Steps:

  • Preheat the oven to 400 degrees F. Line a sheet pan with parchment paper.
  • If either of the sausage meats is coarsely ground, place the meat in the bowl of a food processor fitted with the steel blade, and pulse until the meat is finely ground.
  • Heat 4 tablespoons of the butter in a large (12-inch) saute pan, add the onion, and cook for 4 to 6 minutes over medium heat, until tender but not browned. Add all the sausage meat and mash with a fork, breaking it up and browning it, for 5 to 7 minutes, until no longer pink.
  • Meanwhile, prep the mushrooms. Without washing the mushrooms, wipe the caps with a slightly damp paper towel or sponge to remove any dirt. Trim the stems, then roughly chop the caps and stems. Add the mushrooms, fennel seeds, 1 teaspoon salt, and 1 teaspoon pepper to the sausage and cook for 10 minutes, until the mushrooms give off their liquid and the liquid evaporates. Set aside to cool for 10 minutes. Stir in the mascarpone and the fresh bread crumbs and season to taste. The seasoning will depend on how highly seasoned the sausage meat is.
  • Melt the remaining 12 tablespoons of butter in a small saucepan. Unfold the phyllo dough and keep it covered with a slightly damp (not wet!) kitchen towel. Transfer one sheet of phyllo to a board, brush it lightly with melted butter, and sprinkle with a teaspoon of dry bread crumbs.
  • Place a second sheet of phyllo directly on top, brush with butter, and sprinkle with dry bread crumbs; repeat until you have 5 sheets piled up.
  • With the long edge of the stack of phyllo facing you, make a 1-inch strip of sausage filling (about 1/3 of the filling) near the bottom edge. Fold up the sides and roll the phyllo firmly up and over, rolling the log away from you. Transfer the log, seam side down, to the prepared sheet pan. Brush with butter and score diagonally at 1-inch intervals. Make two more strudel logs and place them on the sheet pan.
  • Bake the strudels for 20 to 30 minutes, rotating the pan once to cook evenly, until browned. Cool slightly, cut in pieces through the scored lines, and serve warm.

SAUSAGE MUSHROOM STROMBOLI

I made these rolls for my guys and I was amazed how much they loved them. The jelly roll process is actually quite easy once you have gently rolled or massaged the dough to the right size - it might not look like much going into the oven but when you remove from the oven, it is a work of art!

Steps:

  • 1. Preheat oven to 375 degrees. Cook sausage in saute pan, being careful not to overcook, and chopping up during the cooking process. Place into a bowl to cool slightly. In same saute pan, remove any leftover grease. Add in olive oil and when heated, lightly saute the onions for 2 mins, then add in the chopped mushrooms and continue saute for another minute. Add vegetables to bowl with the sausage. Add basil, salt, pepper, and pepper flakes to sausage mixture and blend well.
  • 2. Cut bread dough in half. Use flour lightly to coat any sticky ends or areas and roll each half out to 9"x12" sizes. Place half of sausage mixture on each dough piece, keeping a 3/4" outside border free of the mixture. Sprinkle 1/2 c. of parmesan cheese on each dough piece. From the short end, roll each dough in a jelly roll fashion, ending with the seam on the underside, and pinching or patting the ends closed. Blend the egg yolk with the water and glaze each dough loaf, followed by a sprinkling of the Italian dry herbs. Gently cut 2 or 3 vents into the top of each loaf. Bake in preheated oven for about 20 minutes till loaves are light golden brown. Remove from oven and allow to cool for about 10 minutes before cutting into slices. Serve with warmed marinara sauce on the side.

ITALIAN SAUSAGE STROMBOLI (AKA SAUSAGE BREAD)

I wanted to use up some left-overs and had some frozen pizza dough and this is the result. This is really tasty and can be used as a main dish or as an appetizer.

Italian Sausage Stromboli (Aka Sausage Bread) image

Steps:

  • Lay pizza dough on a lightly floured surface so it can rest.
  • Slice Italian sausage into 1/2 inch slices; fry in a 10" skillet over medium heat until browned, about 10 minutes.
  • Add 1/2 cup water, peppers and onions; bring to boil and cover.
  • Reduce heat to low and cook about 5-10 minutes more, or until veggies are tender and sausage is heated through.
  • Drain liquid from skillet and sprinkle sausage mixture with Italian seasoning; set aside.
  • ***If you have leftover sausage, onions and peppers, like I did, you just need to warm it up***.
  • Preheat oven to 375 degrees and spray a baking sheet with cooking spray.
  • Roll pizza dough (on a lightly floured counter) into a rectangle, approximately 11 x 17.
  • Sprinkle with sausage mixture, then the cheeses.
  • Start at the bottom of the long side and roll jellyroll fashion, stopping occasionally to stuff sides it. When you get to the end, pinch seam together, trying to squeeze air out as you go.
  • Place seam side down on baking sheet; bake for about 25 minutes at 375 degrees.
  • Remove from oven and lay a clean dish towel on top of loaf; this will allow the crust to soften up and it will be easier to slice and eat.
  • After about 10 minutes or so, slice into 1 inch slices. Serve with warmed sauce for dipping, if desired.
  • Enjoy!

1 lb frozen pizza dough, defrosted
1/2-3/4 lb Italian sausage
1 green pepper, 1/4 inch wide slices
1 medium onion, 1/4 inch wide slices
italian seasoning
1 -1 1/2 cup mozzarella cheese
2 -3 tablespoons grated parmesan cheese
pizza sauce (optional)
