MEAT LOAF

Nothing says classic comfort like Ina Garten's Meatloaf recipe from Barefoot Contessa on Food Network.

Steps:

  • Preheat the oven to 325 degrees F.
  • Heat the olive oil in a medium saute pan. Add the onions, thyme, salt, and pepper and cook over medium-low heat, stirring occasionally, for 8 to 10 minutes, until the onions are translucent but not brown. Off the heat, add the Worcestershire sauce, chicken stock, and tomato paste. Allow to cool slightly.
  • In a large bowl, combine the ground chuck, onion mixture, bread crumbs, and eggs, and mix lightly with a fork. Don't mash or the meat loaf will be dense. Shape the mixture into a rectangular loaf on a sheet pan covered with parchment paper. Spread the ketchup evenly on top. Bake for 1 to 1 1/4 hours, until the internal temperature is 160 degrees F and the meat loaf is cooked through. (A pan of hot water in the oven, under the meat loaf, will keep the top from cracking.) Serve hot.

1 tablespoon good olive oil
3 cups chopped yellow onions (3 onions)
1 teaspoon chopped fresh thyme leaves
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
3 tablespoons Worcestershire sauce
1/3 cup canned chicken stock or broth
1 tablespoon tomato paste
2 1/2 pounds ground chuck (81 percent lean)
1/2 cup plain dry bread crumbs (recommended: Progresso)
2 extra-large eggs, beaten
1/2 cup ketchup (recommended: Heinz)

SCRUMPTIOUS CHICKEN MEATLOAF

Yum! This meatloaf is really delicious. I combined 1/4 cup ketchup and 1/4 cup prepared mustard and spread it on the top of the meatloaf. This is optional.

Steps:

  • Preheat oven to 350'F.
  • Combine the chicken and bread crumbs in a large bowl and set aside.
  • Cut up the carrots and green onions and add to the blender.
  • Add the rest of the ingredients from the sage to the pepper. Blend until smooth.
  • Add this to the chicken breadcrumb mixture.
  • Combine with your hands.
  • Place in a buttered non stick 9x5x3" loaf pan.
  • Cover with tin foil and bake for 1 hour.
  • Then remove the foil and cook for an additional 30 minutes or until the loaf is cooked through.
  • Bon Appetit!

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, combine the beef, egg, onion, milk and bread OR cracker crumbs. Season with salt and pepper to taste and place in a lightly greased 9x5-inch loaf pan, or form into a loaf and place in a lightly greased 9x13-inch baking dish.
  • In a separate small bowl, combine the brown sugar, mustard and ketchup. Mix well and pour over the meatloaf.
  • Bake at 350 degrees F (175 degrees C) for 1 hour.

Steps:

  • Preheat oven to 350 degrees.
  • Combine chicken and bread crumbs in large bowl.
  • Set aside.
  • Cut the carrot& onion into chunks and add to blender.
  • Add the remaining 7 ingredients to the blender.
  • Process in blender until carrot is very fine.
  • Pour blender mixture over meat mixture.
  • Mix very well using your hands.
  • Form mixture into a loaf and place in lightly greased 9" X 13" pan.
  • Cover with foil and bake for one hour.
  • Remove foil& continue baking for 15-30 minutes, until loaf is cooked through.
