Savory Shepherd's Meat & Potato Pie image

Steps:

  • 1. Peel the potatoes and quarter them. Put them into a pot of cold water and bring to a boil, lower heat and cook until tender.
  • 2. In a large bowl, mash the potatoes with the butter and milk; add the salt, pepper, nutmeg to taste; then the egg yolks and half of the cheese, mix and set aside until needed.
  • 3. Brown the beef. Preheat the oven to 375 degrees. (F)
  • 4. In a small pan add butter, and the onion and bell pepper and caramelize them.
  • 5. Combine the caramelized vegetables with the meat and add the beef broth and bay leaf bringing to a boil, and boil until there is almost no liquid left.
  • 6. When ready, remove from heat, take out the bay leaves, and add the salt, pepper, oregano, red pepper flakes and paprika, making sure to mix well.
  • 7. In a greased casserole pan, layer in half the potato mixture, then all of the meat mixture, then add the sliced eggs and top with the rest of the potatoes. Don't spead the potatoes out flat, you want some ridges. Sprinkle on the parmesan cheese and bake in a 375 oven for 30 minutes.

4 large potatoes
6 Tbsp salted butter
1/4 c milk, whole fat
3 - 4 egg yolks (small eggs)
1/2 tsp sea salt (fine)
1/4 tsp fresh ground black pepper
1/4 tsp freshly ground nutmeg
1/4 tsp oregano, dried
3 eggs, hard boiled, sliced
1 1/2 lb ground beef, lean
1 large sweet onion, finely chopped
1 red bell pepper, small, chopped
2 Tbsp butter or oil
1 c beef broth
1 bay leaf, dried or 2 fresh
1/2 tsp sea salt
1/4 - 1/2 tsp crushed red pepper, flakes
1/2 tsp paprika
1/2 c grated parmesan

Steps:

  • Scrub and pierce sweet potato; place on a microwave-safe plate. Microwave, uncovered, on high for 10-12 minutes or until tender, turning once., Meanwhile, in a large skillet, cook beef and onion until meat is no longer pink; drain. Add the corn, tomato sauce and spices. Place in a 1-qt. baking dish coated with cooking spray; set aside., When cool enough to handle, cut potato in half; scoop out the pulp and place in a small bowl. Mash with butter, milk, salt and pepper. Spread evenly over meat mixture., Bake, uncovered, at 350° for 25-30 minutes or until heated through.

Steps:

  • Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes. Drain and mash. Mix in butter, finely chopped onion and 1/4 cup shredded cheese. Season with salt and pepper to taste; set aside.
  • Bring a large pot of salted water to a boil. Add carrots and cook until tender but still firm, about 15 minutes. Drain, mash and set aside. Preheat oven to 375 degrees F (190 degrees C.)
  • Heat oil in a large frying pan. Add onion and cook until clear. Add ground beef and cook until well browned. Pour off excess fat, then stir in flour and cook 1 minute. Add ketchup and beef broth. Bring to a boil, reduce heat and simmer for 5 minutes.
  • Spread the ground beef in an even layer on the bottom of a 2 quart casserole dish. Next, spread a layer of mashed carrots. Top with the mashed potato mixture and sprinkle with remaining shredded cheese.
  • Bake in the preheated oven for 20 minutes, or until golden brown.

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • In pot of boiling water, cook potatoes for about 15 minutes or until tender.
  • Drain well and return to pot. Add margarine and half of the fresh ground pepper and mash until smooth; set aside.
  • In a non-stick skillet, heat oil over medium heat. Cook ground round, green pepper and garlic, stirring for 5 minutes.
  • Stir in flour and cook, stirring, for 1 minute.
