SESAME UDON NOODLES
Unhulled sesame seeds, available at Asian markets, will make the sauce creamy; the plain white variety will not produce the same results.

Steps:
- Bring a stockpot of water to a boil. Stir in noodles, and cook until al dente, about 6 minutes, or according to package instructions. Remove from heat, and drain. Transfer noodles to a serving bowl, and toss with 1 tablespoon sesame oil. Set aside.
- Gently toast unhulled sesame seeds in a small skillet set over low heat until just fragrant, about 2 minutes. Transfer seeds to a bowl to cool.
- Place toasted sesame seeds, soy sauce, mirin, the remaining 2 tablespoons sesame oil, and the rice-wine vinegar in the jar of a blender; process until smooth and creamy. Pour dressing over reserved noodles, and toss to combine. Sprinkle with black sesame seeds, if using, and scallions. Serve immediately.

- In a jar with a tight fitting lid, combine the garlic, ginger, soy sauce, rice vinegar, peanut oil, sesame oil and hot pepper sauce. Close the lid, and shake vigorously to blend. Set aside to let the flavors blend.
- Bring a large pot of water to a boil. Add udon noodles, and cook until tender, about 3 minutes. Drain, and place in a serving bowl.
- In a microwave-safe bowl, combine the green, red, and yellow peppers with green onion and peas. Heat in the microwave until warm, but still crisp. Add to the noodles in the bowl, and pour the dressing over all. Toss to coat everything in dressing, then sprinkle toasted sesame seeds over the top.

TAKEOUT-STYLE SESAME NOODLES
Noodles dressed with sesame are popular in many parts of China, but this particular style, made with peanut butter and served cold, became a Chinese-American staple in the United States in the 1970s. The family of Shorty Tang - an ambitious restaurateur who emigrated from Sichuan to Taipei to New York - firmly believes that he invented the dish and still serve it at Hwa Yuan, the restaurant he opened in 1967 in Manhattan's Chinatown. They have never divulged the exact recipe; this is our own lush but refreshing version.

- Bring a large pot of water to a boil. Add noodles and cook until barely tender, about 5 minutes. They should retain a hint of chewiness. Drain, rinse with cold water, drain again and toss with a splash of sesame oil.
- In a medium bowl, whisk together the remaining 2 tablespoons sesame oil, the soy sauce, rice vinegar, sesame paste, peanut butter, sugar, ginger, garlic and chili-garlic paste.
- Pour the sauce over the noodles and toss. Transfer to a serving bowl, and garnish with cucumber and peanuts.

KIMCHI SESAME UDON NOODLES

- Put the noodles in a sieve over the sink and pour over a kettle of boiling water. Toss to separate, then leave to drain.
- Heat 1 tbsp of the sesame oil in a large frying pan over a medium heat. Add the onion and ginger, and fry for 5 mins until softened slightly. Add the broccoli, kimchi and radish, and continue to fry for 5 mins. Stir in the drained noodles, spring onions and soy sauce.
- Meanwhile, put the remaining ½ tbsp oil in a small frying pan and fry the eggs for 3 mins, or until cooked to your liking. Serve the noodles in bowls with an egg on top, and sprinkle with the sesame seeds and some chilli flakes, if you like.

- Whisk all ingredients for the sesame dressing together in a mason jar, measuring cup or bowl and set aside.
- Boil water in a medium saucepan for udon noodles and cook according to package directions (fresh udon noodles take ~3 minutes). Once done, drain, rinse and set side.
- In a non stick frying pan over medium heat, pour 1 Tbsp. sesame dressing into the pan with the carrots and bell peppers and sauté for about 5-7 minutes, stirring frequently. While that is cooking, steam the broccoli in the microwave for 5 minutes.
- Add the broccoli into the pan. Gently toss together the cooked udon noodles with the veggies and pour the sauce on top and mix. (Pour ~1/2 cup of the sauce first, then taste and add more as desired).
