SKIER'S FRENCH TOAST
A make-ahead for breakfast or brunch. Simple and delicious. My sister makes it for Christmas brunch.

Steps:
- Melt butter and mix with syrup and brown sugar. Pour into bottom of 9x13 dish.
- Slice bread into 1/2" thick slices and place over sugar mixture.
- In a separate bowl, beat eggs, milk, vanilla and salt. Pour over bread and cover.
- May refrigerate overnight or cook immediately.
- Preheat oven to 350 degrees.
- Bake uncovered for 45 minutes.

BUTTERMILK FRENCH TOAST

- Preheat oven to 200°F.
- Whisk together buttermilk, eggs, sugar, and salt in a bowl. Pour into a large 4-sided sheet pan, then add bread in 1 layer and soak, turning occasionally, until bread has absorbed all liquid but is not falling apart, about 20 minutes.
- Heat 1 1/2 tablespoon butter in a 12-inch nonstick skillet over medium-high heat until foam subsides. Transfer 4 bread slices with a slotted spatula to skillet and cook, turning once, until slightly puffed and golden brown, about 3 minutes total. Transfer to a large shallow baking pan and keep warm in oven. Cook remaining bread in 2 batches, adding 1 1/2 tablespoon butter between batches.
CLASSIC FRENCH TOAST
Any dense bread such as challah, brioche, or sourdough will work for this simple French toast recipe.

Steps:
- Whisk together eggs, cream, vanilla, cinnamon, nutmeg, and salt in a medium bowl; set aside.
- Place bread in a shallow baking dish large enough to hold bread slices in a single layer. Pour egg mixture over bread; soak 10 minutes. Turn slices over; soak until soaked through, about 10 minutes more.
- Preheat oven to 250 degrees. Place a wire rack on a baking sheet, and set aside. Heat 2 tablespoons butter and 2 tablespoons vegetable oil in a skillet over medium heat. Fry half the bread slices until golden brown, 2 to 3 minutes per side. Transfer to wire rack; place in oven while cooking remaining bread. Wipe skillet, and repeat with remaining butter, oil, and bread. Keep in oven until ready to serve. Serve warm with pure maple syrup, if desired.
FRENCH TOAST I
There are many, fancy variations on this basic recipe. This recipe works with many types of bread - white, whole wheat, cinnamon-raisin, Italian or French. Serve hot with butter or margarine and maple syrup.

SKIERS' FRENCH TOAST RECIPE

- 1. Combine light corn syrup, butter and sugar in saucepan; simmer until syrup-like. Pour mixture over the bottom of a 9"x 13" pan. 2. Slice bread into 12-16 slices; place over the syrup. Layer as needed. 3. Beat together the eggs, milk, vanilla, and salt. Pour over bread. Cover with saran wrap. Refrigerate overnight. 4. Bake in a preheated oven 350 degree F (175 degrees C) for 45 minutes. 5. Cut into squares. Invert and serve.
