GREEK COUSCOUS SALAD

Greek Couscous Salad image

Steps:

  • In a large saucepan, bring broth to a boil. Stir in couscous. Remove from heat; let stand, covered, until broth is absorbed, about 5 minutes. Transfer to a large bowl; cool completely., Whisk together dressing ingredients. Add cucumber, tomatoes, parsley, olives and green onions to couscous; stir in dressing. Gently stir in cheese. Serve immediately or refrigerate and serve cold.

1 can (14-1/2 ounces) reduced-sodium chicken broth

1/2 cup olive oil
1-1/2 teaspoons grated lemon zest
1/4 cup lemon juice
1 teaspoon adobo seasoning
1/4 teaspoon salt
SALAD:
1 English cucumber, halved lengthwise and sliced
2 cups grape tomatoes, halved
1 cup coarsely chopped fresh parsley
1 can (6-1/2 ounces) sliced ripe olives, drained
4 green onions, chopped
1/2 cup crumbled feta cheese

Israeli Couscous with Parmesan image

Steps:

  • Toast 1 1/2 cups Israeli couscous in olive oil in a saucepan, stirring, 3 minutes. Add 3 cups water and bring to a boil; cook until al dente, 7 minutes, then drain. Whisk 3 tablespoons lemon juice, 1 teaspoon Dijon mustard, 1/2 teaspoon lemon zest and 1/4 cup olive oil; season with salt and pepper. Toss with the couscous, chopped pistachios, shaved Parmesan and torn mint.

Vegetable Couscous Salad With Parmesan image

Steps:

  • Bring broth to a boil in a saucepan; add couscous, remove from heat, cover and let stand for about 5 minutes, until couscous has absorbed broth.
  • Let cool, then place in a bowl and fluff with a fork.
  • Add tomato, green onions, cucumber, parsley and Parmesan cheese to the couscous.
  • In a small bowl, whisk together the lemon juice, olive oil, oregano, salt and peppers.
  • Pour over the salad, mixing well.
  • Refrigerate salad for at least 2 hours; bring to room temperature to eat.

1 cup vegetable broth or 1 cup chicken broth

1/2 cup fresh parsley, minced
4 ounces grated parmesan cheese
4 tablespoons fresh lemon juice
2 1/2 tablespoons olive oil
2 teaspoons dried oregano, crushed
1/4 teaspoon salt (taste first, Parmesan is pretty salty)
1/2 teaspoon black pepper
1/4 teaspoon cayenne pepper
