ROAST "WILD BOAR"

Steps:
- Heat oven to 350 degrees F.
- Cut pork into 3 to 4-inch thick slices and lay the slices on heavy duty aluminum foil supported by baking sheets. Rub salt and pepper into the meat. In a small bowl whisk together hot sauce, vinegar and vegetable oil, and brush onto surface of meat on both sides. Use plastic or latex gloves to handle habaneros and protect your eyes and nose from the "fumes." Slice the peppers and lay them and the bay leaves on top of the pork. Wrap the pork in foil, sealing all the seams. Roast slowly in oven until fork tender, about 2 hours, or over an open fire.
PAN-ROASTED PORK TENDERLOIN WILD BOAR-STYLE WITH SHIITAKE MUSHROOMS

- In a deep rectangular or oval dish that can contain the meat and all the other ingredients except for the mushrooms, combine the pork tenderloin, 3 tablespoons of olive oil, onion, garlic, bay leaves, celery, rosemary, and red wine. Turn the meat over several times to coat it well, then cover the dish with plastic wrap and refrigerate overnight. Take it out occasionally whenever convenient to turn the pork over, basting it with its marinade.
- The following day, take the meat out of the refrigerator at least 1 hour before proceeding with the preparation of the dish. Turn it over and baste it when you take it out of the refrigerator, and once every half hour thereafter.
- Detach the mushroom caps from the stems, discarding the stems. Wash the caps quickly in running cold water without letting them soak. Pat them dry gently but thoroughly with a cloth towel, and cut them into thin slices.
- Lift the tenderloin out of the deep dish, pick out any bits of the vegetables from the marinade that may be sticking to it, and pat the meat dry with kitchen towels.
- In a skillet that can accommodate the two pieces of pork without overlapping, put in the remaining tablespoon of olive oil, and turn the heat to high. When the oil is hot enough to sizzle when you put in the meat, slip in both pieces. Turn the meat over to brown it evenly all around, then transfer it to a platter.
- Pour all the marinade from the deep dish into the skillet, turn the heat down to low, and cover the pan. Cook, stirring occasionally, until all the vegetables are very soft or almost dissolved.
- While the marinade is cooking, put 1 tablespoon of butter in a medium skillet, turn the heat to medium, and add the sliced shiitake caps with some salt. Cook, turning the mushrooms over occasionally, until the liquid they shed evaporates completely and they have become very tender.
- When the vegetables of the marinade are very soft, add the cooked shiitake mushrooms, cooking them together for about a minute or two. Add both pieces of pork, sprinkling them with salt and several grindings of black pepper, and raise the heat to high. Cook the meat for 10 minutes on each side.
- Transfer the meat onto a cutting board, cut into slices 1/3-inch thick, and place slices on a very warm serving platter. Remove the bay leaves from the marinade -- and the garlic cloves, if you can find them -- then cover the meat with the cooked marinade and mushrooms and serve at once.
- Ahead-of-time note: When the overnight marinating of the meat is complete, it would be desirable to proceed at once through all the succeeding steps, but if you wish you can stop a few hours in advance right after the shiitake mushrooms and cooked-down marinade have been combined. Cook the meat, however, only when ready to serve, because it may dry out and become stringy if reheated.
ROASTED LOIN OF WILD BOAR WITH APPLE CHARLOTTE
Boar is a greatly ignored meat in the chef's repertoire. While admittedly difficult to find, it can be special ordered, and it is a sublime gastronomic treat. This homespun preparation by Joe Mannke, chef a Rotisserie for Beef and Bird in Houston, marries the boar with a tasty apple charlotte that is the perfect companion.

- Preheat oven to 450F.
- Rub boar on all sides with salt, pepper, and thyme. Place boar in a roasting pan and add water to pan. Roast in preheated oven for 40 minutes. Remove roasting pan from oven.
- Prepare charlotte by adding apples, zest, ginger, cinnamon, cloves, brown sugar, wine, and Calvados around the roast.
- Return pan to oven and bake for 15 to 20 minutes, or until apples are cooked through.
- Mix together applesauce, salt, and egg yolks and pour over apples.
- Return to oven for 5 minutes longer.
- Mix the butter with the bread cubes.
- Sprinkle over the apple mixture and bake for 10 minutes longer, or until golden brown, or when meat thermometer registers 160F.
- Remove roasting pan from oven, remove boar, and let rest for a few minutes.
- Slice boar on the bias.
- Using a spatula, transfer charlotte to a large serving platter. Place sliced boar atop charlotte. Garnish with thyme sprigs and serve.
- Recommended wines: A full bodied Chardonnay will mar ry nicely with the apple flavor in the charlotte. A Zinfandel will emphasize the meaty flavors of the boar. Either wine is a treat with this dish.

- place chops in roomy, non-metal container so each chop lays flat.
- whisk all ingredients (sans chops) for marinade.
- pour marinade over chops.
- cover and refrigerate at least (4) hours, turning every hour or so.
- prepare grill/fire for direct heat on hi.
- sear chops on both side for 2 minutes.
- turn heat down or place chops on cooler part of grill for remaining cooking.

This recipe dates back to 15th-century England, and legend has it that it was named after Queen Charlotte, wife of King George III.

Steps:
- Pre-heat oven to 375°F.
- Put the apples, cinnamon, lemon zest and juice and sugar in a saucepan.
- Cover and simmer gently until pulpy, stirring occasionally.
- Beat thoroughly with a wooden spoon, then cook, uncovered, over a high heat, stirring continuously, until any excess liquid has evaporated and the purée is very thick.
- Brush the butter all over the slices of bread.
- Line the base and sides of a greased 6 inch deep cake tin (such as a Christmas cake tin or substitute a coffee can or vegetables tin, as long as it does not have ridges) with the slices of bread, making sure that they overlap.
- Spoon in the apple purée and cover with more over-lapping slices of bread.
- Bake for about 30 minutes, until the top is golden brown.
- Serve at once, turned out and accompanied with real custard or fresh cream or clotted cream to pour over it.

- Cook and stir bread crumbs in butter over medium heat until toasted and golden brown.
- Mix sugar and lemon peel and cinnamon, set aside.
- Place 1 cup bread mixture in greased souffle dish or casserole pan.
- Top with half the apples and sugar mixture.
- Spoon half the jam on top. Repeat, ending with 1 cup of bread crumbs.
- Bake at 350 oven until apples are tender, about 35 - 40 minutes.
- Beat whipping cream and 2 tablespoons sugar an dvanilla in chilled bowl until stiff. Fold in Rum or Brandy, serve with the Apple Charlotte.

ELEGANT WILD BOAR BURGERS FOR TWO
I created this recipe after buying a small amount of wild ground boar to try. I didn't find that the boar was gamey, but maybe just tasted more earthy than, say, beef. If you can find boar, why not give it a try? The cambozola adds richness while complementing the earthy tones of the sage and thyme. The shallot adds a bit of sweetness. A really different burger!

- In a non-stick or well-seasoned cast iron pan, heat the vegetable oil over medium-low heat.
- Saute the chopped shallot for 2 minutes or until softened but not brown.
- Set aside.
- In a bowl, place the ground boar.
- Sprinkle the thyme and sage over top.
- Add the worcestershire sauce and pepper.
- Add the shallot and oil and mix with hands until well combined.
- (If you are making the burgers ahead of time, let the shallot cool completely before adding it to the burger mixture).
- Form into two patties about 1/3" thick.
- Broil or grill until well done, about 5-6 minutes per side.
- Divide cheese and place on burgers about 1 minute before they are done.
- Let burgers sit about five minutes before serving.
- Nice served with a spinach and mushroom salad with a white wine vinagrette.
- (A note about cambozola: It is a blue-veined brie and has a very mild blue flavour. You could probably substitute a mild blue cheese which will emphasize the sage, or a brie which will add richness. Experiment!).
ROAST WILD BOAR WITH APPLES
Steps:
- Preheat the oven to 450 Mix olive oil, fresh cracked pepper and 3 teaspoons rosemary in a small bowl to be brushed onto the wild boar roast. Add white wine and a splash of Calvados into a sauce pan Slice 4 unpeeled apples and add to the sauce pan, along with some fresh cracked pepper and rosemary. Simmer. Make 4 deep stabs into the roast, 2 per side. Gentle splash of Calvados over the roast, and allow to sit for a minute or two. Brush the roast with maple syrup, and then with the olive oil. Ensure the entire roast is covered. Remove apples from sauce pan and pour into roasting pan. Add the wild boar roast to the pan along with 2 rough chopped apples (peel on). Roast at 450 for 10 minutes, then reduce heat to 325 and cook for 2 hours (25 minutes/lb)
WILD BOAR STEW
Or you can just substitute domestic pork. I do quite often. Although I have now decided that if you do go with domestic pork, organically raised pork seems to substitute the best.

- In a skillet fry bacon until crisp.
- Remove bacon, cool, crumble and set aside.
- Pour off all but about 3 Tbsp of bacon grease.
- Cook boar meat cubes, onion, garlic, and curry powder in remaining grease until meat is browned Stir during cooking.
- Stir in 1/4 cup of water.
- remove from heat and set aside.
- In a 2 qt casserole combine, parsley, stewed tomatoes, carrots and potatoes.
- Add meat mixture to casserole and mix well.
- Bake at 350 degrees for 30 minutes.
- Mix 2 Tbsp cornstarch with 1/4 cup water and stir into casserole.
- Bake for 30 more minutes or until meat and vegetables are tender.

ROASTED LEG OF WILD BOAR
Steps:
- 1. Rub the leg of wild boar all over with the salt and the pepper. Place it in a shallow dish, cover it loosely, and refrigerate it for 36 hours.
- 2. Bring the wine, the herbs and spices, and the vegetables to a boil in a medium-sized saucepan over medium high heat and cook for about 3 minutes. Remove from the heat and let cool to room temperature. Strain, reserving the bay leaf, thyme, peppercorns and cloves, and discarding the vegetables.
- Whisk in the vinegar.
- 3. Quickly rinse the salt and pepper from the boar to remove most but not all of it. Pat meat dry and place it in a shallow dish. Pour the cooled marinade over it, return it to the refrigerator, loosely covered, and let it marinate for 36 hours, turning it at least four times.
- 4. Preheat the oven to 450°F.
- 5. Remove the leg of wild boar from the marinade and pat it dry. Make 20 tiny slits in it all over, and insert a clove into each slit. Transfer the boar to a baking dish, and pour one-fourth of the marinade over it. Roast in the center of the oven until the boar is very golden on the outside, and when you cut into it it is a very faint pink, but not in the least red, which will take about 2 hours. Check it occasionally to be sure the marinade hasn't completely evaporated, and pour the additional marinade over the roast, one-fourth at a time.
- 6. When the boar is roasted remove it from the oven, and set it on a platter in warm spot, loosely covered, to sit for at least 20 minutes so the juices have a chance to retreat back into the meat. To prepare the sauce, transfer the cooking juice and any browned bits from the bottom of the baking dish to a medium sized saucepan. Whisk in the chicken or veal stock and bring to a boil over medium-high heat. Reduce by about one-fourth, then stir in the red current jelly. Continue cooking and whisking until the sauce is smooth and satiny, 8 to 10 minutes. Remove from the heat.
- 7. Before slicing the boar remove as many of the cloves as possible. Thinly slice the wild boar and arrange it on a platter. Garnish with flat-leaf parsley leaves. Either pour the sauce over the meat, or serve it on the side.
