Steps:

  • In a Dutch oven, bring the water, lemon juice and salt to a boil. Reduce heat; carefully add fillets and cook, uncovered, for 4 minutes. Add shrimp; cook for 3 minutes. Add scallops; cook 3-4 minutes longer or until fish flakes easily with a fork, shrimp turn pink and scallops are firm and opaque. Strain, reserving 1-1/2 cups cooking liquid., In a large saucepan, melt butter. Stir in the flour, bouillon, mustard and pepper until smooth. Gradually add cream and reserved liquid. Bring to a boil; cook and stir for 1-2 minutes or until thickened. Stir in the cheese and seafood mixture; heat through. Serve with pasta.

1 teaspoon Dijon mustard

1 cup heavy whipping cream
1 cup shredded Gruyere or Swiss cheese

Steps:

  • In a large bowl, mix together the first 6 ingredients.
  • Add the green onions and next 5 ingredients; stir to mix.
  • Fold in the sour cream and 1 cup of the shredded cheese.
  • Butter on side of each tortilla.
  • Turn the tortilla butter side down and sprinkle tortillas evenly with 1 1/2 cup cheddar cheese.
  • Spread about 1/2 cup lobster filling over the lower half of each tortilla.
  • Sprinkle tortillas with the remaining 1 1/2 cup shredded cheese.
  • Fold the top half of the tortillas down over the filling.
  • Place tortillas on a parchment- or foil-lined baking sheet.
  • Bake at 450 degrees for 8 minutes or until golden brown.
  • Remove quesadillas from oven and cut each in half.
  • Serve hot.

1/2 teaspoon crushed red pepper flakes

Steps:

  • In a large skillet add in your Olive Oil and bring it to a medium high heat, add in the shallots cook for 1-2 minutes,
  • then add in the shrimp and scallops lightly and lightly brown on both sides for about a minute on each side.
  • Add in garlic and stir it around to incorporate it into the pan.
  • Add the wine and reduce for 2-3 minutes. Then add heavy cream and salmon reduce for 1-2 minutes.
  • Season with Sea Salt and White Pepper to taste.
  • Then finish by adding Tomatoes, Basil, and pasta. Turn off heat and fold all ingredients together, let sit for 2-3 minutes.
  • Top with Parmesan and Parsley then serve.

  • In a large skillet, saute onion in butter and oil until tender.Add garlic; cook 1 minute longer. Add wine. Bring to a boil; cook until liquid is reduced to 1/2 cup. Steps:

  • Saute seafood in butter in a skillet over med-high heat until opaque and cooked through.
  • Toss cheeses and seasoning together in a bowl.
  • Lay 4 tortillas on the counter and spread about 1/3 cup cheese over each.
  • Sprinkle about 1/2 cup seafood and a little parsley over cheese.
  • Sprinkle another 1/3 cup cheese over top.
  • Slide one of the cheese-covered tortillas into a 10-inch skillet over medium heat.
  • Place one of the remaining tortillas on top.
  • Press down with a wide spatula to remove any air pockets.
  • Cover and cook 1-2 minutes, checking frequently, until bottom tortilla is crisp and browned.
  • Turn over, cover, and cook 1-2 minutes more, or until lightly browned.
  • Repeat this process for remaining quesadillas.
  • Cut into wedges and serve immediately.
