Steps:
- Melt the butter and sugar in a large skillet over medium heat and add the salt. Add the almonds, cashews, peanuts, pecans, chili powder, cinnamon, cumin and cayenne. Cook until the sugar is melted and the nuts are fragrant, 5 to 6 minutes. Add the rosemary and toss. Immediately spread the nut mixture on a parchment-lined baking sheet. Cool completely, and then serve.
SWEET N SALTY CARAMEL SNACK MIX
Be prepared, if you are going to make this mix. It is quite addictive! We have used several different cereal mixes, including all Chex cereals, and Life cereal. We also love to use pretzel spinzel sticks, as a different version, but really any hard pretzels can be used. Enjoy!

Steps:
- 1. Preheat oven to 350'.
- 2. Spray rimmed baking sheet with non-stick cooking spray. Mix cereals, nuts, and broken pretzels together on sheet. Set aside.
- 3. Place butter and brown sugar in a medium-sized, heavy saucepan. Heat on medium high until mixture begins boiling, stirring constantly. Reduce heat to low and continue boiling for 3 minutes, while continuing to stir.
- 4. Carefully pour hot caramel mixture onto cereal mix, trying to coat each piece. Stir by turning over with a spatula.
- 5. Bake mixture for 8 minutes. Remove and stir.
- 6. Return to oven, bake an additional 5 minutes, and remove from oven. Stir mixture one last time and allow to cool completely.
- 7. Break up any large pieces and store in a covered, plastic container.

- Heat oven to 325°F. Spread 1 tablespoon melted butter in jelly roll pan, 15 1/2x10 1/2x1 inch.
- Mix brown sugar, corn syrup, 1/4 cup butter and the salt in 3-quart saucepan. Heat over medium heat about 5 minutes, stirring constantly, until brown sugar is dissolved; remove from heat. Stir in cereal, pecans and almonds until well coated. Spread mixture in pan.
- Bake uncovered 15 minutes. Cool 10 minutes. Loosen mixture with metal spatula. Let stand about 1 hour or until firm. Break into pieces. Store in airtight container.

The glaze in this recipe is a riff on the sweet-and-salty coating used in cereal-seaweed snack mixes found in Hawaii that bakes into an irresistible, super-crisp shell. - Heat oven to 250 degrees. Lightly grease two rimmed baking sheets with vegetable oil. In a small saucepan, combine 3 tablespoons vegetable oil with the butter, corn syrup, sugar, soy sauce, Worcestershire, salt and cayenne. Cook, stirring occasionally, over medium heat until the mixture is smooth and syrupy, about 5 minutes. Set aside.
- In a large bowl, combine all the ingredients for the snack mix, except the hemp seeds. Pour the syrup over the mix and toss with a wooden spoon to evenly coat all the pieces.
- Divide the mix across the two prepared baking sheets. Sprinkle the hemp seeds evenly over the mixture on both baking sheets.
- Bake until the mix is dry, about 1 hour and 15 minutes, tossing well every 15 minutes. The mixture will be dry but still sticky, and will set as it cools.
- Let the mix cool completely before breaking it into pieces to serve. Store in an airtight container at room temperature for up to 1 week.
