ROASTED GARLIC DIP

Steps:
- Cut the top third off each head of garlic so the cloves are exposed and wrap in foil. Roast the garlic until the cloves are very soft and golden, about 45 minutes. Cool slightly and then pop the cloves from the skins and finely chop.
- Meanwhile, heat the oil in medium skillet over medium heat. Add the pancetta and cook, stirring occasionally, until crisp, about 8 minutes. Using a slotted spoon, transfer the pancetta to paper towels to drain.
- Mix together the sour cream and cream cheese in a large bowl until smooth. Add the pancetta, chopped garlic, dill, 1 teaspoon salt and 1/2 teaspoon pepper and stir to combine. Serve with crackers.

- Very finely chop almonds in processor. Add roasted peppers, vinegar, and garlic; process to coarse puree. With machine running, pour olive oil through feed tube and process until puree thickens slightly. Season dip to taste with salt and pepper. Transfer to small bowl. (Dip can be made 1 day ahead. Cover and refrigerate. Bring to room temperature before serving.)

This versatile dip adds zesty flavor to any food it's served with. Top with additional sliced almonds and diced roasted red peppers, if desired. Serve with pita wedges, crackers, or crudites.

- Combine toasted almonds and mayonnaise in a food processor; process until finely chopped. Add roasted red peppers, Parmesan cheese, balsamic vinegar, garlic, salt, and pepper; process until desired consistency is reached, scraping down the sides as needed.

ROASTED GARLIC DIP

Steps:
- Preheat an oven to 300 degrees F (150 degrees C).
- Cut off the top of the head of garlic to expose the cloves, trimming about 1/4 inch off of the top of each clove. You may need to trim individual cloves along the sides of the head. Brush the cut cloves with a small amount of olive oil, then nestle the head into a piece of aluminum foil.
- Bake in the preheated oven until the cloves are tender and nicely browned, about 1 hour. Remove, and allow to cool to room temperature.
- Once cool, squeeze the garlic cloves out of their skins and into a mixing bowl. Mash well with a wire whisk, then add the sour cream, mayonnaise, green onions, vinegar, salt, and pepper. Whisk until evenly blended, then refrigerate 2 to 4 hours to allow the flavors to blend.

Steps:
- Position rack in lowest third of oven and preheat to 300°F.
- Place garlic in small baking dish and toss with oil.
- Bake until garlic is soft and golden- approx 30 minutes.
- Transfer to blender and let cool- approx 30 minutes.
- Add Worcestershire sauce and mustard to garlic.
- Blend until garlic is finely chopped.
- Scrape mixture into large bowl.
- Stir in almonds, sour cream, mayonnaise, and herbs, salt and pepper.
- Cover and refrigerate at least 2 hours or best overnight to mellow flavors.
- Let stand at room temperature for at least 1 hour prior to serving.

- Preheat oven to 400 degrees F. Slice 1/4-inch off top of head of garlic. Place garlic cut side up on foil and drizzle with oil. Wrap garlic in foil to seal. Place on baking sheet and bake until garlic cloves are dark brown and very soft, about 50 minutes. When cool enough to handle, squeeze out garlic cloves into medium bowl and mash with fork. (This step can be done up to 3 days in advance).
