ROCKY ROAD BARS
These yummy chocolate bars are called rocky road because the chocolate chips, nuts and marshmallows make them lumpy and bumpy, just like a "rocky" road.

Steps:
- Heat oven to 350°. Grease bottom only of rectangular pan, 13x9x2 inches. Heat 1/2 cup of the chocolate chips and the butter in heavy 1-quart saucepan over low heat, stirring occasionally, until melted.
- Mix baking mix, sugar, vanilla, eggs and chocolate mixture; spread in pan. Bake 15 minutes.
- Sprinkle with marshmallows, nuts and remaining 1/2 cup chocolate chips. Bake 10 to 15 minutes or until marshmallows are light brown. Cool completely. Cut into about 2-inch squares.

ENCHILADA CRESCENT RING
Forget the tortillas--this flaky, golden ring of crescent dough is packed with a cheesy chicken enchilada filling. Easily portable, this crowd-pleaser is perfect for parties.

- Preheat the oven to 375 degrees F. Stir together the chicken, enchilada sauce, pickled jalapenos, chili powder, cumin, garlic, scallion whites and 1/2 teaspoon salt in a medium bowl. Set aside.
- Coat the back of a baking sheet with cooking spray. Unroll both cans of crescent dough and separate unto 16 triangles. Put a 5-inch ramekin in the center of the prepared baking sheet. Arrange the triangles in a ring around the ramekin so the short sides of the dough are touching the ramekin, overlapping slightly, and the pointed ends are facing outward (it should look like a giant sun).
- Spoon the chicken mixture over the short ends of the triangles closest to the ramekin. Sprinkle Mexican blend cheese on top of the chicken. Then top with the pepper Jack slices. Remove the ramekin. Take hold of the pointed end of one of the triangles and fold it up and over the filling, tucking the tip under the bottom edge of dough to secure (the dough will not cover the filling completely). Repeat with the remaining triangles (there will be some gaps where you can see the chicken mixture).
- Bake until the dough is golden brown and the cheese is melted, about 25 minutes. Brush the dough with butter and sprinkle on the scallion greens. Let cool for 15 minutes. Use a spatula to slide the ring off the baking sheet onto a platter. Serve with salsa drizzled with thinned sour cream.
ROCKY ROAD CRESCENT RING
A pool of toasted marshmallow makes the ultimate dip for these nutty, chocolate-stuffed pull-apart rolls.

- Preheat the oven to 375 degrees F. Cut a 10-inch circle of parchment and put it on a turned-over baking sheet.
- Unroll the crescent roll dough on a work surface and separate the triangles. Spoon about 1 teaspoon each chocolate cookies, chocolate chips, almonds and marshmallows onto the short end of each crescent triangle. Fold in the sides over the filling, then roll up from the short end to the opposite point, making sure the filling stays inside. Tightly pinch the edges together to seal completely.
- Place a 4-inch ramekin in the middle of the prepared baking sheet and arrange the crescent rolls in circle around the ramekin; the rolls should be touching end to end. Remove the ramekin.
- Bake until the rolls are just beginning to brown, about 8 minutes. Remove from the oven and put the remaining marshmallows in the center ring. Return to the oven and bake until the rolls are golden brown and the marshmallows are melted, puffed and golden brown on top, about 8 minutes more. Use the parchment liner to slide the ring onto a serving plate. Drizzle with the hot fudge sauce and sprinkle with additional almonds. Serve immediately.

- Heat the oven to 350°F; coat a 13-by-9-inch baking dish with butter; set aside.
- Combine 3/4 cup of the chocolate chips and all the butter in a small saucepan.
- Cook over low heat, stirring constantly, until melted, about 8 minutes. Remove from heat and let cool slightly.
- Whisk sugar, eggs, vanilla, and salt in a large bowl until eggs are broken up and smooth.
- Add chocolate mixture and stir to combine; add flour and baking powder and stir until just incorporated.
- Add 3/4 cup of the marshmallows and 3/4 cup of the almonds and stir to combine.
- Transfer batter to the prepared dish and spread evenly.
- Bake until a toothpick inserted in the center comes out mostly clean, about 25 to 30 minutes; remove from the oven.
- Move the rack to the top of the oven.
- Sprinkle remaining chocolate chips, marshmallows, and nuts over the surface of the batter.
- Return to the oven and continue baking until marshmallows are puffed and golden brown, about 10 minutes more.
- Remove from the oven and cool completely on a wire rack before cutting.

- Heat oven to 375*.
- Unroll dough into 2 long rectangles.
- Place in ungreased 13x9" pan; press over bottom to form crust.
- Firmly press perforations to seal.
- Bake at 375 degrees for 5 minutes.
- In medium bowl, combine sugar, peanut butter and cream cheese; blend until smooth.
- Stir in corn syrup, vanilla and egg; mix well.
- Pour mixture over partially baked crust; spread evenly.
- Sprinkle with marshmallows, peanuts and chocolate chips.
- Return to oven and bake an additional 25 to 30 minutes or until filling is firm to touch.
- Cool completely.
- Refrigerate 1 to 2 hours.
- Cut into bars.
- Store in refrigerator.

- Preheat oven to 350 degrees F (175 degrees C).
- In a 9 x 13 inch baking pan melt the butter and sprinkle the graham cracker crumbs over the melted butter. Mix together and press onto bottom of pan.
- Layer coconut, nuts, chocolate chips and marshmallows over crust. Drizzle the condensed milk evenly over all.
- Bake at 350 degrees F (175 degrees C) for 25 to 30 minutes or until golden brown. Remove from oven and drizzle with the melted chocolate. Cool completely and cut into squares.
