SAUSAGE ALFREDO

- Cook pasta according to package directions. , Meanwhile, in a large skillet, cook the sausage, green pepper, onion and mushrooms over medium heat until meat is no longer pink; drain. Stir in Alfredo sauce. Drain pasta and stir into skillet; heat through. Sprinkle with Parmesan cheese.

I came up with this in my head and tried it for dinner. It turned out delicious and it will definately become a new favorite meal for us. Very easy to make on busy weeknights and was even better for lunch the next day!

Steps:
- Brown sausage until fully cooked, drain grease.
- Empty Ragu Alfredo Sauce into a large saucepan and place over med-hi heat. Add about 1/2 cup of milk to the jar and shake well then pour into the saucepan.
- Add remaining 1 cup of milk to sauce and stir well.
- Add the pepper and minced garlic to the sauce and stir.
- Add the sausage to the sauce and stir.
- Add the shredded cheese to the sauce and stir well until the cheese is melted and sauce is close to boiling. Reduce heat to low and stir occasionally.
- In a separate pot boil approximately 8 oz of the fettucine (about half a box) until tender. Drain and add to sauce mix.
- Cook for 15-20 minutes on low stirring occasionally.

SPICY SAUSAGE FETTUCCINE
One time I accidentally bought hot Italian sausage, but wanted to find a way to use it anyway. I tossed it in the slow cooker with mushrooms, tomatoes and wine, which helped to mellow out the heat. Now I buy the hot stuff on purpose! -Judy Batson, Tampa, Florida

- In a large skillet, heat oil over medium heat; brown sausages on all sides. Transfer to a 3-qt. slow cooker, reserving drippings in pan., In same skillet, saute mushrooms and onion in drippings over medium heat until tender, 4-5 minutes. Stir in garlic; cook and stir 1 minute. Stir in tomatoes, stock and wine; pour over sausages. Cook, covered, on low 6-8 hours (a thermometer inserted in sausages should read at least 160°)., To serve, cook fettuccine according to package directions; drain. Remove sausages from slow cooker; cut into thick slices., Skim fat from mushroom mixture. Add fettuccine and sausage; toss to combine. Serve in bowls. If desired, top with cheese.

- Cook fettuccine according to package directions. Meanwhile, in a Dutch oven, cook the sausage, onions and green pepper over medium heat until meat is no longer pink; drain. Add the tomatoes, mushrooms and Italian seasoning. Bring to a boil. Reduce heat; simmer, uncovered, for 5 minutes., Drain fettuccine; stir into meat mixture. Transfer half of the sausage mixture to two greased 13x9-in. baking dishes. Sprinkle each with 1 cup mozzarella cheese; top with remaining sausage mixture., In a small bowl, whisk soup and broth; spread over casseroles. Sprinkle with Parmesan cheese and remaining mozzarella cheese., Cover and freeze one casserole for up to 3 months. Cover and bake the remaining casserole at 350° for 20 minutes. Uncover; bake 5-10 minutes longer or until bubbly and cheese is melted. - While the fettuccine cooks, heat a large skillet and add the oil. Heat the oil until it shimmers and fry the sage leaves (it only takes a few seconds), in batches, until all are fried. Leave the oil in the skillet and transfer the bay leaves to paper towels to dry.
