SAUSAGE BAKE
This egg, cheese, and sausage bake is good for a breakfast party.

Steps:
- Heat a large skillet over medium-high heat. Cook and stir sausage in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease.
- Beat 2 1/2 cups milk, eggs, and mustard in a large bowl.
- Spread bread squares into the bottom of a baking dish. Layer mozzarella cheese atop the bread and top with sausage. Pour the egg mixture over the entire dish. Cover the baking dish with plastic wrap and refrigerate 8 hours to overnight.
- Preheat oven to 300 degrees F (150 degrees C).
- Stir cream of mushroom soup and 1 cup milk together in a bowl. Remove and discard plastic wrap from baking dish. Pour soup mixture over the 'bake.'
- Bake in preheated oven until hot in the center, about 90 minutes.

SAUSAGE MEAT BAKE
This originated from making sausage stuffing to go with turkey, but when I reversed the quantities, so that it was more meat than stuffing, it became a main dish in itself and soo cheap and simple. I like to serve it with a cauliflower cheese and roast parsnips.

Steps:
- Make up the stuffing with slightly less water than directed.
- Combine all the ingredients and place in a shallow baking dish.
- Bake for 45 minutes at 190 degrees (half way through cooking, use a fork to mix it up so it doesn't just cook on the top).

This is an Italian comfort food classic! The smell of this cooking in my kitchen transports me back to playing on the street in front of my Papa and Gigi's house in Brooklyn. I make 2 trays of this for every family get-together, and it's gone in a flash!

- Preheat oven to 400 degrees F (200 degrees C).
- Heat 2 teaspoons olive oil in a large skillet over medium heat, and cook and stir the sausage until browned. Transfer the cooked sausage to a large baking dish.
- Pour 1/4 cup of olive oil into the skillet, and cook the potatoes, stirring occasionally, until browned, about 10 minutes. Place the potatoes into the baking dish, leaving some oil in the skillet.
- Cook and stir the green and red peppers and onions in the hot skillet until they are beginning to soften, about 5 minutes. Add the vegetables to the baking dish.
- Pour wine and chicken stock over the vegetables and sausage, and sprinkle with Italian seasoning, salt, and pepper. Gently stir the sausage, potatoes, and vegetables together.
- Bake in the preheated oven until hot and bubbling, 20 to 25 minutes. Serve hot.
