MIDDLE EASTERN RUB
Inspired by the flavours of the Middle East, especially Morocco, I created a rub for white fish. Simple to put together, there is plenty to use for the following days and weeks. Just put away in a container. For the fish, I used Tilapia, but other white fish, such as Halibut and Cod can be used as well.

Steps:
- Combine all ingredients together. Store in a container (because they are all dried ingredients you can put it in the pantry, there is no need to refrigerate it).
- When ready to use, sprinkle a little of the rub on each of the fillets you are using. gently spread by hand, and let it sit for 15 minutes. Bake the fish as you normally would when adding a rub, or when it's just plain.
NORTH AFRICAN INSPIRED RUB FOR FISH AND CHICKEN
Steps:
- Preheat the grill to medium-high.
- Combine all the spices in a small bowl. Brush both sides of fish fillets or chicken breasts with oil. Rub 1 side of the fish fillets or chicken breasts with the rub and grill, rub side down, until golden brown and a crust has formed, about 4 minutes. Flip over and continue cooking for 3 to 5 minutes.

SASSY MIDDLE EASTERN FISH RUB
A fish rub with a middle eastern flare, created for ZWT6 Wild Card Mixing Pot Challenge. Lots of strong ingredients, but the end result is fairly mild.

BOBBY'S RUB FOR FISH
Steps:
- Combine the ancho, cinnamon, cumin, salt, brown sugar and black pepper in a bowl. Mix to blend. Transfer to an airtight container and store in a cool, dark place for up to 6 months.
AFGHANI MEAT AND FISH SPICE RUB
This combination is good on any fish or any meat of your choosing. It was developed by an Afghan street vendor in NYC, Zvia. He rubs the blend all over beef, pork, or chicken 2 hours before grilling. He also likes it on tuna, swordfish, bluefish, and bass. It will give you a blackened effect. It is also delicious stirred into rice or soup.

- Secondly, prepare the onions by adding olive oil to a skillet then the onions and seasonings. Stir and cook on medium heat until the onions becomes caramelized and slightly crisp. 3/4 of the cooked onions will go to the rice and the rest as garnish.
- To prepare the rice, add the rinsed rice to a pot with all the other ingredients then mix together. Add 3 cups of water or stock to this. Bring to a boil then a simmer and cook until fluffy and the water has evaporated.
- For the fish, pat it dry then season on both sides with the above seasonings. Then, add the olive oil to a pan. You can use the same one the onions were cooked in. Have the stove on medium high heat then cook the fish for 4-5 minutes each side. Be very gentle when flipping the fish. The fish should be seared and cooked throughout.

- In a large deep skillet, heat 2 tablespoons of olive oil on medium heat and fry the chopped onions until lightly golden brown, about 10-15 minutes.
- Rinse the rice, then transfer to the pot of onions. Season with salt, pepper, turmeric, coriander, cinnamon and ginger. Toss well to combine and toast the rice lightly with the spices, about 5 minutes.
- Add 4 cups water, bring to a boil, then reduce to a simmer and cook covered until the rice is tender, about 18 minutes. Remove the pot from the heat. Allow the rice to rest in the pot for about 5 minutes, without opening the lid, to absorb all the liquid and steam.
- While the rice is cooking, season the fish with salt and pepper on both sides. Fry on a skillet with the remaining 2 tablespoons olive oil, working in two batches to avoid over-crowding the skillet.
