SAUTEED SCALLOPS WITH A SPICY PIQUILLO PEPPER PUREE

Steps:
- Puree: Roughly chop the onions, garlic, peppers, piquillos, and cilantro; then add all puree ingredients into a food processor, except the olive oil and salt and pepper. Pulse several times until all ingredients have been finely diced. Once finely diced, slowly drizzle olive oil into food processor, while pulsing. Taste, add salt and pepper, as needed. Remove puree from processor and add to a large skillet over medium heat. Cook for 2 to 3 minutes, stirring constantly, then reduce heat to low.
- Scallops: Pat and dry scallops with paper towels; lightly season with salt, pepper, and cayenne. Heat olive oil and butter in large skillet over very high heat. In batches, cook scallops until golden brown and opaque throughout, about 2 minutes per side.
- Plate scallops on a white rectangular plate, lightly drizzle plate and scallops with piquillo pepper puree. Garnish with fresh thyme and serve.
BAKED STUFFED SCALLOPS ' FLAVORS OF CAPE COD
Well fresh scallops are my favorite. I love cooking them this way cause all I want is the flavor of the fresh sweet scallop and not alot of fillers with them. Hope you enjoy them as much as I do.

- 1. Place scallops, crackers, parsley and garlic powder in bag and shake. Place in glass baking dish. Sprinkle with lemon juice and pour melted butter on or just dabs of butter on top. Bake for 30 minutes in a 350 degree oven. Don't over-bake so check for doneness at about 20 minutes.

- Combine water, vinegar, sugar, and salt in a saucepan; bring to a boil. Add red bell peppers to the boiling water mixture, reduce heat to medium-low, and simmer until peppers are softened, 8 to 10 minutes.

- 1. Gather all ingredients. Note: To stuff lobster tails with this mixture. Use small bay scallops instead of sea scallops.
- 2. Soak scallops in milk for at least a 1/2 hour. This helps sweeten the scallops, and make them more tender. Set oven to 350 degree's
- 3. Remove scalops from milk. Strain with sieve. Lightly pat dry with paper towel
- 4. crush crackers in a bowll with hands. Do not pulverize them into crumbs. You want them a tiny bit chunky. Mix cracker crumbs with parsley thyme, basil, paprika, salt and pepper.
- 5. Place scallops in a bowl . Mix a squeeze of lemon with 1/2 the butter. Pour over scallops and toss.
- 6. Sprinkle half the cracker crumb mixture on a sheet pan. Bake until turning golden. Sprinkle over the scallops and toss to combine.
- 7. Toss remaining cracker crumbs with butter and a squeeze of lemon. Sprinkle over the top of the scallops. Place in oven and bake for 20-30 minutes, or until cooked thtough. Turn oven on to broil to make crumbs golden brown on top. Remove from oven and serve.
PEPPER GRILLED SCALLOPS
Keep the heat out of the kitchen this summer! These pepper grilled scallops taste fantastic! Toss them on to a bed of salad greens and veggies and you have a nice light summer dish! They are surprisingly easy to make. Simply, throw some peppercorns on the grill -- and you will have interesting new aromas to sample. Revised recipe from Andrea Viestad's Food for Summer. - Preheat your gas or charcoal grill to a hot to medium hot level. You want your fire to be just under the hot level but not to the medium hot level yet.
- Meanwhile, allow your scallops to come to room temp while your prepare the vinaigrette.
- Combine the vinegar, honey, mustard, and oil in a bowl and whisk together with a fork. If it does not whisk together well just pop it into the microwave for about 30 seconds. Warming makes the honey mix more easily with the other ingredients.
- Pour half the vinaigrette into a small serving bowl. Set aside. Toss the scallops with the remaining vinaigrette, remove them from the bowl, and season with salt, pepper, and thyme.
- The grilling has to be done very quickly. Grill the scallops for a minute or two on one side then throw the black peppercorns onto the hottest part of the fire. (This really only works on a charcoal fire. You could try putting the peppercorns in foil with the top open and place the packet on the hottest part of the grill. Put the packet on as soon as you start your gas grill) Allow the scallops to cook for about 2 or 3 minutes more.
- Turn the scallops and allow them to cook for about 4 to 5 minutes on this side, then remove them and serve immediately using the remaining vinaigrette as a salad dressing for the greens.
- NOTE: You could do the same with shrimp or half shrimp and half scallops. Please adjust your time with the size of your seafood.

A lot of trouble to make, but well worth while. Old time cooks called these and stuffed fruits "mangoes". They were favorites in English-American homes because the flavor is superb with baked ham, game, roast pork, and with baked beans. Serve whole as a salad or slice and use as garnish. - Wash all vegetables well before chopping, drain peppers; cut off tops and save; remove seeds and membranes.
- Cover tops and peppers with water in a sauce pan and bring to boiling; boil gently 10 minutes, or until almost tender.
- Drain and let cool. Combine chopped vegetables.
- Mix remaining ingredients ( down to pickling brine) and pour over vegitables and mix well.
- Stuff into peppers , do not pack too tightly.
- Place tops on peppers.
- Tie in place with cotton string.
- Place peppers in wide mouth jars or stone crock.
- Heat together in a agate or enamel kettle all of the brine ingredients except the oil.
- Bring this mixture to a boil; pour over stuffed peppers.
- Let cool.
- To each 3 peppers in a jar or crock add about half cup olive oil.
- Cover. Let stand in a cool place 10 days or longer before serving.
- To serve remove string, drain peppers.
- Note: The remaining oil and spice mixture can be used as a salad dressing or marinade.
SCALLOP-STUFFED PICKLED PEPPERS

- In a ceramic or glass bowl combine the scallops with the lime juice and let them marinate, covered and chilled, stirring several times, for at least 4 hours or overnight (The scallops will "cook" in the lime juice.)
- Make a lengthwise slit in each pickled pepper, transfer the peppers slit side down to paper towels, and let them drain for 5 minutes. Drain the scallops, reserving the lime juice and stuff a scallop slice curved side up into each pepper. (The stuffed peppers may be prepared up to 4 hours ahead and kept covered and chilled.) Just before serving brush the scallops with the reserved lime juice and arrange the stuffed peppers decoratively on platters lined with the cabbage.
