BREAD MACHINE SESAME FRENCH BREAD
I make this bread often, especially when I want a bread that has a bit more body than a white bread, but not as rustic as a traditional French bread. I think the sesame seeds give it a really nice flavor. It makes about a 1 1/4 lb. loaf. Unfortunately, I can't remember where on the web I found this.

Steps:
- Place all the ingredients into the bread machine according to manufacturer's directions.
- Bake using french bread cycle if your machine has it.
- If not, use the dark crust white cycle.
- Start with 2 3/4 cups flour, you might need more depending on a lot of factors.
- My favorite way to get the texture I like is about 10 minutes into the knead cycle I will pinch a good size chunk of dough between my thumb and two or three fingers.
- If it feels just moist and some dough sticks to my fingers, it's just right.
- If no dough sticks, it's a bit dry and add a few teaspoons of water.
- If it feels too soft and very sticky, add more flour until you get the right consistency after about another 5 minutes of kneading.

- In large bowl, mix 2 cups of the flour, the sugar, salt and yeast. Add warm water and oil. Beat with electric mixer on low speed 1 minute, scraping bowl frequently. Beat on medium speed 1 minute, scraping bowl frequently. Stir in enough remaining flour, 1/2 cup at a time, to make dough easy to handle (dough will be soft).
- On lightly floured surface, knead dough about 5 minutes or until smooth and elastic. Grease large bowl with shortening or spray with cooking spray. Place dough in bowl, turning dough to grease all sides. Cover and let rise in warm place 1 hour 30 minutes to 2 hours or until dough has doubled in size. (Rising time is longer than times for traditional breads, which gives the typical French bread texture.) Dough is ready if indentation remains when touched.
- Grease large cookie sheet with shortening or spray with cooking spray; sprinkle with cornmeal. Gently push fist into dough to deflate; divide in half. On lightly floured surface, roll each half into 15 x 8-inch rectangle. Roll dough up tightly, beginning at 15-inch side, to form a loaf. Pinch edge of dough into roll to seal. Roll gently back and forth to taper ends. Place both loaves on cookie sheet.
- Cut 1/4-inch-deep slashes across tops of loaves at 2-inch intervals with sharp knife. Brush loaves with cold water. Let rise uncovered in warm place about 1 hour or until dough has doubled in size.
- Heat oven to 375°F. In small bowl, mix egg white and 1 tablespoon cold water; brush over loaves. Sprinkle with poppy or sesame seed. Bake 25 to 30 minutes or until loaves are golden brown and sound hollow when tapped. Remove from cookie sheet to wire rack; cool.

- Place cereal in large bowl. Pour 2 cups boiling water over. Let stand until mixture cools to between 105°F. and 115°F., about 20 minutes.
- Sprinkle yeast over cereal. Add 1 cup bread flour, oil, sugar and salt and stir until smooth. Gradually mix in enough remaining bread flour to form dough. Cover dough; let rest 15 minutes.
- Turn out dough onto floured surface. Knead until smooth and elastic, adding more flour if sticky, about 10 minutes. Oil large bowl. Add dough to bowl; turn to coat. Cover bowl with clean kitchen towel. Let dough rise in warm area until doubled, about 1 hour.
- Mix all seeds in bowl. Punch down dough. Turn out onto lightly oiled surface. Knead briefly. Shape into 12x4-inch loaf.Sprinkle baking sheet with 2 teaspoons seeds. Place loaf atop seeds. Cover with towel. Let rise in warm area until almost doubled, about 30 minutes.
- Position 1 oven rack in center and 1 just below center in oven. Place baking pan on lower rack and preheat oven to 425°F. Brush loaf with water. Sprinkle with remaining seed mixture. Using sharp knife, cut 3 diagonal slashes in surface of loaf. Place baking sheet with loaf in oven. Immediately pour 2 cups water into hot pan on lower rack in oven (water will steam).
- Bake loaf until golden and crusty and tester inserted into center comes out clean, about 35 minutes. Transfer to rack and cool.(Can be made 1 day ahead. Wrap in plastic; store at room temperature.)

Cover the bowl and let the mixture rest at room temperature (65°F to 75°) overnight. , To make the dough: Remove 1/4 cup (57g) from the liquid levain. You can use it to perpetuate a new liquid levain, if desired; otherwise discard it.
- Place the remaining liquid levain and the rest of the dough ingredients (including the sesame seeds) into a bowl large enough to hold about twice the volume of the ingredients. Mix everything together with a bowl scraper or spatula.
- Using the bowl scraper or spatula, run the scraper or spatula down the inside far wall of the bowl. Bring the dough up from the bottom of the bowl, and fold it over on top of itself; this is called a stretch-and-fold. Turn the bowl 90° and repeat; do this a total of 25 times. The resulting dough will be shaggy.
- Cover the bowl and allow the dough to rest for about 30 minutes at room temperature. Uncover the bowl and give the dough another 25 stretch-and-folds. Continue resting and doing stretch-and-folds at 30-minute intervals over the next 2 hours (for a total of 3 hours).
