or for several hours in the refrigerator (bringing to room temperature before cooking).
  • Put the roast in a small roasting pan, bone side down. With a small sharp knife, make sixteen 1/2-inch-deep slits in the meaty side of the roast. Insert 1 garlic clove into each slit, pressing into the meat. Pinch with your thumb and index finger to close the openings. Combine the chopped thyme, salt, Essence, and pepper in a small bowl. Slowly stir in the oil to make a paste. Rub the paste on both sides of the roast, and place the thyme sprigs under the roast. Roast for 1 hour. Remove the pan from the oven and turn the roast for even browning. Reduce the oven temperature to 350 degrees F and continue roasting until an instant-read thermometer inserted in the thickest part of the roast reads 125 to 130 degrees F for medium-rare, about 45 minutes, or 140 degrees F for medium, about 1 hour. Remove from the oven and let the roast stand for 15 minutes before carving.
  • While the roast is resting, make the Yorkshire Pudding in the same roasting pan.
  • Increase the oven temperature to 450 degrees F. Pour off all but 3 tablespoons of the hot pan drippings, adding hot melted butter as necessary to make the correct measure. Place the pan in the oven to stay hot while the oven comes to temperature.
  • Pour the prepared batter into the dish and bake, without opening the oven door, until risen and golden brown, 15 to 20 minutes. Remove from the oven and serve immediately with the carved rib roast.
  • Combine all ingredients thoroughly and store in an airtight jar or container.

JAMAICAN ROAST BEEF

A few years ago,I hosted a Jamaican themed party for my niece's birthday. This is one of the dishes I made.It was a big hit. I had a roast beef similar to this when I was in Jamaica ,the cook shared this recipe with me,this comes pretty close to what I had there.

Steps:

  • 1. Mix the above ingredients together and poke deep holes in the rib roast, 24 hours prior to cooking time. Stuff with mixture and use the remainder to coat the rib roast. Wrap and refrigerate overnight, taking out and leaving to room temperature one half hour before cooking. Roast on a basting pan, covered in foil loosely for an hour a half, taking the top off and basting once or twice before leaving the foil off one half hour before to let the meat brown nicely at the top. Basting helps the natural juices form the au jus which will make itself. You will find that the thinner you slice the roast the more flavor you will get

1 bone in rib roast *6-7 pounds
1 white onion,chopped
fresh thyme,finely chopped
black pepper
seasoning salt ( i like lawry's)
garlic cloves,slivered
soy sauce
