- Peel/devein shrimp and set aside.
- Cook the tortellini by following the package directions; drain and set aside.
- In a big skillet over medium-high heat, melt the butter.
- Add in the shrimp, shallot, and basil.
- Saute/stir for about 5 minutes.
- Add tortellini and parmesan cheese; toss; season with salt and pepper if desired, then serve.

A creamy tortellini salad that's fit to serve company. I came up with this on an extremely warm day when I wanted to prepare dinner early and serve something cool. This can be adjusted according to amounts or type herbs you prefer.You can substitute chicken for the shrimp.Reduce fat by using low fat mayo and sour cream. Serve this one with a green salad and a glass of your favorite white wine.Cook time is prep and chill time

- Return water to a boil and add the shrimp, poach for 2 to 3 minutes, until they are just pink, rinse under cold water to stop them from cooking, drain and cut into large pieces.
- In a small bowl whisk together the dressing ingredients.
- In a large bowl, mix the onion, celery, capers and olives and pour the dressing over; mix well.
- Add the shrimp, tortellini and remaining ingredients. Adjust salt and pepper to taste and chill before serving.
