I double this super recipe to feed our family of four so I'm sure to have leftovers to send with my husband to work for lunch. His co-workers tell him he's lucky to have someone who fixes him such special meals. It's our secret that it's an easy slow cooker dinner! -Denise Albers, Freeburg, Illinois

Beef in Onion Gravy image

Steps:

In a 1-1/2-qt. slow cooker, combine the soup, soup mix, broth and tapioca; let stand for 15 minutes. Stir in the beef. Cover and cook on low for 6-8 hours or until meat is tender. Serve over noodles or mashed potatoes.

2 tablespoons onion soup mix
2 tablespoons beef broth
1 tablespoon quick-cooking tapioca

BEEF WITH ONIONS AND MUSHROOMS

I'm into quick and easy these days and this popped into my head when I was trying to think of something fast for dinner last night. This would be good with green beans or a salad on the side. Note that the 45 minute cooking time is a little deceptive because you can cut the onions and mushrooms while browning the meat.

Beef With Onions and Mushrooms image

Steps:

Heat oil in a heavy skillet cook beef until it is cooked through and well browned.
Remove beef from skillet and deglaze the pan with 2/3 of the wine, add the bouillon and reduce the sauce.
Add onions and mushrooms to the sauce and cook until mushrooms and onions are tender.
Add cooked beef to the onions and mushrooms and add the remaining wine.
Cook until the wine has reduced add the cooked rice and blend everything together.
Enjoy!

1 1/2-2 lbs beef (sliced into bite size pieces)
2 -3 cups sweet onions, diced
8 ounces baby portabella mushrooms, diced
3 -4 cups red wine (whatever is on hand that isn't sweet)
2 -3 tablespoons beef bouillon powder
3 tablespoons olive oil
2 cups cooked brown rice (Uncle Ben's makes a 90 second microwaveable brown rice that has two cups of cooked rice in it)

Roast Beef Sandwiches With Mushroom & Onion Gravy image

Steps:

Slice English muffins and toast them until light brown.
In a 10" nonstick skillet, melt butter over medium heat.
Add onion and mushrooms; cook and stir 3-4 minutes or until onion is crisp-tender.
Then add garlic and saute for 30 seconds to 1 minute longer.
Reduce heat to medium-low; stir in gravy, white wine, Worcestershire sauce, thyme, and black pepper to taste.
Add beef slices to gravy mixture.
Cook over medium-low heat 2-3 minutes or until hot.

Ingredients

3 teaspoons unsalted butter or 3 teaspoons unsalted margarine
1 large onion, finely sliced
3/4 lb button mushroom, sliced
1 garlic clove, minced
1 cup savory beef gravy
1 teaspoon Worcestershire sauce
1/3 cup white wine
fresh ground black pepper, to taste
1/4 teaspoon crushed dried thyme leaves
6 slices deli roast beef, 1/8-inch slices, cut in half
2 English muffins, split and toasted

Make Sauce: Stir together soy sauce and sriracha in small bowl until very smooth, with sriracha completely incorporated. Set aside.
Cook Meat: Add beef to high-sided 10-inch saute pan (Note 6) over medium-high heat. Crumbling beef with stiff utensil, cook until browned and starting to fry in its own grease, about 6 minutes.
Cook Veggies: Keeping beef and grease in pan, add mushrooms, onions, and black pepper. Cook until mushrooms are shrunken and onions are mostly translucent, stirring frequently to prevent anything sticking to pan, 5 to 10 minutes. As onions are softening, beef and mushrooms should begin to brown.
Add Finishings & Serve: Stir in sauce until well-mixed, about 1 minute. Turn off heat, and stir in scallions. Serve (Note 7), optionally using slotted spoon so that grease remains in pan, and store any leftovers (Note 8).
